What have you eaten today? (Low carb forum)

Morning all. Think I'm just going to have scrambled egg with mushrooms for lunch. Atm, I'm a bit fed up with food, it doesn't seem to taste right. Haven't been sleeping well recently, last night was awake till 5.30am, so tiredness could be the reason. Have a good day all. :)
I know the feeling Rosemary. I usually have my breakfast and plan to have a further meal later in the day, but often I don't get around to it and, as last evening, started eating and just decided against it and threw it out. Today I have had bacon and egg but could have eaten more (at least, I thought I could, not really sure) and have the cabbage and cheese ready from yesterday's planned meal but not sure if I will want it by the time the next meal comes around.
 
10ish kefir with some frozen lemon and lime zest added - @MommaE thank you for your idea re how you use a vegetable peeler to remove the zest and then freeze it. I often open freeze slices of lemon and limes for drinks but this time I repurposed my old unused potato peeler!and used it to take a thin layer of skin off the lemon and limes before slicing them. I cut the peelings into smaller pieces and then open froze them - so now have a bag full of lemon and lime zest pieces to put into my morning kefir, delicious ,- plus I read that gut bacteria like the peel. So much easier than grating the peel every morning.
1.30 mushrooms and two eggs on one slice of low carb toast followed by too much lindt 90% chocolate - spotted on offer and treated myself but I'm really not able to keep my portions small unless it is 100% chocolate - why did I buy it? Enjoyed it though!
Mid pm a few more squares of the 90% .
5 ish pulled pork with a low carb wrap, kimchi and suerkraut and small glass of red wine followed by a few frozen berries and yoghurt.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and DGF millionaires shortcake.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: crispy cheese omelette with mushrooms and cherry tomato filling followed by SF strawberry jelly and cream.

Few spoonfuls of h/m yogurt for breakfast, just to finish the jar before we set off for Birmingham for a funeral tomorrow. Not a nice journey but could have been a lot worse.
Lunch - I brought with us. SrSLY roll filled with beef and horseradish and a mini bar of a Montezuma’s Absolute black. Lots of black coffee throughout.
Dinner - our hotel had absolutely nothing I could eat. Mac&cheese, pizza, fish fingers&chips etc I couldn’t even ask for swaps. Luckily another hotel nearby had a grill so a “gourmet burger” 1/2lb burger topped with bacon and Brie. No chips or bun and the “special sauce” served on the side ( which tasted sweet so I’m glad I remembered to request that change) salad which was mercifully dressed only with olive oil. Shared a bottle of red with Paul. He had most as he’d done the driving and deserved it more.
I’m going to fill up on breakfast tomorrow as post- funeral food tends to be pies and sandwiches so I doubt I’ll eat anything then.

Late afternoon finally got out for a walk, about 75 minutes. Snow replaced by rain
D: half a pack pork crunchies (forgot to mention the other half yesterday). Repeat of yesterday's curry on cabbage. Coconut chia pudding with berries. Made even better with added cream and grated chocolate . 1 small glass red. That's been a full week to finish 1 bottle.

Pub lunch tomorrow, looking at the menu fingers crossed they do swaps, it's not very lc friendly but venue was chosen by vegan friends!

Woohoo, it took my friend almost an hour of fiddling with my computer, cursing and installing stuff, but he got the DVD player to work, and I could finally watch the present that @Annb so thoughtfully sent me!

So instead of a proper dinner I called it a movie night and watched The lady in the van while munching on a plate full of snacks. :happy:

Didn't post in the last two days, but meals involved boiled onions (now that's a happy discovery, I found that boiled onions are a wonderful veg, I had no idea!) and German herring in cream sauce.
The Germans tend to eat this on poatoes in their skins, which I love, so I substituted the potatoes with onions boiled with a veggie herb stock cube, worked very well.

I didn't throw away the resulting broth and I had a leftover boiled onion, so today I reheated the broth with the onion and a chopped stalk of celery for a light starter.

On the plate is yesterday's leftover salad, consisting of mystery lettuce (still from last week's stuffed 'snack lettuce') with grated kohlrabi (bought in Germany because it looked cool, never had it before, I like it) and the very last of my English pickled eggs.
They sell pickled eggs in Germany as well so I have a new jar, which convinced me to finally use the last of the English ones.
Also half a slice of LC bread with the last of the herring in cream sauce, a German type of cold smoked sausage ('knackers') and two stuffed spicy peppers with cream cheese and an olive.

I loved the film, it's tragic and hilarious, and intriguing in the way they split the writer in two and in the relation between the film and the real story. I very much like the way it shows that life is often what happens and not something you plan.

Very happy that my neighbour-in-the-garden is much easier to deal with though, he may be unconventional but he's not grumpy, and he actually improves things around the house. Although I must admit I was a bit surprised to find he has added a new room last tuesday: when I got back from swimming I found this in my garden! :hilarious:

Pickled eggs arent available to buy here either but all I do is hard boil a few, peel, put them in a “sterilized” jar, and pour hot pickling vinegar over to cover. In the absence of pickling vinegar I’ve also used plain white. I do keep the jar in the fridge, they seem to last weeks; I have always eaten them before there seemed to be any problem. I’m still alive, so far. Worth it to have a sliced pickled egg with Maldon salt flakes sprinkled on.

Shelley, in the absence of a zester, a julienne peeler, or microplane grater works well on citrus zest, depending how find you want the peelings to be.

So glad you managed to see the film at last and that you enjoyed it.
 
Had some of the cabbage and cheese yesterday. Didn't enjoy it very much - something to do with the flavour of the cheese which was a bit bitter. I'll have to do something to improve the flavour before I finish it off today. At least there seem to be no ill effects from the cabbage so far.

Breakfast will be bacon and eggs - Neil managed to get a box of very small "Burfield Brown" eggs. I think that refers to the chickens rather than the, quite dark brown, eggs.

The cabbage for later. It has some onion and some cheese in it so far. Might add some tomato puree to change the taste a bit, or perhaps, stir in some Branston pickle.

I'd ordered some low carb bread from Amazon, made by a firm callled "billy's diet". 5 packs of 2 slices. Very seedy and 7 g carbs per 100 grams. Not greatly impressed by the taste (forgot to say, I did have one of the slices yesterday) but each slice has 1.68 grams carb. I think that was pretty well all the obvious carbs I had yesterday - some in the cabbage, of course but not much. I am still intending to make a low carb loaf myself but am concerned that I won't know the exact carb content of anything I make, hence buying a measured one.
 
Morning all. Had my cwc just now. Lunchtim I'm having belly pork slice with 2 lc sausages with cauli and broccoli mash. Teatime something low carb. Bought some beef mince to make a shepherds pie with cauli mash on top and cheese grated on. @DJC3, your picture set my taste buds tingling! Have a nice day all :)

Proper comfort food! Hope it hits the spot.

I do the same, make my own with plain white vinegar. I don’t even heat it, just cover the peeled eggs and leave alone in a screw top jar for a while ( days/weeks possibly even months - they’ve always been fine)

Also contained onion, sucuk, parmesan and arugola.

Had lots of arugola this week, bought 3 bags for 25 cents each on their last use by date on tuesday. It's starting to get a little wilted by now but still mostly fresh and crispy. :)

I'm curious? How do you manage slightly burnt and slightly raw together? I can do them separately on occasion. still looks fine though.

I reckon an omelette is supposed to be slightly underdone. It's a bit brown, but not really burnt. Bet it tasted good.
 
Behind again. I've been a little bit "off" this week with the heavy regime of multiple drops. I'll catch up now, though. 6 March - bed 8.8 FBG 7.2. Noticed as well as feeling "off" BGs are higher than normal again. @DJC3, that hoggett shepherd's pie looks really good.

B. TAG and a bit crustless quiche.

L. 2 slices of SRSLY fruit loaf with butter.

D. Leftover cold cuts. Ham (Italian and a spiced ham), roast beef, haslet, mortadella, and garlic sausage. Coleslaw & egg mayonnaise. CC little chocolate pot.

Tuesday 7 March - bed 8.5 FBG 7.3. I'm a bit hot at night. I can only assume it's all the combination of drops and meds upsetting things.

B. TAG and I had a bit salmon & broccoli omelette when I got back.

L. Another bit of that salmon & broccoli omelette. It's quite nice cold as well.

D. Hubby got my scallops, prawns, and mushrooms done in white wine ready for me.

I was back on the school runs, and the youngest had his late afternoon basketball session. After that, my son was desperate to get to a supermarket as I hadn't been out. That gave me my first taste of driving at night. I can see well enough. It's still a slight imbalance (which will sort itself in a week or so), but glare from approaching headlights is an issue. Again, that should sort itself as the right eye is fine.
