That's a very cute name!
Not as funny as oxheart cabbage though.

In Dutch it's boringly called spitskool, pointed cabbage. Spot on but nothing poetic about it.
Also called "pointy cabbage" here. Not poetic at all although descriptive.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a Carb killa bar.
Dinner: it was a couldn’t be bothered to cook night, so we went out. I had an all day breakfast (no beans), I ate a few chips as I’ve learnt from my Libre my body copes with this little indulgence!

A Dutch Diabetes organisation shared this recipe.
4.2 grams of carbs a slice if you cut 16 slices from the bread.

The recipe sounds ridiculous to me, and I can't even come close to imagining what it would taste like.
So of course I'm going to try! (After my next shopping round.)
Worst thing that can happen is spending some time making chicken feed so nothing to lose. :)

But before I do, has anyone ever made something like this? Was it edible?

ingredients
4 medium eggs
350 g 100% peanut butter with pieces of peanuts
16 g baking powder
100 ml buttermilk
½ tablespoon cookie and gingerbread spices
200 g cottage cheese
Nutritional values per person
Carbohydrates 4.2 g

steps
Number of people: 16
Preheat the oven to 180°C.
Mix the eggs with the peanut butter well with a mixer.
Also add the baking powder, buttermilk, biscuit and gingerbread spices and the hüttenkäse and mix to a smooth batter.
Grease a baking tin and divide the batter over it.
Bake the peanut butter bread in the preheated oven for 40 to 45 minutes.
Check whether the bread is cooked on the inside by inserting a skewer. If it comes out clean, the bread is ready.
When not sure, I'd try halving or quartering that recipe. 350g peanut butter is a LOT

Skipped breakfast as knew this country bumpkin was heading into London. Sadly not near Camden and @Goonergal recommendation so had to settle for a Five guys burger for lunch. What a treat. I love the lettuce wrap and the double patties. Had mushrooms and peppers in it too.

Aimed for omad, but didn't quite make as hungry after an exercise class tonight, so cheese and olives at 21:30.

Got side tracked yesterday by the Blue Care nurse coming earlier than expected, so did not post the Tuesday menu.

Yesterdays menu.

Two hard boiled eggs, two slices of toast and ginger marmalade for breakfast.
Grilled belly pork slices, grilled tomatoes, mixed salad for lunch.
Couple of leftover cold pork strips for super at six.

Glass of single malt before bedtime.

I've now bought the missing ingredient for what should have been yesterdays meal.
But I also have an '-itis' in my elbow. (GP mentioned both tendonitis and bursitis but I forgot which one he decided on in the end.) The elbow had been sore for a couple of weeks but last night it got a lot worse, the pain waking me up like clockwork five and a half hours after my last paracetamol, and all during the night every time I moved.

So no chopping onions.

I just had a couple of crackers with butter and ham, and it was very clear I should have taken painkillers half an hour before trying to spread butter on my crackers.

So no idea what I'll eat tonight, one of those days I'm very annoyed by diabetes preventing me from simply getting Chinese take-away. Lack of sleep doesn't improve my mood either of course.

If you can take Ibuprofen, you can interleave them with Paracetamol. If your dosing interval is, say, 8 hours, you take a Paracetamol dose at 12, then an Ibuprofen at 4, the for each 8 hours thereafter. It means one is mid dose as the other dropping off.

Don't do it for too long though and do have a read of maximum amounts when doing that. It'll be out there on t'internet.

On a more general note, don't let your 'itis settle in. I spent a couple of year waking to wonder how I could get out of my bed, without lifting my elbow, because it was going to hurt a lot. I had a cortisone injection which toook the edge off it, but the real answer for me, was my shoulder/neck needed a bit of work by a Chiropractor.

I was unaware of anything happening to injure myself, but it felt so much better when it had gone!

And in the spirit of the thread, we both had a stir fried chicken and cashew nuts last night, in a different place. This time instead of the black bean sauce, which tasted a bit sweet for my absolute preference, it was in a hotter (chilli) concoction which was niiiiiiiiiiiice. MrB also had steamed rice.

No, not ever. Cottage cheese is the spawn of the devil, or gopping, or disgusting. Choose your preference. :)

The cookie and gingerbread pieces strike me as only being their for flavour. I can't imagine half a tablespoon doing much more. Could probably be achieved with some ginger and cinnamon powder and a tiny bit of sweetener of required?

I'll be curious to hear how it turns out.

Shoved the components of planned meal in freezer, too much chopping with a useless elbow.

Cutting a couple of tiny tomatoes and oxheart cabbage with a sharp knife was doable. :)
Is it really called oxheart cabbage? It's what google translate told me and I think it's very funny!

Lucky to have guinea pigs, I bought the cabbage for them originally. Having guinea pigs means I almost always have a variety of veggies to choose from. :joyful:

Had the nicest haggis I've ever had for my 2nd meal with some bashed neeps. Didn't enjoy that so much - somehow I can't get swedes dry enough to be enjoyable.

Have you tried microwaving swede? If you search for "singing swede" there are LOTS of videos, like this:

No added water, and the swede is a dream to peel once cooked - just have something heatproof for holding it as you do! It doesn't have to be a whole swede.

It’s often called pointed cabbage here too. Oops see I was beaten to it!

@MrsA2 Five Guys is a more than acceptable substitute. Haven’t had one for ages, must remedy that.

Food was sporadic for me yesterday. Yoghurt first and last thing and half of the garlic flatbread in between.

Have you tried microwaving swede? If you search for "singing swede" there are LOTS of videos, like this:

No added water, and the swede is a dream to peel once cooked - just have something heatproof for holding it as you do! It doesn't have to be a whole swede.
I'll give that a go with the other half of the swede. Looks like a brilliant idea.

BG last night, despite the haggis (2nd helping it was so good) was 5.3. I went to bed early (10.30) so was up just less than 4 hours later when BG was 4.8. It went up to 9.1 before I took insulin and had breakfast. Legs seriously bad again, so I just sat and reached what I could - a crumpet, a slice of bread, the toaster and some butter. Not the best breakfast ever and not very satisfying but at least BG started dropping then and is currently sitting at 7.5.

I cooked some smoked haddock in milk yesterday and will use it to make Cullen Skink for lunch. That will be after I take my second dose of painkillers to try to get the legs working.

I will have the 2nd half of the swede with some of the h/m black sausage that I have in the freezer for my evening meal.

Someone reacted to the Facebook post where I found the recipe. She had tried it and shared that it needed some more salt, so I plan to add that when I make it.

Not pieces, spices!
"koek- en speculaaskruiden" is a Dutch spice mix. :)
And yes, can be replaced by ginger and cinnamon powder or Chinese 5 spice powder. No sweetener. :)

The singing swede is seriously clever with the only clean up afterwards being the plate you cook it on, board you then peel it on and whatever you want to serve it in. On and to wipe the copious condensation from the microwave chamber.
when I have used this technique I could easily mash it with a fork, although I like my swede more crushed than mashed.

This is what I have been doing more or less. Paracetamol has a max dose of 4x1000mg per day, ibuprofen of 3x400mg. But ibuprofen 600 can be taken 3 times a day as well so I could go as high as 4x400 if I need 6 hour intervals, especially considering I'm 114 kilos and this is a safe dose for people your size as well. :)
The pain is sure to wake me up if one or the other runs out.

I'd still have to peel the onions though, so I'll just buy a bag of chopped onions next time I'm in the supermarket.

And on topic:
So far I've had coffee, a good spoonful of very tasty honey the bees of my distant cousin made to treat an unusual hypo, and a cracker with butter and ham without the insulin because I started dropping again.

I can absolutely count on my liver dumping glucose in my bloodstream as soon as I get out of bed each morning so I inject for that before getting out of bed.
I guess my liver decided to sleep in today, thanks for not showing up for work, liver!
So either simply my period coming up (need less insulin, sometimes a lot less), or can it be the liver was busy working on the painkillers? We all know that alcohol prevents the liver from dumping glucose while it's still busy getting rid of the alcohol, might be the same is true for painkillers?

The mention of peanut butter is enough to put me off. Nut butters make me nauseous (which judging by the amounts lovers of nut butters eat might be a blessing).

Also try the donuts! This is the chocolate and pistachio flavour. I just wanted it to go on for ever! Not too sweet and more of a cake like texture than donut. View attachment 58982
It looks nice, but thankfully, I dislike doughnuts even more than nut butters. They are one of these things (like nut butters and blue cheese) that I kept trying every so often as I felt I "should" like them. No matter how often I tried, I could not convince my taste buds to like them

Wednesday 25 January bed 7.2 FBG 7.6. BGs are still yoyoing during the day, though. I worked on my legs yesterday but overdid it. Today, I'll reduce the number of Revitive sessions. Now Hubby appears to be going down with whatever this is.

L. 2 slices of SRSLY LC Toast with whipped cheese and a CC little chocolate pot

D. Really not hungry but, GF wrap with spiced ham, lettuce, tomato mustard and mayo. A few raspberries with a dash of cream.
