What have you eaten today? (Low carb forum)

Complex day but in the end good result. I booked and paid for a cruise for us and mum in 2019 - planned for may 2020 to celebrate mums 90th birthday year. At that early Covid stage rules were not that good in customers favour so only got a bit refunded and rest put by them into a future cruise credit. Covid went on longer than we expected and then mum not well enough to go. Although I'd paid for mums cabin as well as ours some of this outstanding credit was in her name so her dying last year added to complexity. Anyway eventually sorted out issues, and cash refund not a possibility , so used all the credit to book me and OH a cruise to Norway next month. Mum would have been happy with us doing this rather than writing off the cash.I'm excited by Norway although nervous about negotiating the food! 3 meals a day plus afternoon tea are on offer!I
Today
Breakfast mix of kefir with hulled hemp seeds
Lunch cheese with peel of one Apple and a few squares of 100% chocolate
Dinner starter of ACV in water then Mediterranean chicken with salads and LC roti and glass of red followed by LC cake and decaffeinated coffee
 
Morning all. Haven't posted for a couple of days. Tuesday night had a night of severe leg cramps and had a fall too. Relied on my friend for meals as I hurt my back rather badly. My walking stick and I are best friends and going everywhere together so I can airfry my chicken drumsticks and microwave my steamed cauli! I have some smoked trout that I can have with the cheesy crackers from Lidl for later. Have a good day folks. :)
Hope you are feeling better after your fall Rosemary. It can be disconcerting to lose control of what is happening to you but hope you regain all your confidence very soon.

Bit of a day here. Haven't been able to get out for 5 days. Looking like I shall be able to after 9pm!
So what I was going to eat still frozen solid...
Spent the day eating Feta and peanut butter, and celery and copious cups of tea.
Sounds like a difficult few days there. Hope you did manage to get out and get something substantial to eat.
 
Tuesday 6 June bed 7.9 FBG 7.6. @Annb I hope they'll fly you to Glasgow, as ferry plus road would be a nightmare. Even flying isn't ideal, but it's a lot shorter trip wise. As you know, I've already been there with the eye patch thing (and pirate impersonation!) @RosemaryJackson - you have to be so careful. A poor woman fell today at the school crossing. Thankfully, there were teachers who came to her aid immediately. She had to go to the hospital, though, as she fell backwards and was bleeding profusely. The teachers got a first aid very quickly to assist her meantime.

B. TAG and 1 slice of SRSLY toast with Ploughman's Pate (I only had time for 1 slice as I had a bit of running about to do)

L. Another 1 slice of SRSLY toast with Ploughman's Pate and a Benecol dairy free. A few Muscat grapes - like eating wine! From M&S and I have to limit as they are very addictive.

D. Sea bass day! Usual mix of spinach, tomato, and mushrooms, but Hubby made "real" chips. I acquired 6 of them. Birra Moretti Zero. CC Little chocolate pot.

Wednesday 7 June bed 7.1 FBG 6.4. Boys are here for dinner. Youngest want broth (doesn't care about the warm weather), eldest GFcarbonara. That was Hubby occupied making the soup. As least carbonara is a make there and then job.

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. A bit crustless quiche. A cheese triangle.

D. Eventually! Slice of GF black pudding, fried egg, slice of back bacon, 3 mushrooms, spicy halloumi fries. CC little chocolate pot.

]@Annb[/USER] hope you don’t have to wait too long for your scan but goodness Glasgow is a long way for you to go is it not!
There is an MRI scanner in Inverness, I believe but the opthalmologist works out of Glasgow and so I will have to go to his base for the scan. Not sure how to get there. I can only fly if someone can go with me - I did go to Inverness a few months ago on my own and vowed never to do it again, despite assistance being available. It wasn't enough and the journey just about killed me. However, Neil won't fly because he refuses to have photo identity and isn't allowed to fly without it. Unless someone else can go with me, I'll have to go by road with Neil. It is a long way by road. It's almost 150 miles from Ullapool and takes about 6 hours to drive - that's after 21/2 hours on the ferry. And at least a 3 day trip - travel, overnight, scan, overnight, travel back. What fun!

Haven't bothered with the steak after all. Too tired so I shan't be eating. Steak for breakfast, I think.
 
Evening everyone

B: Two poached eggs topped with a knob of butter, slices of avocado and Caerphilly, seasoned with a grinding or two of black pepper.
Water to swallow tablets, followed by espresso.

L: Ceviche made in advance using lemon sole fillets cured with lemon juice, zest and salad onions, then mixed with tomatoes, green chillies, black and green olives, chopped coriander and olive oil. Salad made with watercress, lettuce, cherry tomatoes, celery, radishes, Romano peppers and salad onions, topped with toasted hazelnuts and dressed with an olive oil, oregano, garlic and balsamic vinaigrette.
Raspberries with Greek-style full fat yoghurt. Water to drink.

D: Seafood salad made with king prawns, mussels, lettuce, sweet cicely, fennel, cherry tomatoes, celery and salad onions dressed with homemade mayonnaise, using egg, avocado oil, white wine vinegar, parsley, garlic powder and seasonings, scattered with toasted sunflower and pumpkin seeds. Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: scrambled egg on Marmite on LC toast. Free range eggs from a friend’s chickens, so lovely yellow colour :)

Thursday 8 June bed 6.4 FBG 6.7. Aqua zumba Day. The eldest is still liking year 2 timetable as well. @shelley262- I was on a cruise to Norway, Sweden, and Denmark many years ago. Scenery is spectacular. I suspect you'll find the food easy to navigate. There's just so much of it. I'm sure you'll have a wonderful time.

Yes thank you. Mind you cost me £50 for a new fob. Now at least free to drive again. Now can walk and drive. New knee needs exercise.
 
B- scrambled eggs 1 slice Edam ‘toast’ and turmeric&ginger sauerkraut
L- sort of cobb salad with bacon, cheddar, h/b egg, slice of chicken red pepper, cherry Tom and lettuce. ACV/oo dressing
D- Chicken curry with a DGF roti. I agree @shelley262 these are very good. Well done sorting the cruise credit finally. It sounds wonderful, I hope you see the Northern lights.
 
Forgot to do a waking bg this morning so tested after I been downstairs, done washing up and watered a few plants then took cup of tea back upstairs. All I'd had was a coffee with double cream but tested at 10.5!!! Tried another finger got 9,5.
Tried not to panic had shower dressed, tested again at 8.2

Was hungry but kept fasting until lunchtime. Was out at big shopping centre with son who introduced me to Big Easy, a BBQ chain in London that does a lunch deal. Had a dry rub pork rib with loads of meat, slow pulled pork, half a sausage and a big piece of chicken with just a little bbq sauce on. It came with cole slaw, beans and a corn muffin. I swapped the latter 2 for my sons coleslaw. Wow , what a feast and it came with a drink included for just £10!!! The lowest carb drink option was a prosecco, so I just had to!. It was small one. ;)
Good value. The same of an evening would be nearer £25.

Tried for OMAD but after 2 hours dancing this evening succumbed to a cream coffee dessert and a dgf cake.

Haven't tested bg again after my horror this morning. Have a libre lurking that I was saving for holiday at end of month, but thinking I should be seeing what's going on. Shame the hba1c I was due to have last Monday was cancelled.

Dinner starter of ACV and water plus a few vegetable crudites and hm hummus then salmon in lemon butter with asparagus and a few hm (par boiled and frozen) new potatoes roasted in olive oil and glass of red wine followed by LC cake and decaffeinated coffee.
 
My waking bg was 6.2, normal for me, so no idea where a 10.5 sudden came from yesterday, but taking it as motivation for a very low carb day.

Just 2 cups mint tea then lunch with a friend at a gloriously warm seaside pub. Shared starters of devilled whitebait and tatare sauce. Main was sea bream with green veg and new potatoes (had just 2 tiny ones). Drank sparkling water.

Now past dinner time, but feeling very full and bloated so trying to skip.

Quite a deep headache that has been coming and going all week now, maybe I'm poorly. Bg an hour ago was 6.1

L: Packed lunch made with leftover ceviche, Cheddar cheese, lettuce, cherry tomatoes, celery, Romano peppers and salad onions, dressed with an olive oil, oregano, garlic and balsamic vinaigrette, topped with toasted almonds.
Strawberries to round off lunch.
Water to drink.

D: Smoked salmon and cream cheese salad made with lettuce, fennel fronds, cucumber, celery and cherry tomatoes dressed with olive oil, parsley, garlic and a touch of lemon juice, topped with toasted pumpkin seeds.
Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a DGF lemon cookie.
Dinner: salmon and cream cheese on a LC roll with coleslaw.
