What have you eaten today? (Low carb forum)

Tuesday 2 May bed 7.9 FBG 7.5. @IBEX82 - that's one of the artisan rolls

Back on the school runs. It was a bit of an effort to drag myself out this morning, but I got there.

B. TAG and 2 slices of SRSLY toast with a new thing, Tesco Ploughman's Pate. Really tasty.

L. 1/2 avocado with prawn cocktail. 8 almonds.

D. Yet another of M&S incoming from the summer range, a buffalo chicken burger. Quite spicy.
I had the burger on a SRSLY artisan roll with Emmental cheese slice, lettuce, and tomato. Plate looks a bit messy, but I'd already started putting the lettuce and tomato on it.

Maglil, what does the Ploughman's pate consist of? Is it meat pate or cheese? I love pate but have to make it myself because there's always something in the commercial ones that I can't have. I ratherf fancy the idea of a cheese and pickle pate.

Oh this looks so good.. you’d never know it was different to normal bread.

I can’t wait to get my seriously order :)
 
Breakfast: Bacon and eggs. First time I've had bacon in several weeks.

2nd meal is going to be the rest of the Kerelan chicken with the rest of the cauliflower rice.

Intending to make a kind of cauliflower pickle this afternoon with some turmeric and mustard - a bit like picalilli I suppose, but less variety of veg, and not so moist.
 
I have a cold which I never cope well with, so I'm in a massive grump. I live with heart failure too (very well-managed) and colds are guaranteed to give me loads of rubbish symptoms because of that.

So, as I was feeling sorry for myself:

B- Coffee with cream.

McDonalds double sausage and egg McMuffin WITH the muffin and a hash brown. 41g carbs total.

I felt like I was eating gold. Such a luxury.

It sent me from 6.4 fasting to 7.8, 8.8, 8.3 at 30/60/90 minutes and then back to 6.4 at 2 hours.

This is why I am a huge fan of regular testing when trying food. Doing a pre and 2hrs post-prandial would have told me next to nothing. As a very occasional one-off when feeling grotty, that's not too bad a rise.

Snack - two Skinny Food Co chocolate sandwich biscuits. Not terrible.

Lunch and dinner - to be determined but it's getting on a bit for lunch so I might just have some cheese.
 
10ish usual small portion of kefir
12ish five M and S spicy rollitos and 30g of mixed nuts plus peel from one small green apple
5ish slow cooked pulled pork with salads a few teaspoons of hm hummus and a low carb roti. Also glass of red just now and plan some 100% chocolate with my decaffeinated after dinner coffee.

Black coffee and black tea all morning before annual diabetes check with a very disinterested nurse. When I told her I’d been in remission 5 yrs she replied “ahh, bless you” I’m not sure she was even listening.
L- rest of yesterday’s chicken in a DGF wrap followed by a DGF Notella egg. I love these.
D- Stew of beef shin on a bed of spring greens and cauli. 1 slice Schneiderbrot that needed using up.
Will stick to fresh ginger and turmeric tea all evening.

@Annb I’ll be interested to know how your cauli pickle turns out. Do you have a recipe, or is it your own invention? I miss piccalilli.

Yes I think the ahh bless you is the standard response a bit like agreeing without worrying about really listening. She's too used to majority of diabetes type 2 patients getting worse despite following official advice.
Also lots of hugs to you for yesterday's car bill shock I felt for you.
Edit to add my new avatar is tulips in my garden planted last September after mums funeral love the yellow stripey ones and mum would have too.

My own invention. Haven't tasted it yet - leaving it a day before checking. It is just a mixture of turmeric, mustard powder, cumin, ginger and chilli powder, fried off in butter. Finely chopped shallots and garlic, fried in the spicy butter. Small florets of cauli heated through in the mixture but not cooked. Lime juice added to the hot pan - just enough to moisten but not to make a sauce. Off the heat as soon as it heats and shake the pan around to make sure all the cauli is coated. Done, apart from waiting a day. It won't keep long but should last 3 or 4 days in the fridge.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: coffee Shop coconut cappuccino and a carb killa bar.
Dinner: salmon fillets with peppercorn sauce, broccoli, cauliflower and carrots.

B : ff greek with seeds, 6 chopped almonds and 1 sq 85% chocolate 1 hard boiled egg
L: 1 chunk cheese from packed stash (while watching hubby devour a large piece of apple crumble cake in cafe)
4pm 1 hard boiled egg
7pm a 90 second bread slice served with avocado, olive oil lemon juice and mayo.
1 scoop chocolate ice cream 1 glass red wine 1 glass port
 
Well I like all the ingredients so that’s a good start. I’d never have thought of using lime juice as the ‘pickling agent’. Will you post a photo when it’s done please?
I'll see if I can get Neil to take a photo of it - my camera's broken and although I can take a pic on my tablet, I don't know how to get it onto my laptop to post it. Neil has a fancy camera which he bought to take pics of wildlife so it should manage a decent shot.

That sounds like a lot of trouble just to photograph cauliflower! Please don’t worry about it, I’ll just wait for your verdict.
 
Morning all. Well, the plans for yesterday didn't materialise , had sausage, bacon, egg, mushrooms and tomatoes. BUT I also added 2slices of normal wholemeal bread . Which I shouldn't have but I was feeling out of sorts so I also had some for tea too with my salmon with the result that my bg went into the high 9's and settled at the 8's at bedtime. It doesn't pay to rebel against diabetes, does it? It gets it's own back every time. Not sure what today's menu will be. I'm taking my granddaughter to the Marshes for her to do some sketching.She has a talent for drawing and painting. Have a good day everyone. :)

I’ve also lost 3lb more pound since last week so now my total weight loss is 41lbs - happy side effect of low carb.

Yesterday for dinner, I actually made cheesy sausage bake (sausages, broccoli, cauliflower, cream cheese and cheddar grated on top)

I also had a millionaire shortbread with a cuppa from the Keto Kitchen - I saw it mentioned on here. Oh my word.. it was like a small slice of heaven. I haven’t had anything sweet for several months so it really did make me think I was having a ‘treat’.

Today, I have burgers on the menu for dinner. I tend to alternate either breakfast or lunch so I’ll decide what I’m having soon.

That sounds like a lot of trouble just to photograph cauliflower! Please don’t worry about it, I’ll just wait for your verdict.
Verdict: Allright but should have learned my lesson from the Kerelan chicken - the chilli is very hot. Doesn't quite spoil it but when I use it, it will have to be partnered with some yoghurt or soft, sharp cheese. It's only a quick pickle, so it won't last all that long, but might put half of it in the freezer - should be OK there for a while. It looks good - kind of golden brown florets with bits of shallot sticking to them. I forgot to say - I grated in the zest of a lime and used some salt as well. Probably could have just used the ginger and left the chilli out. That's experiments for you.

Breakfast: Bacon and eggs with a RyVita cracker.
2nd meal will be courgetti Bolognese.

In February the consultant at the medical clinic in the hospital referred me to the dietician to see if she can figure out a way of getting some weight off me. She called a short time ago with an appointment for next Tuesday. She was a different one to the usual one - maybe she knows something about low carbing.
