Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: bolognese with sliced sautéed courgette.p with a sprinkle of grated cheese.

Monday 17 July - bed 7.6 FBG 7.5. Early rise to book into next week's Aqua and get ready to attend this week's. Made a detour afterwards to pick up the school clothes from M&S, and a very kind man helped me get the very large box in the trolly AND into my car.

B. TAG and a slice of SRSLY toast with Ploughman's Pate.

L. A bit of crustless quiche and Benecol dairy free.

D. Leftover cold cuts. Roast pork, ox tongue, beef brisket, garlic sausage, ham, haslet. Veggie salad and coleslaw. CC little chocolate pot and raspberries.

Tuesday 18 July - bed 7.9 FBG 7.6. First of 2 days where our meals will be different. First, though, I finished clearing out the clutter drawer. You know, that drawer where everything is dumped in, and nothing can be found?

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. Nothing, I was engrossed in the clutter drawer (there is more than one, but I'm pleased to say the others remain tidy from the last clutter-clear).

D. Scallops & prawns in a cheesy, creamy sauce (a bit too much sauce). Although it doesn't really go, I had salad with it. CC little chocolate pot.

After the discovery of lots of gin, I had 2 with soda and a strawberry.

I am convinced you should write a book on your BGs @Annb. They are certainly a mystery that defies all logic.
There are obviously other factors involved about which I am unaware. Maybe medication, maybe lack of sleep, maybe blood pressure or maybe something else I can't think of. Just need to keep an eye on it.

It’s a ‘healthy lifestyle’ course. I'm interested in the sessions about the psychology of eating and comfort eating, having put on weight over the last couple of years since Mum and Dad died. I have to suffer hearing all about the eat well plate first though!
Very brave to take such a course, I hope the parts on the psychology of eating and comfort eating will be helpful after surviving the parts on healthy carbs and low fat everything!

Two wins today!
After yesterdays no cooking day I had the fresh broad beans today, and I also finally worked out how to make a very tasty low carb variation of my mum's 'cheese schnitzel', another item back on the menu!

The original recipe uses fine bread crumbs and egg, two layers. Last time I tried with almond flour but while this kept the cheese inside, it didn't result in a nice crispy crust.
So this time I used one layer of almond flour to keep the cheese from escaping, and one layer of crushed pork scratchings, which worked very well!

Yes, cheese did escape, but that had more to do with my habit of moving stuff around in the pan than with the crust. So if I learn to just let my cheese schnitzels do their thing, only turning once, they should turn out perfect!

Mid morning: a chunk of Manchego cheese, ff greek with seeds and strawberries, 2 hm lc blackcurrant muffins.

Exercise from scarifying the lawn by hand. Trying to do 40 minutes a day as its really tough work

16:30 ham and a fried egg with some of yesterday's Mediterranean veg. 1 small ice cream.

Evening at cinema. 1 small white wine with soda. But the film was really bright and loud and triggered a migraine so I tried sleeping through the very long first half and we didn't stay for the second half.
When home 2 sqs hm lc cinnamon cake

Morning all. I didn't do brilliantly yesterday I'm afraid. Over the day I had a pack of 3 choc covered Lotus biscuits, 1 slice of cheese on normal toast and Pollo Pizzioala! Chicken in tomatoes with capers, green olives, onion and mushrooms. What let me down were the chips that came with it. I also had champagne!!! It was a big family get together and it was noisy, it was fun, there was lots of laughter and I had a wonderful time but spent the night in and out of bed with leg cramps. But it was worth it. We may be going to Lincoln today so I will report tomorrow. Have a lovely day folks.

Yesterday - 1 small Greek yoghurt, lumpy soup with the meat from a leftover chicken thigh included for brunch, roast beef with home-grown runner beans, 2 walnuts for dinner.

Nothing today yet. Brunch will probably be different lumpy soup, or else a piece of cheese, maybe with home-grown cucumber. Dinner will be steak with more runners. They are suddenly really going away, and luckily I'm not one who minds having the same thing twice (or more). Even more lucky is that non-diabetic husband does the gardening.

Just had raspberries and cream. I have an appointment to have my legs rebandaged at 11.20 so can't really have a main meal before I leave and will be really hungry by the time I get back. Hence the berries and cream to keep me going.

Main meal will be lamb "steaks" - still don't know where on the animal they come from. One should be enough with some braised leeks and maybe some cauliflower mash. It's cold here today, so a hearty, warming meal will be needed.

Yesterday, woke with a bit of a sore throat and headache so had a quiet day.

Yesterday’s food:

Breakfast was a boiled egg with a slice of LC toast.
Lunch was prawn salad.
Supper was an Aberdeen Angus burger in a LC bun with some fried onion and mushroom followed by GY with grated dark chocolate.

Yay!! Crispy skin! Are you eating it, though?

Eyes are still marinating, sadly. In 6 months I've to stop using the drop I use twice daily. We'll then see what happens, and if the pressure is still down, the last part of the "marinade" can be stopped. She'll be comfortable with that, as I'll be due another stint with the optician 3 months after that, so they'll pick up any movement. You're correct, though. It's a great result.

Yes! Ate it all, never thought I’d see the day. Same with chicken skin, I couldn’t imagine eating that a few years ago either.
Sorry, speed reading I misunderstood the eye marinating but I’m really glad about the improvement, it must be a huge relief.

I’ve missed a few days, been laid low with an attack of vertigo which has been quite debilitating. I have some pills now which I hope will ease things
Today I had black coffee all morning and lunch coincided with my DGF order arriving, so a buttered DGF roll, beef, cheese & gherkin. Then a DGF cookie. All the rest safely stored in the freezer.
Dinner - pork chop, outdoor reared saddleback from local farm ( I bought 1/2 pig for the freezer) Coop Irresistible sausages ( I knew the sausages from the farm pig weren’t keto but I had a bite of Paul’s and it was delicious) fried red onion and mushrooms, steamed broccoli and glass of red.

Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablets.
Espresso.

L: Mushroom and spinach frittata made with grated Cheddar cheese, eggs, onion, cream and oregano.
Green salad using lettuce, chicory, sweet cicely, celery, mint and salad onions, dressed with an olive oil, garlic and balsamic vinaigrette, topped with cashews roasted in butter.
Skipped pudding
Water to drink.

D: Greek salad made with red, yellow and green peppers, feta, vine tomatoes, lettuce, cucumber and Kalamata olives, dressed with oregano vinaigrette, topped with walnut halves.
Water to swallow tablets.

We had wonderful pork chops this evening too.

For some time now, MrB has been taking the rind off the chops before cooking, but leaving a layer of fat on them. Once the chops are cooked, they come out out, but the rind stays in the airfryer and the temperature raised, making fabulous crackling. So good!

Oh dear - it went wrong again. We discovered that one of the front tyres was worn and soft so, when I came out of the Health Centre. we had to go to the tyre service and get 2 new ones. That took quite a while and by the time we got home, I was pretty exhausted so I rested with a cup of tea and fell asleep. When I woke up it was time for my Zoom class so I grabbed a slice of wholemeal bread and, taking a chance, had some peanut butter. Had a really bad reaction to it the other day so hoping it won't be too bad today. After the Zoom class, I was crippled so couldn't do anything. Lamb and vegetables now back in the fridge.

This is all not helped by the fact that I have no means of checking my BG. DIL was told that she will not be operated on until she gets her BG under control and all of her sensors fell off of her arms, so she borrowed my last one. That also fell off so she borrowed my fingerprick kit because her own has disappeared. Now my sensor has run out - I thought it had 2 more days to run. Alisair was going to try to get replacement sensors today, but didn't get them. He'll have to try again tomorrow. Meantime I will have to be extra careful about what I eat.

Evening meal was going to be some frozen fish thing from Lidl (carbier than I usually eat but nothing I can't dose for) and more of the fresh broad beans.
I wanted to put the fish in the oven before going to neighbour-in-the-garden to ask if I could borrow his submersible pump tomorrow to empty the now bright green and bubbly pond.

Lucky thing I forgot to put the fish in the oven first, ended up having a burger, a good portion of spare ribs, and some grilled slices of salami with my neighbour. :joyful:
He offered me a potato too, but with the understanding I likely wouldn't want one, so nice to not have to do some difficult polite declining!

That is a crackling good idea! I’m Definitely doing that in future. I don’t know why I hadn’t thought of it.
