Ff greek with strawberries and blueberries. More fruit than usual and no seeds, trying a bit of a shake up of breakfast. But forgot to test so no idea what it did to me! Planning a libre for next week so will try again then.
L: after an exercise class, 3 chicken drumsticks and a spoonful coronation coleslaw. 1 piece hm lc brownie
Made a couple of goodies ready for this weekend. Only licks of the spoon so far.
D: posh meal out:
Coronation chicken
Sole with a lovely buttery sauce
Lamb rack, very nice (did eat the mash it came on 《blush》
Nice English cheese board, yarg, blue and woodside red
One mouthful dessert, peach and raspberry thing in creme anglais.
Mint tea. Only 1 glass white

Quite a result carb wise methinks.

Today I had breakfast of cheese omelette and chilli sauerkraut
Lunch was a couple of tuna melt muffins followed by.a DGF cake.
Dinner- wild boar steak with a ‘French sauce’ ( garlic, cream, white wine and mustard - supposed to have honey too, but still lovely without) broccoli and roast cauliflower.
Because I opened a bottle of wine for the sauce, I had a couple of glasses while cooking which wasn’t a good idea - so now I’ve eaten most of a bar of Montezuma’s peanut butter chocolate.
Sounds like a great idea to me.

Why ask this ?

Well - this thread is entitled "What have you eaten today?"

Edited to add: As for me - so far only tea and pills to try to get some movement going. I will make some breakfast in a while - that will be bacon and eggs.

If I can cope with food prep and/or eating later, it will be collard greens again made with some ham or more bacon - depends what I can find.

Monday 30 May - busy day. Double school run but I'm getting the hang of the 2 schools now, and gardeners here too. Bed 8.2 FBG 8. BGs still on the high side but it seems I have another cold (and Hubby has it too).

B. TAG and 2 slices of SLC toast with 2 slices of back bacon (I was making bacon butties for the gardeners)

L. Nothing

D. Sizzle steak, white asparagus (which I forgot to cook yesterday), 1 Hasselback potato, and my mix of spinach/santini tomatoes/exotic mushrooms.
Strawberries and cream. 1 HC gin truffle.

Tuesday 31 May bed 8.8 FBG 8 7

B. TAG and 2 slices of SLC toast with ox tongue and coleslaw.

L. Nothing

D. Cajun chicken flatties and 1/2 a santini tomato salad with added walnuts and port salute cheese.

Grenade white chocolate LC ice cream bar.

Two pictures of very different ‘bites’. Have had 2 lots of pork belly pieces, just salted and air fried today. Also made a batch of chocolate macadamia squares - melted Lindt 90%, unpasteurised butter and mixed with some almond butter before pouring over the nuts and refrigerating. So far the box remains in tact, but I’m sure that won’t last long!

Day at the seaside and lunch out to celebrate FIL’s 80th birthday, so three meals and no snacks!
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Lunch: at an unfamiliar café, so had to wing it, chose a naked burger (no bun, no chips) with extra bacon, cheese and coleslaw with a Diet Coke.
Dinner back home late so rang for delivery: crispy duck, 3 small pancakes, a smidge of sauce and veggies followed by SF orange jelly and cream.

Greek yogurt and blueberries for breakfast, with decaff coffee.
Lunch: a nibble at some cheddar and more decaff coffee
dinner: fried cabbage with minced beef and onion, with plenty of tabasco sauce (i.e. 3drops, but it was hot!) strawberries, cream, tonic water.

I bought mine from Amazon but,living so far from shops, other than a couple of supermarkets, I buy a lot from Amazon and so have a Prime membership. So, many things have no postage to pay. They would not be the cheapest of buys, if you have to pay postage, but may still worth it because they are very good. I did also buy a 12 cup silicon tray but that isn't as good - things do stick to it whereas they don't to the individual ones from Amazon.

I’ve never done duck sous vide, what time and temp please? And did you crisp it in the airfrier afterwards.
I didn’t know about the HC gin truffles, I think I’d better pretend I still don’t know.
I got son to do them for me. I just rendered down the fat afterwards when we were going to eat them. It keeps it beautifully moist and pink.
Son says breasts were at 58C for 45 mins. Season before sealing. I had some orange zest and port in with them. He cooled them as soon as they were taken out as I wasn't using until the next day.
The legs were rubbed with salt, pepper and thyme the covered and refrigerated for 24 hrs. Remove after 24 hrs, wash, pat dry, and vacuum seal with a couple of spoonfuls of duck fat. Legs were done at 76c for 12 hrs. They too were cooled as soon as they came out as I wasn't using until the next day. As with the breasts you can crisp them up in a pan but I put them in the oven for 20 mins (180C fan), took them out and drained fats off, added port and orange zest then popped them back for another 10 mins.

We do the same, we also get free internatioal postage from the US and UK here with Amazon Prime Au membership, lots of side benifits with the membership as well.
