What have you eaten today? (Low carb forum)

No breakfast, just black coffee. Had granddaughters today as schools were on strike, we went to the beach then a local hotel for a swim then lunch. Kids ate free with a full paying adult so I had starter of ham hock terrine ( small but v tasty) then chicken Caesar salad, forgot to say no croutons, I always forget. Girls ate them though.
Dinner was more of the hogget I bought recently. Made koftas with the mince and tandoori chops, served with salad and a DGF chilli wrap. 1 glass red wine and about 10g Montezuma’s Absolute Black. IMG_1978.jpg
 
After days of tasty but not very good looking food (I love peanut sauce but it doesn't improve the looks of your meal to be honest) I now made up for that with the prettiest meal I made in a long time!

No idea what type of lettuce it is, it was on offer and sold as 'snack lettuce'. It had a picture of stuffed lettuce leaves on it so I took the hint. :joyful:
I made 3 with garlic cream cheese, fried sucuk and onion and sundried tomatoes, 3 with cottage cheese, smoked trout fillets and horseradish, and 3 with egg mayo, raw onion and smoked pork belly.

Ate 2 of each, so tomorrow will be the rest plus a sandwich or such.
Very long day tomorrow, having the kittens neutered an hour drive away at a rescue center (cheap), so I'll spend the day there volunteering to pass the time until I can bring them back home. Have to be there at around 8 AM, which is pretty much the middle of the night for me, so not having to prepare dinner after getting home will be very welcome!

B: ff greek with seeds and walnuts. Quite a large portion as intending to go through to dinner
Windy walk to a very windy viewpoint, but was sunny and spectacular.
Trouble is, being away with hubby, he needs refuelling frequently so headed to cafe for lunch. Nearest to low carb was a cheese scone with extra cheese. If I had been on my own I would have resisted but its difficult when someone else is eating in front of me.

That looks soooo good!
And very easy and quick too, perfect trick for a cold meal when things in the fridge need to be eaten!

Today I had the leftovers, plus an arugola salad with cottage cheese, sundried tomatoes and more of the smoked trout fillets.
Looks a bit messy, tasted very good. :joyful:
Kittens are doing ridiculously well after their neutering this morning, completely back to normal after only a couple of hours. :cat:

@DJC3 I wish I'd thought of wasabi! That would have taken care of this bug a lot quicker. @Annb glad the scan went off without incident. @RosemaryJackson, I hope you get through 4th. I was fortunate that my son survived sepsis, but the 48 hours where it was touch and go was the worst. I cannot conceive how bad it is to lose a child.

Today - Thursday 2 March bed 6.4 FBG 7. BGs a bit up and down since, as many of you know, hospitals don't cater for low carbers! Hospital was heaving. 3 theatres in action with 24 on the morning lists and another 24 on the afternoon lists. I was afternoon and one of my Aqua buddies was also in, so we kept each other company.

B. TAG and Hubby had a go at crustless quiche with salmon and broccoli. Needed more seasoning, but I didn't tell him that as it was a good try.

L. 2 cups of black hospital tea and 4 almonds at 5pm (they got my drops wrong, and had to find my consultant to correct the prescription). It took a hour and a quarter, and I didn't want to tell Hubby it was me who spotted it was wrong.

D. Much, much later, a SRSLY spicy chicken pizza and a CC little chocolate pot. I'm still really hungry.

Op was different this time, and 3 of us were of the same opinion. It was a bit more "Clockwork Orange" with the metal eye clip and injections in the eye before and after the op! Thank goodness for years of relaxation courses! We couldn't see a thing after the op, but I went from seeing in black & and white to bits of colour and vision is gradually coming. Never seen so many eye shields at one time before.

I know it sound silly, but I couldn't imagine how horrific it would be to me to have surgery on my eyes. The winner is for the way you have dealt with the whole episode.

For the most part, Ann, it goes off pretty smoothly. Your eye is "frozen," and during the operation, you can't see anything due to the light on the microscope. I knew about the injection after the operation (and it's very necessary) from the first op. This time, I went into relaxation mode. It also helps it doesn't last long.
The bit that took us all by surprise, was the "Clockwork Orange" metal clamp to hold the eye open for the pre op injection. This was new. He did say, "It won't be there long." My response was,"I'd rather it wasn't there at all!"
I stuck with it though. Good news is I can mostly see through my shield and....I'm still munching almonds!
 
Morning all. a bit of good news.... A1c down from 51 to 47. I've been doing Omad and a snack at teatime for a month and I'm sure it has helped. So I'm keeping it as my woe. I forgot to get anything out of the freezer for today so will have to go shopping. Yesterday, I took Antje's idea of lettuce leaves and did red salmon mayo with chopped up cucumber and spring onion and really enjoyed it.
 
So far today; Weetabix when I woke up earlier, and recently a small portion of dark chocolate with a small glass of orange juice to help with the hypo.

I tend to eat Chicken, Eggs or Tuna for lunch and Chicken, Fish or similar foods rich in fibre and protein at Dinner.

Yeah, I've been trying to cut out unnecessary sugars and fats for years. The cheeky treat is fine, but that balance and variety have always helped.

Easier said than done however. :oops:
 
Interestingly, my levels are varied with Weetabix. Some days, they remain the same, other days, I get a bit of a spike, but it comes back down after.

Currently tucking into a chicken salad sandwich :cool:

Weetabix is fine if you can eat it and inject for it without a big spike.
I can't, especially not in the morning, food like that would send me to the high teens before dropping back down.
I have a friend who is able to dose for such carby foods (she can even dose for donuts without going over 10 :wideyed:) but because I can't I choose lower carb foods, especially earlier in the day.

Most people in this thread have T2, and many treat it without medication, so weetabix for breakfast wold likely keep their numbers high for half the day!

Too much carb for me. I keep thinking I should get rid of all starchy carbs but can't quite do it, especially since the GP, consultant, diabetes nurse and dietician all tell me that I shouldn't. I do keep it very low though (most of the time). However, cereals of any sort - especially oats - push my BG up to ridiculously high levels. So - no cereals at all - ever. Much as I would like them. I can't but envy you being able to have Weetabix of a morning.
