What have you eaten today? (Low carb forum)

10ish some kefir with my supplements
1ish two boiled eggs and one slice of LC toast followed by a few frozen berries mixed into a few spoons of yoghurt
Managed to skip my 3o clock snack as I hoped to - no frozen LC cookies left - but some new nuts arrived with my shopping at 4 and while I was opening them and putting into the nut jar some may have found their way into me! A podcast I was listening to yesterday evening referred to nut difficulty IE good for you and low carb but only in moderation which is hard. I try just to add them to meals so can portion control but they are very tempting so haven't yet won the snack battle will try again tomorrow.
5ish salmon in lemon butter with cauliflower cheese and glass of red wine then for pudding LC blondie warmed and served with spoon of yoghurt.

I can also relate to nut difficulty. I can quite easily weigh out a portion with one hand while simultaneously popping several more into my mouth with the other hand!
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a DGF gingerbread topped with chocolate.
Dinner: DGF keto garlic and herb wraps filled with coronation chicken and leafy salad followed by DGF Xmas pud. and clotted cream.

Do you like the DGF wraps? I haven’t tried the garlic and herb ones but I love the plain ones.
 
Got side stacked again by the BC nurse coming early so I did not get to post Thursdays menu.

Here's Friday's.

Two hard boiled eggs, to slices of toast and vegimite for breakfast.
Grilled mangrove jack fillets, mixed salad for lunch.
Cold left overs from the day before for supper at six.

Glass of single malt before a early night.

I buy nuts in 1 oz packs 4 to box. Makes it easy not to overeat. Mind you I can easily over eat other things such as cheese!
 
Today has been bad. Tablets for nausea from Dr not working
Breakfast: Water
Lunch: Water
Dinner: salmon pasta (pasta spiral things with salmon, peas, white sauce and cheese on top).
I was naughty and skipped my bolus doses again except for dinner. I'm not allowed to do this because I'm on fixed doses but I'm not eating so I'm not injecting. Average BSL for the day 5.8

I liked the look of the wraps, but they are pretty expensive. I have a recipe for wraps made with coconut flour which I intend to try but the recipe does seem to be very eggy, so I may not like the finished product:

Basic Coconut Flour Tortilla Ingredients:​

  • 1/2 cup Wholesome Yum Coconut Flour
  • 6 large Eggs (up to 7-8, see notes)
  • 1 1/4 cups Milk of choice (up to 1 1/2 cups, see notes; I recommend either almond milk or coconut milk beverage here)
  • 3/4 tsp Sea salt
 
Just made some coconut milk - it is currently cooling on the counter-top and will go into the fridge asap. Quite a lot of wet coconut to use somehow - I'm very unwilling just to throw it out.

Breakfast was bacon and eggs with a slice of toast. BG seems to be staying OK between 7.3 and 5.4 (before breakfast and 13/4 hours after).

I still have some of the solid from the Cullen Skink left but have had most of the liquid - could have that later with another egg mixed in (hard boiled) but I still have some of the haggis, mixed with the swede, to use up. Might just have 3 meals today - just to get it all used before it goes off. Probably a bit late to put it in the freezer.

By the way, I decided to look up the meaning of the scots word "skink". It turns out that it was originally a kind of beef broth but which eventually came to just mean soup of any kind. Hence Cullen Skink - soup made in Cullen (on the Moray coast so it would be fish).
 
All this talk of coconut flour - ugh! A small amount (i.e. so you can barely taste it) in sweet items is ok, but in savoury food - no thanks!

Two meals today and so stuffed I doubt there’ll be anything else.

First thing was 2 poached eggs and some air fried Halloumi - almost as good as Nando’s @DJC3
Lunch was at Five Guys. Bunless bacon cheeseburger with grilled onions.

Mixed some egg with the haggis mixture and made patties, currently in the fridge ready to bake for evening meal.
Late lunch (3 pm) was the fish and egg mixture. Must make that again, it was very good. Eggs in 3 meals today, but never mind.
BG has been low. I reduced the amount of bolus dose I was taking for both meals so far but still ended up at 3.8 (4.0) and Libre yelling at me. Had half a jelly baby to stop the drop. I'll wait for it to go back up before thinking about eating again.
 
B - Salami and a few walnuts
L - Skipped as I did a 50 min workout
D - Steak, gravy, mushy peas and a table spoon of mash. Small portion of frozen raspberries with cream.

Just waiting to see if I have a spike but then again I do tend to run a bit high on the day of exercise
