What have you eaten today? (Low carb forum)

Monday 31 October - bed 7 FBG 7.6 Almost caught up. Feeling better after the rest but back on the school run. I still have a slight dizziness if I turn too quickly but I'm fine if I'm careful.

B TAG and 2 slices of SLC toast with egg mayo

L. Not Cross bun with lurpack

D. Finished off the stroganoff and celeriac chips.
A little chocolate pot and 3 raspberries. I am developing an addiction for these Coconut Collaborative little chocolate pots. Their dipped snowconut stick are pretty good too.

Tuesday 1 November bed 7.7 FBG 7.9

Another busy day. After the school run I headed up to Boots for my flu jab. I have a slight reaction to the Covid jab so don't see any point in making matters worse getting 2 jabs at once. I debated cancelling it for a week as I felt OK and, guess what, I had a mild reaction. Nothing serious, I just felt a bit odd. 10 mins and a drink of water and I was fine.
.B. just TAG No time for anything else.

L. Early - 2 slices of SLC toast with egg mayo
Later - one of these Coconut Collaborative dipped snowconut sticks I mentioned above. Got rid of the taste in my mouth from the vaccination.

D. Just picked at bits of meat Mini German sausage, ox tongue, smoked chicken and ham. My shoulder and arm was a bit sore and I didn't much fancy much.

Water and paracetamol and I was fine this morning.
 
@Mrs T 123 those M&S seedy crackers haven’t been in my local store for at least 3 months. I have 2 packs in my cupboard I’m keeping until Christmas in case they don’t reappear in store.
I’ve joined the ZOE big IF challenge, not a huge challenge as the eating window is 10hr, but of course wine counts as snacking so it’s made me stop and think a bit I quite often have a couple of glasses in the evening after I’ve finished my meal.
B- 2 boiled eggs mashed with butter and a bit of cheese to nibble while I was waiting for them to cook.
L- small amount of mince fried in butter with broccoli. Splash of soy sauce and a fried egg on top. Looked even worse than yesterday but still tasted great.
D- roast chicken with sautéed mushrooms and spinach. Feta cheese and walnuts crumbled on top. Wine with meal.

I think I might find Earl Grey easier to drink without milk so thanks for putting the idea in my head. I will now try to drink black Earl Grey for 3 weeks, ( maybe with a slice of lemon) and then transition to black normal tea. Fingers crossed. It would be a lot easier not having to buy milk, I don’t use it for anything else.
It worked for me in Poland. They only drink blak tea in glasses with literally about 6 grains of sugar in it. Both Hubby and I have never been able to drink tea with milk since then.
 
Yay, caught up. Today 2 November - bed 8 FBG 7.3

Aem just a little tender but otherwise OK. Weather is horrendous. I've had about 3 different waterproofs on today.

B. TAG and later 2 slices of SLC toast with ox tongue and coleslaw.

L. Nothing although I was tasting the bolognese I was making for the boys and hubby later.

D. After feeding eldest then coming back from basketball with the younger one in thunder, lightning and torrential hail, I didn't much feel like eating. I settled for a bit of crustless quiche and the said affogato I mentioned to @Mrs T 123 earlier

@DJC3 I've joined the Zoe IF study too. I joined their Covid study back in March 2020 so it seemed a logical step. I'm pretty consistently in an 8 hour window so it's not difficult.

I've got DGF mincemeat pies arriving tomorrow. I'm doomed!
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a Food dr bar.
Dinner: chicken chasseur with runner beans and cauliflower followed by DGF white chocolate millionaire’s shortbread and cream.

Cheese omelette on the morning
An omelette is a great way to start the day. My wife likes sweet things for breakfast, but i much prefer savory, and it will keep me going until dinner.:)

Re your dizziness, my wife has had that a few times in the last few years. Normally it is really easy to fix and our doctor just flips her from side to side while sitting up. This last time it did not go so easily, so she went to s specialist, who did some special flipping, and 3 days later back to normal. There are some small calcium balls in tubes deep in our ears and they can get stuck thus causing the dizziness.
 
Breakfast.. Skipped it
Lunch... A few small pieces of various cheeses, 1/2 and avocado with olive oil and cider vinegar.
Dinner .... Ragu, a dusting of parmesan cheese, cauliflower mash.
Tried some green tea during the day... Yuk!... Back to black Earl Grey and a pint of lemon juice and water.
Glucose level 2 hours after dinner was 5.5
 
The advice about professional chiropodists is very good advice. Many including myself, did not take toe nail cutting very seriously. Some years ago my mother, who has a low immune system, gave herself an infection in her bone from cutting her own toenail, or it could have been a corn on her foot. Anyway, long story short, she nearly died from the infection and it was really touch and go for several months. Eventually she ended up losing half of one leg. So really, if your immune system is at all compromised, make sure who ever is cutting into anything on your body, is being very very careful and knows what they are doing
That's the problem though. I can't get anyone who knows what they are doing to help with my feet. One son will file a bit around the edges but still leaves me unable to wear shoes because my nails are too long. the other son has offered to help, but apart from being so very busy himself, last time he did it, he cut so far back that I couldn't walk for the opposite reason.

12 :00 2 chicken thighs and a nut bar
Frustrating day with technology not working. Our local phone mast is down and turns out I can't log on to the bank without a mobile pass code, nor could the surgery send me details of my appointment. Its getting scary how much depends on phones.

Baked some hm lc coffee cake for the freezer and some seedy crackers.
Ate too much while testing so only had 2 meatballs and called that dinner. Boys had spaghetti and meatballs. I was really disappointed at the quality of the ragu sauce jar. Mostly water and thickeners. Not our usual brand and wont be buying that one again.
 
Bacon, two egg and cheese omellete, fried tomatoes, two slisces of vegimite on toast for breakfast.
Spicy seafood marinara, small portion of reheated pasta spirals for junch.
Four cold chicken wings for supper at six.

Glass of single malt before bed, where according to my new smart watch I had 7 hours 33 mins sleep - 3 hrs 2 mins light sleep, and 4 hrs 31 mins restfull sleep.
 
That's the problem though. I can't get anyone who knows what they are doing to help with my feet. One son will file a bit around the edges but still leaves me unable to wear shoes because my nails are too long. the other son has offered to help, but apart from being so very busy himself, last time he did it, he cut so far back that I couldn't walk for the opposite reason.
I guess it is not cutting the nail that can cause problems, but cutting the skin in anyway when your immune system is low. Soak your feet in some hot water with sodium bicarbonate for 10 mins and then just cut off the parts of the nails which are far over your toe. Maybe try it in two stages... cut/clip off a little, see how it feels, then do it some more if needed. Your son sounds like a lovely chap helping out with something you cannot do.

Sauce jar!!!!!!! It is so super easy to make a big batch of Tomato sauce and then portion it up and put it in the freezer. The stuff in a bottle is a) not very nice, b) has loads of sugar and chemicals in it, c) homemade tastes awesome! If you would like a recipe , pm me and i will send it. By the way, would love your recipe for the seedy crackers!

Lunch was a mug of soup and a chunk of cheddar
Supper was chicken breast roasted and cauli cheese (frozen from Sainsburys) whichI am finding very convenient for one person, just goes in the lower shelf of oven. Lunch today will be some rollitos on the run. Supper will be the also usual chunky cod fishfingers with broccoli.
I have been wondering about the tally of milk in tea. I don’t use very much, like it mahogany colour about 3 large mugs daily. I would struggle to drink it black I think but then again maybe I am deluding myself that I need any milk in tea. Its possible the large weekly pack of Marmite peanuts (which doesn’t stretch to 7 days) is a more viable no no.
@maglil55 thanks for the idea of beef stroganoff something we haven’t eaten in years. Hope you are much better, everyone I know this year brought back some bug from holidays, Covid or other. Its the actual travel journeys to blame I imagine.
 
Morning all. Am getting very forgetful! Didn't post yesterday and have only just remembered today. I'm just cooking my lunch, mince pork and beef with celery, carrot,onion and mushrooms plus cauli and swede mash. Enough for 2 meals. For tea, I don't know yet. I have to go shopping today if my hand allows it. @PenguinMum, what are rollitoes? I don't have an M & S near me, just Sainsburys, Aldi. Lidl and Tesco, so I'm wondering if any of these sell seedy crackers?

I use Rick Stein's stroganoff recipe.

Soften down slice onion in butter and plenty paprika (unless it is hot paprika then you have to be careful).
Remove softened onion then add sliced muchroom and cook for a few minutes. Add mushrooms to the bowl the onions are in.

At this stage I usually have to add more butter and paprika to the wok (I tend to use sweet paprika). Get the butter frothy but not browned. Flash fry your steak in batches just to seal the outside. I use either rib eye or fillet depending on what the butcher has in store. Steak is cut into strips before flash frying. Add the steak to the onion/mushrooms as it is flash fried.

Once all the steak is done add sour cream to the pan. I use about 150mls for the 2 of us. Stir to warm. As the sour cream loosens add the meat/onion/mushroom back to the pan and mix through.. you really don't want it cooking any more and keep mixing to avoid a split.

Just before serving add a few drops of lemon juice and fresh chopped parsley. Mix and serve.

Rick Stein's is served with chips. Celeriac for me - straw chips for everyone else. Hubby is on chip duty since, although the stroganoff is a quick make, it needs precise timing to get it served hot with hot crispy chips if you are cooking for a lot of people.

Rollitos do come from M&S in their 3 for £8 deli range and there are three varieties cigarette shaped cheese wrapped in ham or chorizo and they usually have a good use by date. I find them useful for lunch on the go. I like the sound of your hearty autumnal lunch.

Thank you so much for typing out the recipe and I am a big fan of Rick Stein too. Do you think Fage 5% Greek yogurt would work instead of the soured cream, only because I usually have it in the house!
