What have you eaten today? (Low carb forum)

I notice I’ve become an ‘Oracle’, how did that happen?! :joyful:
It's all the posting!
I suddenly found myself an oracle when turning in my mod livery, I had no idea!
If we keep on posting we'll turn into gurus. No idea if there's something after that, no-one has made it that far yet. Perhaps the forum will simply explode or something.

I'm all into packing stress for my 5 day sailing trip starting on monday. The weather looks absolutely horrible, and apparently my brain has decided to stress about packing rather than the weather, which is a good thing but not less annoying.
I spent so much time overthinking what foods and how many changes of dry clothes to bring with me that I completely forgot to think about what to eat today.

So evening meal turned out to be a fried duck egg with the last of the smoked sausage on a slice of low carb bread. It will be augmented by an extra large portion of chicory leaves and hummus in bed.
My masterplan for getting some vitamins into myself during the sailing week relies heavily on chicory and hummus as well.
 
I can relate to that as someone who wandered out of the kitchen leaving an egg to boil dry until it exploded!
Best one I ever heard was one of our consultants (from my working days), who thought it was OK to put whole eggs in the microwave (shells on). They exploded and destroyed the microwave!
 
Saturday 16 September. Bed 7.6 FBG 7.4 Nipped out to get cold cuts for tonight. I wasn't feeling 100% yesterday and just wanted a simple dinner. Otherwise, I was busy ironing and trying to get Hubby to decide what clothes he was taking to York. I want to be organised so there is no flapping!

B. TAG and LC granola with sugar-free coconut milk and blackberries. Benecol dairy free.

L. Cheese triangle

D. Cold cuts. Roast pork, rare roast beef, ox tongue, ham, chicken tikka, egg mayo, coleslaw, and 6 chips. CC little chocolate pot and raspberries (just 1 @MrsA2 although I was tempted to have a second ).

@JenniferM55 - Spiders! It's breeding season. So long as they stay outside, I'm fine.

@DJC3- we've just finished the Bake-off Professionals, and like you, I settled down to Strictly (Craig has gained a bit of weight around the middle) and am looking forward to Bake off's return.
 
DIL has taken over management of the poly tunnel at her school (council is no longer employing a janitor or a lollipop person so staff are having to take on those roles. DIL is also a lollipop lady now.) She came in yesterday afternoon with a huge bag of grapes which she and Em had harvested from the poly tunnel and asked if I had any space in my freezer. She intends to experiment with making wine with them. As luck would have it, I have made quite a clearance in the big freezer - just about enough to take this bag of grapes. However, apparently there was a spider somewhere amongst the grapes. That's a no no. The bag of grapes is now outside the back door waiting for Alistair to come and take out any spiders before they are allowed back into this house.

I was very bad this morning and had a crumpet for my breakfast. I know I shouldn't, but I did. Took a relatively large dose of insulin to deal with the spike it would cause. But it didn't (cause a spike) and I have been struggling to keep my BG up in the 4's ever since.

Very hungry by lunch time so I had a hard boiled egg with a dollop of mayonnaise. No insulin!

I will have a meal soon. It will be some beef ragout out of the freezer. Not very filling but I hope it will be enough.
 
Evening all

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a vine tomato, garnished with flat-leaf parsley and seasoned with black pepper.
Water to swallow tablets
Espresso.

L: Aperitif: dry white wine
Baked whole sea bass, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears topped with butter.
A medley of baked broccoli, onions and sweet red peppers with garlic mushrooms.
Water to drink.
Raspberries and Greek full-fat yoghurt.
Two squares, Montezuma's Absolute Black 100% chocolate.

D: Salad made with anchovy fillets, eggs, avocado, Padrón chillies, Welsh onions, lemon verbena and a touch of lemon juice, with a dollop of aioli for dipping, topped with walnut halves.
 
Breakfast fried a few tomatoes from garden with one slice of bacon and egg and one slice of LC toast
Lunch a few garden berries with yoghurt and three! Squares of 90% chocolate
Dinner slow cooked beef brisket with cauliflower cheese and a few organic carrot batons and a glass of red wine followed by lc ginger cake and decaffeinated coffee
 
At 11ish had 2 slices of back bacon, with sauteed mushrooms in butter, followed by coffee and cream
About one o/c G&T accompanied by a bag of pork scratchings
Dinner was later than usual, was carried away sewing, had roast lamb, bit of gravy, and sauteed cauli rice
Lindt 90% chocolate 2x squares

It left me exhausted. Anxiety is not only tiring by itself but there are added layers of trying to tell yourself to not be ridiculous, and telling yourself it's ok to be ridiculous and it's ok to have a difficult brain.

Meal planning for today ended up at the back burner again, there's only so much that fits in my head.

Just when I was about finished and putting my bags in the car to save myself the work tomorrow morning I discovered there's a mouse living in my car.
So more thinking to do. I've opened the door of my car in hopes the mouse will find its way out, will close it again before bed in case of rain.
But I can't be sure it will, and my car will be parked for 5 days while I'm sailing. Not wanting the poor thing to die of thirst I decided to put a bowl of water and food in my car while I'm away, and that thankfully took care of those worries. :hilarious:

I really thought I shoul have a decent meal, with veggies and such before having to improvise for 5 days, so I fried an onion with garlic, a chorizo sausage cut in slices and some savoy cabbage, and flavoured it with hot sauce and cream cheese.
Very good for a thrown together meal!

@maglil55 I can imagine the noise of that egg exploding in the microwave. Mine ended up all over my kitchen; Ceiling, Cupboard doors, floor, everywhere. I was just relieved no one walked into the kitchen just as it exploded. It would have been like a grenade going off.

10:30 2 rashers bacon and 2 fried eggs
3pm shoulder of hogget which had been roasting in a low oven since 7am and was melt in the mouth tender.
Just black coffee and water to drink all day. I’m finding sober September a lot easier than I expected which is a relief. I think a glass or 2 of wine in the evenings had just become a habitIMG_3339.jpg

B: ff greek with 4 chopped pecans and 1 sq 85% choc
90 minute walk
L: out at carvery celebrating an 88th. Brilliant buffet starter, eggs, seafood, pate, salads etc. Good beef and plenty of veg including cauliflower cheese. Shared red wine. I had 1 profiterole for dessert... it was a help self buffet again so very pleased with my restraint :angelic:

But what if it got in when the car was open and it's trapped now?
Last week I carried a bag of guinea pig food from the car that had a hole in it so I think the mouse has been in my car for at least a week.

Not too worried about cold, I'm fine with that and the sailing will likely be short each day, considering the horrible forecast and the type of group (adults with learning disabilities) we have. Spares yes, lots!

Also an odd collection of food, which should save me from going hungry even if there is nothing at all I can eat with the guests.
I'll try to pop in on the forum on my phone to share my solutions to eating while not cooking and no fridge. :)
 
Sunday 17 September - bed 6.7 FBG 6.4. The swimming youngest had his first proper meet against other swimming clubs today. He thinks it was a disaster because he wasn't 1, 2, or 3rd. We're busily explaining to him he's in a group of 10 to 12 years old (he's 10), his times put him 9th out of 26 in backstroke, 10th out of 30 in breaststroke, and 12th out of 24 in FreeStyle (he was exhausted by then). He got personal bests in all three races (breaststroke, he knocked a massive 6.79 seconds of his previous best). He has learned you have to pace yourself. He was upset, though, but hopefully, when he's less tired, he'll realise being beaten by older children who have been competing longer is not a disaster!

It's hard for youngsters to understand that even though they know they are good, others, older, stronger, more experienced are likely to be better. They don't really understand the process of growing older and bigger, even though superficially they know it as a fact. His time will come. Being that good now bodes well for his success in future. Congratulations to him on his success so far.
 
10ish two boiled eggs with a keto roll and then just black coffee until dinner, as out and about.
5ish tandoori chicken(I marinated chicken chunks all day in yoghurt and olive oil with spices plus onion and peppers) oven cooked and served with salad, kimchi and LC wrap. Then LC brownie and decaffeinated coffee.
