What have you eaten today? (Low carb forum)

and best of all I found a recipe for butter mayo that doesn’t go hard in the fridge. It’s delicious and I think I’ll stick to it even after my carnivore month is over. @AndBreathe like you with your leg of lamb, the first thing I thought when I discovered this mayo recipe was ‘I must tell GG’ it still gives me a jolt.
So share the recipe with us instead?

I did a decent piece of machine embroidery at the weekend, and had taken the photos before it hit. She was so good for my ego. She wasn't a maker (or a doer), but marveled at anything "handy.
Embroidery of any kind is definitely something to marvel over!
I had a very, very short interest in embroidery last year. Lasted all of about 10 minutes after two weeks of reading up on it and finding the right type needle and thread and stuff. :bag:
Although I could try again now I've embraced needing reading glasses, it may make a difference.

I had a very odd and not very satisfying food day so far.
First lesson of front crawl this morning (fasting except for coffee with milk). Originally I was going to go back home between this and my afternoon hospital appointment, but a friend has been unexpectedly admitted to hospital yesterday evening and urgently needed suitable food and a friendly visit.

So swimming was followed by a long grocery trip trying to find all the stuff in isles I never visit in a large supermarket. My friend is both vegetarian and lactose intolerant, and quickly on her way to becoming underweight and malnourished due to a flare-up of colitis.
Idiot hospital offered her a low calorie yoghurt for lunch, and boiled rice with boiled cauliflower for dinner, starving her even further. Hospital dietitian has visited but the hospital doesn't cater for being vegetarian and lactose intolerant so this was the best they could do.
I bought her fruits (on her request), lactose free full fat yoghurt, avocados, two bags of hearty soup meeting her dietary restrictions, and two family bags of crisps for calories.
Why can't the hospital simply serve her a large portion of fries with mayo (which is how we Dutch eat our fries) instead of fat free boiled veggies if she needs calories? Egg fried rice with veggies? How is someone supposed to get better if they don't get fed properly?

Anyway, I was so annoyed and angry with this (and scared in case I ever find myself admitted to hospital) that I forgot to buy something for myself to eat.

Had some chocolate on the way back home late afternoon to treat a hypo, which was breakfast. (Yes I parked the car until I was over 4 again, no rules on going above 5 or an extended wait after a hypo where I live, thankfully.)
Back home it was after 5, and time for a beer.

My meal should have been the same as yesterday but my head was too full to deal with cooking so I decided on a double low carb wrap turned toastie with cheese and chorizo. Wasn't very good though, too much cheese because I was so hungry when making it. :banghead:
Last meal will be midnight snacks consisting of chicory leaves with hummus, and pork scratchings with aiaoli, at least I can't go wrong on that one! :joyful:

This is Saturday's embroidery. He's a scary looking bird, but if he's on my back, I don't have to look at him.

I know it is completely off-topic, so I will ban myself from the thread for today. :)

The link I saw took me to YouTube and the bloke on it waffled on for ages the way some of these people do, before he got round to the actual recipe which takes about 2 mins! Anyway I’ve added it to my CMT ( The ACV and Dijon mustard in it aren’t strictly carni, but then neither am I ) it’s delicious.

@AndBreathe that bird is absolutely fantastic, you are absolutely justified in feeling proud. I’m so hopeless at needlework I once used staples to turn the hem on my jeans.

I found the recipe on: https://ketogenicwoman.com/how-to-make-carnivore-mayonnaise/#mv-creation-239-jtr. It looks good and I think will be great with the flavour of butter instead of oil so will be trying it soon. The only problem I can see is that it appears to be very thin and runny.

The word machine in machine embroidery is the key to the handsome devil. A recent machine upgrade (erm,..... I now have 6) led to this particular rabbit hole. :)

Keeps me out of too much mischief.
 
MIA again so back to Sunday.
Usual brekkie of slice LC toast, butter, copious tea.
Lunch was hungry so fried three meaty sausages which did the trick.
Supper was baked chicken skewers with salad inc avocado (my nemisis though I try to like it!)
Yesterday Monday usual brekkie.
Lunch was two boiled eggs followed by small bowl of strawberries and spoon Greek yogurt. I craved simple food as the hot weather has made my tummy flip.
Today have just had usual brekkie.
Lunch is the same plan as yesterday I enjoyed it so much and it helped settle my tum. When the temperature hits late 20s I fall apart a bit. Can’t enjoy it which is why we only go to Spain in April or October but having a sea breeze also helps and I stay in the shade.
Supper will be cod fillets in butter sauce with caul rice.
Able to stick to childish food as Mr P still away!
@Antje77 virtual hug for frustrating day and I’m sure your friend will appreciate the menu planning you are doing.
 
Breakfast: sausage casserole out of the freezer.
2nd meal: chicken dish of some sort - can't read all the label - also out of the freezer.
Actually beginning to see some empty spaces now - and a lot of ice.
BG sitting just over the 7 mark so far today - at least once I got going. It was 8.9 at 3 am and then dropped away a bit.
 
Just back from the hospital - my 6 monthly (consultation. All my results are good - even the weight loss they are happy with (10 kilos since February), liver function has improved and US scan showed no new damage. BP was a bit high but since I had been forced to take action to stop a hypo just a few minutes beforehand, I don't have a problem with that. Only my thyroxine level was a bit low but not low enough to do anything about, apparently.

Hurrah for LCHF!

The second meal label I have made out to be chicken with beans. Seems like an odd combination and will be quite high in carbs, I suppose. I'll have it anyway - perhaps I'll be able to leave some of the beans.

Ann, not adjusting your thyroid meds is naughty. Levothyroxine is a very cheap drug and a sluggish thyroid can make it very difficult for some people to lose weight.

Well done on your review and a big well done on your weight loss. Not easy for someone T2, and insulin resistant, never mind an under medicated under active thyroid.

Thanks for your comments. I will be asking my GP about adjusting my Levothyroxine. My SIL had readings just at the bottom of the normal range and her GP didn't feel the need to make adjustments. But she has worked with doctors most of her adult life and was quite insistent that her dose of Levothyroxine should be increased. The GP complied and now she is feeling much less tired than she has done for many months.
 
Guests expected on Sunday afternoon so I'll have to do some baking. One of the guests is about a month younger than me and her birthday is on Sunday. She is T2 so I'll make a low carb cheesecake in lieu of a high carb trad birthday cake. I'll have to do some other baking, little by little during the rest of the week for an afternoon tea - probably no more than 5 people coming.
 
Tried to last as long as possible without food today. At 10.30am had a mug of fresh coffee frothed with double cream. Took a trip to B&Q for some fence preservative, then nipped into Morrisons which is just a stones throw from B&Q. Bought my husband a treat (he's pretty poorly) of a packet of custard filled doughnuts (his favourite). Can say with hand on heart, the doughnuts these days are not doing anything for me. I've got no problem with them being in the house which wasn't always so.

Started painting the garden fence until I started feeling a bit giddy at about 4pm, probably because of a combination of things, the sun was beating down on my head, my head bobbing up and down as I painted the base of the fence and the top, and I was squinting to paint as the sun was in my eyes. Perhaps there was a bit of low sugar feeling also going on too.

At 5pm, had my one meal of the day, a dinner of braised steak and onions (not so much onions), with cauli rice sauteed in butter.

I do think the whisked coffee and cream is a game changer, it certainly clips my hunger.

Great result @Annb - well done!
 
@Annb sounds like good news 're your review but agree it's a good idea to push for more of the thyroid meds - sounds like it could be very helpful for you.
@JenniferM55 you're doing really well and gosh fence painting in the sun today is definitely something I wouldn't have attempted - sounds a bit like torture especially as fence painting has got to be one of the most boring jobs! Ours needs doing but I keep putting it off.
Similar food today to yesterday:
b two boiled eggs and a keto roll
L LC lemon cake and a few garden berries and yoghurt
D slow cooked pork shoulder with salad and LC wrap and a glass of soda water with a splash of dry white wine

It stiffens up in the fridge when it’s cool, and becomes perfectly spreadable. The recipe I used wasn’t from ketogenic woman but it’s probably the same.

@Annb I forgot to say great job on your latest set of hospital results.
Like @JenniferM55 I was trying to last the day without breakfast or lunch. I didn’t even have a fence to paint but I only lasted til 3 pm.
L- h/b egg and butter mayo which is a match made in heaven. 1 Babybell.
D- Sausage boats, I think this was originally @Antje77 ‘s brainchild. Split length ways and filled with cream cheese and topped with parmesan then airfried. H/m yoghurt to follow. IMG_3298.jpg
