That tool looks really good and I'm tempted but I already have 2 Japanese mandolin kind of things (one mine, one my mother's) and a proper professional st/st mandolin (dangerous tool) so I don't think I can justify getting another one. Pity because it has far more options than the ones I have. I have a permanently painful left arm and shoulder (arthritis) which makes holding things still for chopping quite a difficult procedure. Peeling is a bit of an issue as well - as it is with a food processor. then, with a food processor, you have to take it all apart and wash it and dry it - I find myself using it less and less these days.

Caught a bit of an American cooking show this morning on TV where she (Valerie somebody or other) said she was making a quick sauerkraut. She shredded cabbage and put it in a bowl with spices, poured cider vinegar over it and microwaved it. To me, that's a quick pickle, not sauerkraut which should be fermented with salt, not pickled in vinegar. Have I had this wrong all along?

I've pickled quite a lot of cabbage, but never successfully made sauerkraut.

Well, sauerkraut is cabbage and it's sour. Pickled cabbage is a cabbage and it's sour.
So I guess Valery believes that any sour cabbage is sauerkraut. Makes sense, doesn't it? :banghead:

A kind of sense. But it's the same as saying a slice of bread is the same thing as a slice of cake - they're both made with flour. Not sure about the thinking of Americans, it's a bit odd sometimes, and I'll just carry on thinking my way. Fermented cabbage is meant to be good for you, not so sure about the health benefits of pickled cabbage.

I'll try again to make it the traditional way anyway - like kimchi but without the hot spices. Last time I ended up with shredded cabbage, preserved in the same condition as I put it in the jar 3 weeks before. It was fine braised.

I think secret is to make sure both that you have enough salt - I use sea salt flakes -and also that you have thoroughly massaged the cabbage with the salt. Many recipes on web such as this one

Make sure you don't reduce the salt in a recipe. I don't use carraway seeds like in this recipe but I do chop in either tumeric root or ginger root keeping skins on and this can help or a bit of carrot with skin on all these add a few more beneficial bacteria. hope next lot takes more. I've also added grated beetroot uncooked with skin on that's one of my favourite but I make it into a more spicy kimchi.

Just black coffee during morning
1ish mix of sardines, some sauerkraut and kimchi, a few walnuts and a couple of olives and olive oil served with one slice of LC bread toasted and buttered. Followed by a few frozen berries mixed into kefir and yoghurt

3ish LC cookie - last of my supply and going to try and not buy more as they encourage me to snack
5ish steak with mushrooms and some air fried onions and hm new potato chips with glass of dry red wine.pudding LC chocolate brownie with yoghurt.
edit to add I'm trying to stick to red wine when drink for a while rather than white or gin. I listened to following podcast with Michael Moseley and Tim Spector and was inspired to try it as I'm working on improving my gut bacteria diversity plus I happen to like red wine

Burger on sweetheart cabbage with mayo and mustard.
Not enough to make a meal so I'll make up for it with chicory with hummus and pork scratchings later on.

My elbow is still very sore and sleep wasn't too good so I allowed myself a day for feeling sorry for myself, but only a day.

Called my best friend and told her to tell me what groceries to buy, considering my sore arm, lack of inspiration and indicisiveness, and she promptly replied with "Shawarma meat, ready chopped onions, low carb wraps, something green and a jar of chopped garlic for garlic sauce. Big package of shawarma to last you for at least 3 days. And a tub of tuna-mayo or egg-mayo or such. And tell your cleaner to grate lots of the good hard cheese when she comes next monday."
It's so wonderful to have a friend like this!

Shopping is done on friday after swimming (not swimming but doing all kinds of exercises in the swimming pool on music with a teacher) and I wasn't sure on swimming either so we discussed that as well.
We decided I'd go and try, with strategically timed painkillers, and if it hurts I'll just hang out in the deep end of the pool doing my own thing. And I'll bring my sailing coat for shopping afterwards so I don't have to feel uncomfortable without a bra, and I don't have to fight with the bra half wet and with a non functional painful arm.
Problem solved! :happy:

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: crispy cheese and mushroom omelette followed by SF cherry jelly and cream.

Mid morning: 2 scrambled eggs with 2 pieces hm lc soda bread. Was supposed to see me through to dinner, but a stressful shop sent me eating :banghead:

3 p.m. 175g corned beef. 100g proper milk chocolate with hazelnuts and a whole cinnamon and raisin bagel.
I was angry at someone so why or why do I take it out on myself?

Trying to fast rest of day, but hubby Brought home cream filled choux buns. I had one mouthful to be polite. Writing this I can see its wrong to eat to please others but I really struggle to say No, especially when it's been given as a treat (when will he learn?)

2 glasses red wine.
Feeling calmer and oh so guilty

Had my black sausage with microwaved swede. It was half of a fairly large swede and took 22 minutes to cook, but it was great - soft enough to crush with a fork and not overly moist. Went very well with the sausage. 4 slices of the sausage had stuck together in the freezer so I had to take them all out for defrosting. That leaves 2 for tomorrow's breakfast and some of the swede left over as well to use for something else.

BG has stayed low all day - currently 5.0. Don't know what I'm doing right though. Maybe something to do with the earlier timing of the basal insulin - 2.30 am today. Trying to get it back to before midnight. Heading for bed now (10.35) because I keep falling asleep in the big chair; can't walk around due to my bad legs so am tending to sit most of the day. Not a good idea if it can be avoided.

That was another good thing about the microwaved swede - I just had to stick it in a bowl, hobble to the microwave and pop it in, then sit nearby until it was done and take it out. Easy peasy.

Do you use a chair that keeps your legs lifted or are you sitting in a regular chair with your feet on the floor, making things even more difficult for your legs?

It's a recliner chair which provides a support for legs - doesn't bring them up higher than the hips, but at least not on the floor.

Took extra codeine with my painkillers this morning at 3.30 and, once it kicked in, it put me out for another hour or so. No breakfast so far but I'll get to it shortly. I did wake up at 2.30 but decided just to stay in bed and managed to fall asleep for a while but gave up just before 3.30. Took Tresiba then along with the painkillers. Tea, but no food yet.

Neil's gone to town for shopping so we'll see what he can get from my shopping list before deciding on food for the last part of the day. The first part will be black sausage with fried egg, then Cullen Skink for lunch.

Neil came back from town but, of the proteiny things I asked for, he could only get some black pudding slices. Don't want black pudding after black sausage so I guess I'll just get out the rest of the haggis and have it with the rest of the microwaved swede for my last meal. Actually, got involved in putting things away, getting washed and dressed and so on and didn't get around to breakfast. Now, at 11.30, I'm wondering if I should just skip breakfast and have brunch of the soup. BG is still only 9.1 so I can go for a while without trying to bring it down with insulin and breakfast. But I am hungry now. OK - decision - have breakfast and then a late lunch, and we'll see how we feel about 3rd meal later on.

10ish some kefir with my supplements
1ish two boiled eggs and one slice of LC toast followed by a few frozen berries mixed into a few spoons of yoghurt
Managed to skip my 3o clock snack as I hoped to - no frozen LC cookies left - but some new nuts arrived with my shopping at 4 and while I was opening them and putting into the nut jar some may have found their way into me! A podcast I was listening to yesterday evening referred to nut difficulty IE good for you and low carb but only in moderation which is hard. I try just to add them to meals so can portion control but they are very tempting so haven't yet won the snack battle will try again tomorrow.
5ish salmon in lemon butter with cauliflower cheese and glass of red wine then for pudding LC blondie warmed and served with spoon of yoghurt.

15 minutes indoor bike.
Delayed breakfast until about 11 today.
Was some leftover pork belly pieces, half an avocado and half a celery stick. Odd, but it kept hunger at bay.
Cwc.
Hours walk

3pm a seed bar, which I think has dislodged a filling . Ouch!
Baked some millionaires bite or the freezer.

6pm dinner of salmon, fridge gravel and an avocado, yoghurt and cucumber sauce.
4, yes count them 4, of the millionaires bites. 12 now safely in the freezer.
A glass white with a lot of soda

I don’t think I’ve posted for a couple of days. Yesterday was a fast food feast: lunch at Five Guys ( bacon cheeseburger with everything except ketchup and bun)
Dinner at Nando’s: 1/2 chicken, Halloumi, broccoli, rainbow slaw and a mushroom. Bottle of Bolly later to celebrate my clear CT scan result and the reason for our trip up to London.

Today travelled back to Cornwall with a car full of low carb snacks for the journey. Nuts, cheese, snacking salami and chorizo ( from Waitrose deli counter) and 100% chocolate.
Dinner was scrambled eggs on cheese on toast with a liberal sprinkling of Tabasco. More chocolate and nuts.
