What have you eaten today? (Low carb forum)

Breakfast at 12.00: cheddar cheese on crackers - BG beforehand - 12.5, now (1.45) - 8.0. That's because I took enough insulin to bring it down as well as deal with the crackers.

2nd meal will be spinach with a salmon fillet, seared in the pan.

(Apologies for being completely off topic, but as this is a pretty busy thread I thought it a good place to reach many members. And if you decide to have a go at moderating, you'll be in the position to do something about rogue mods who tend to derail threads like myself too!)

I like that time when i fix everything with one shoot.

Another busy morning so took opportunity again to do a 19 hour fast. Planning to do three small meals a day over weekend though - it’s good to vary it and I also find it helps me get a bit more diversity in my diet.
Late lunch cooked a sliced field mushroom in butter added a few strips of left over chicken and two beaten eggs to make an omelette served with spoon of kimchi followed by spoon of stewed rhubarb and hm yoghurts plus four squares of 90% chocolate
Dinner salmon in lemon butter with cauliflower mash and asparagus plus glass of dry white wine with soda water followed by lc brownie.

my bg goes high after like 2-3 hrs after eating it with bread.

I think it is because the fat slows the carb a bit?

what should I do then when eating it with bread.

You are T1, is that correct?

Many people find that with high carb, high fat meals like pizza or pancakes they need to do a split insulin dose. So part of their dose before eating, like normal, and then the rest of it an hour or two hours later, because the fats slow the action of the carbs.
It might be you're seeing this 'pizza effect' here.

It's good to be mindful that there are people with different types of diabetes on this forum, and most on this thread are T2 and not on insulin; they mainly treat their diabetes with a low carb diet, with or without the help of medication and sometimes insulin.

So most of them manage their diabetes in a different way than you are.
You can adjust your profile to show your type, that's really helpful. :)
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a Phd bar.
Skipped lunch.
Mid afternoon: black coffee and a DGF millionaires shortbread.
Dinner: chicken and chorizo kebabs with leafy salad, baby toms and coleslaw followed by SF cherry jelly and cream.

At the birthday party we got to talk about rösti so we ended up googling cauliflower rösti because we all craved rösti because of the conversation.
Turns out this is a thing so I'll be making it tomorrow or the day after! :)

I'll use the google to read through some recipes of course, but if any of you have made something like this and liked it, please let me know what you did!

In the end, I did a google search for recipes yesterday, skimmed through a few of them while not in the mood for reading recipes, decided they all sounded complicated and I'd try again today.
Wasn't in the mood for reading recipes today either so I just did what I thought might work, turned out very tasty!
I baked them in the oven because the pan fried test bit fell apart, oven baked it's at least possible to transfer them to your plate somewhat whole. :)

Lazy day so I just put the burger with the rösti's in the oven, thinking I'd give them a minute in the frying pan at the end but I didn't. Oven baked burger tasted fine as well. :)

I have not received the bill for a home GP visit yet, the nurse is a freebie, but it's around $200.00 for the GP I believe.
I informed that my GP's visit was paid for by the Base hospital palliative care service.

Oh, I'm tempted, believe me!
And I think I'm well aware of the things you have some problems with, seeing as I'm often the one dealing with your ventures along the edges of our forum ethos, and having a chuckle at your 'hidden' reactions to being moderated, often found in surprising places. ;)
I also think you'd make a very good mod.

Might be worth considering nominating yourself.
 
Three slices of middle bacon, two egg and cheese omelette, tomatoes for breakfast.
Coffee and low carb cake with the new Blue Care nurse for smoko.
Grilled pork loin chops, green veggies, gravy for lunch.
Leftover meat / chicken and mashed veggies made into rissoles for supper at six.

Couple of crispbreads with blue cheese watching Prime for a while.

Then went to bed with a single malt and a oxycodone tablet, works well I had about six hours straight sleep, my partner shook me awake as she thought I might have karked it.
