What have you eaten today? (Low carb forum)

Brunch was an avocado and raspberry smoothie and a coffee with cream.
Another coffee and cream mid afternoon.
Dinner was chicken breast and roast Mediterranean veg with pesto, philly and cheddar on top...I blended half the veg to make a sauce.
Pudding was a low carb cheesecake with half a blood orange on top.

Going to try the peanut butter boost balls as a treat tonight :)
 
Stayed with my daughter over the weekend. She claims she can’t cook but this was the brunch she produced for me on Mother’s Day!

Today, back to normal so:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and phd bar.
Skipped lunch.
Mid afternoon: coffee shop coconut cappuccino and a carb killa bar.
Dinner: LC Marguerita pizza with mushrooms followed by SF blackcurrant jelly and cream.

Monday 20 March - bed 8 FBG 6.9 usual school runs then straight to physio. Much needed work on the legs!

L. Early on return from physio, a bit crustless quiche

D. Cold cuts - ham, roast beef, pork and egg, ox tongue, mortadella. Coleslaw, egg mayo. Had to have a CC little chocolate pot.

I've been munching on some almonds, too.

Haunted by road works currently. All council. Then it dawned on me the time of year. Financial year-end approaches! I wish they would fix the potholes. It's like a slalom course on some of the roads.
 
I'll have to wing it again tonight with whatever is in my kitchen. :)
Oh well, can't win every day, can you?

Had way too little sleep tonight, which always makes me indecisive.
I still had two eggs, boiled a couple of days ago, so I decided to mix them with half a raw onion and mayo, and add two thick rashers of bacon found in the fridge to make a nice thing to cover a slice of bread for tiday and tomorrow, plus either a cheese and tomato sandwich or a grated celeriac and mayo sandwich.

I figured I could mash the egg, slice the onion and make the second sandwich while the bacon was slowly doing its thing in the frying pan.

And then the eggs looked funny with a darkened edge around the yolk, even though they hadn't been completely hard boiled.
Indeciseveness caused by lack of sleep meant that the bacon was done before I even started making my second sandwich so I gave up and had the bacon on bread on a bed of chopped onion with some mustard and horseradish.

I suppose there was nothing wrong with the eggs either, both dogs and cats loved them.

I guess I'll have to supplement with nuts or chocolate later on. Or with pork scratchings. Or with all three...

Tomorrow's a new day with more sleep! :joyful:

@PenguinMum and @Annb I was also wondering today if celeriac could be cooked whole in the microwave, so thanks for answering that question.
@RosemaryJackson I’m thrilled for you that you’ll get to see your family soon.
Food today:
B- Bacon roll made with SLC seedy roll.
L- cheese omelette with green salad and seeds. Followed by 1/2 a small green apple! Weighed about 4Og I enjoyed every crisp mouthful and it didn’t have a drastic effect on BG.
D- baked sea bass with lemon butter. Spring greens, baked mushroom and roast celeriac ( wish I’d read this thread before struggling to hack a lump off it)

@maglil55 we are also surrounded by roadworks - same reason, and the potholes are causing vehicles serious damage. Especially when they are full of rainwater and look just like a puddle at the side of the road so you don’t realise how deep the hole is.
 
Morning all. Yesterday was a write off as far as food was concerned but today is another day. I have celeriac so am going to do it in the microwave, mix it with salt,pepper and butter and tuck in. I find it hard to cut as well. I'm fasting till I get hungry. I'm thrilled as well that I'm going to see them soon but why, when one is excited about something, does time drag???? Hope you all have a lovely day. :joyful:
 
Didn't do well on the food front myself yesterday. Too busy making food for an event I'm not going to today. The venue is all wrong for me - a supposedly accessible one, but I find it very difficult so I have said I won't be going. Made jewelled cauliflower rice with a butter bean and pecan sauce plus loads of cupcakes which had to have butter icing put on them. I got into a bit of a mess with the butter icing and had to check the flavours. Ended up having too many tastes to check so didn't want any food for the rest of the day. BG was fairly stable, but a bit high all day. Today's another day. Alistair will take the food to Stornoway for me and that will be the end of that. Now I have to think about today's food for me. Just going to check in the fridges to see what there is.

Edit: Just checked and there if beef mince that has to be used and there are 2 packs of bacon, so breakfast will be bacon and eggs again - bacon is already on - and there's enough beef to make some ragout and some meatballs so one or other of those for later today. Enough eggs at present for eggs to go with the bacon, so I'll get to it and make my breakfast. Don't seem to be able to get anything but very small to small eggs at the moment, don't know why that is.

First of all thanks @Antje77 for the fun of octopus tea graphics!! Octopus is one of few things from the sea that I cannot eat, its just too chewey. Lobster is another (a great relief to Mr PM if we’re in a restaurant) because I get a bad allergic reaction. Doesn’t happen with crab …I‘m a one off me!
right today brekkie my usual slice LC toast and copious tea.
lunch was ham & emmenthal salad, cup of tea.
supper will be stirfried chicken, chorizo and red pepper with some paprika and cauli rice.
 
10ish kefir with lemon zest
1ish two boiled eggs with low carb toast (also boiled a couple more eggs to put in fridge to take out with me tomorrow) followed by yoghurt mixed with a few frozen berries and some chopped up Apple rind.
3ish low carb cake
5ish confit duck leg with salads and a low carb wrap with small glass of red wine.
 
Didn't get to report in yesterday. Think therewasyoghurt for breakfast, exercise class, cheese for lunch and maybe chocolate, dinner was in the pub and was chicken curry, no rice, just plain veg and 1-2 glasses white one.
Everyone else tucked into desserts so I ate a nut bar out of my bag instead.

L: 2 slices cheese on hi lo toast, done in the airfryer. The last hm lc almond biscuit (they never did get to freezer and I only made them yesterday afternoon!)
Dance class 2
D: frittata with ham, rocket and broccoli. Green beans on the side. Small rum and raisin ice cream
 
Breakfast: Greek yogurt with frozen raspberries and peanut butter drizzler
Coffee and cream.

Lunch: Celery, radishes, and cucumber dipped in a Brie and caramelised onion dip.
Can of Monster Mule.

Snack: Dairylea triangle and a coffee and cream.

Dinner: Bacon, mushroom tomato, onion and cheese omelette with salad leaves and caeser dressing. Sugar free jelly with extra thick double cream and blood orange.

Snack: Judes low sugar milk lolly

Total of 1438 cals and 29.9 carbs
 
Just received an e-mail asking if Alistgair left the food at yesterday's venue because they didn't find it! He took it, but there was nobody there to receive it (15 minutes after it was supposed to have started) so he put it on a table where it should have been found and left. So much for all my cooking/baking. I've replied to the e-mail and told them it is ther somewhere, unless someone fancied it and took it away with them, so someone will have to go and look for it and find a way of using it. Might end up in someone's freezer, but not mine - as usual there's no space.

It's just gone 7.30 am. I've been up since 1.30 doing various chores and had 3 cups of tea so far. Really don't feel like anything eggy this morning. May just have bits of ham and/or cheese for breakfast, once Em has had her breakfast and gone to school. She hasn't arrived yet but should be here any minute.

The sauce that I cobbled together for the meatballs was really good but unfortunately it was one of those that I just put in bits that I felt like, and I don't know how to reproduce it.
 
Morning all. Beautiful day again. Stuck to my guns yesterday but my bg was high last night bedtime. Am wondering if excitement can raise it? My son facetimes me wherever he is on their journey so I know he's getting closer. Could that be it? I have to go to the walk-in clinic today, I have a very painful lump underneath my foot and am not able to walk very well. Worries me with it being an extremity. Fingers crossed.
