What have you eaten today? (Low carb forum)

M&S chilli and lime nuts
What are those and where do I buy them?
I'm starting my shopping list for my next visit to the UK! (It's planned for early oct 2024, but that's no reason to wait making a list, right? :joyful: )

I got everything I need for my cottage pie from the store today but didn't feel like cooking.
The pack of mince I bought was too large for the recipe, especially if I'm going to add chicken livers as well.
So I used some of the mince to make some cheesy meatbally things: mixed mince with chopped onion and some spices and stuff like I would for meatballs, and used it to wrap a slices of cheese.
Good idea, bad execution. So it tasted great but it looks so horrible I'll spare you the picture! :hilarious:
MrB quite often fries off some coriander seeds with the mice, the carries on. Delish.
Noted. Add coriander seeds and mice.
I'll put out some traps tonight!
Shouldn't be a problem to catch a few, caught this little fellow in my car last week and rehomed it in the guinea pig pen where it's safe from cats and will get fed fresh veggies and dry food every day.

Hi All seriously MIA again.
Thursday supper was usual chunky cod fingers, my fave, aka Fish Finger Firsday (@Antje77 ignore that spelling!)
Friday usual brekkie of slice LC toast cooled, butter, copious tea
Lunch was another of my failed ginger & walnut muffins, chunk of cheese. the dried ginger was out of date and the resulting flavour was musty rather than warming. Still have two to get through. Don’t want to freeze them and lead to future disappointment.
Supper was two plant burger topped with Portobello mushrooms.
Saturday same usual brekkie.
Lunch out with friends for Thai tapas, tried to choose carefully and they swapped rice for stirfried veg.
Supper Chicken Shaslik with cauli rice.
Today usual brekkie.
Lunch will be another of the not so ginger muffins.
Supper will be Beef Stroganoff, hoping Fage yogurt will work to replace the soured cream. Might accompany some tenderstem broccoli.
@DJC3 your hols sound like a lot of fun, its good to have a laugh. I wish we had done that hol with our boys, they would have loved it. @JenniferM55 hope hubby is soon back home and recovers well. Having nursed a friend here for two weeks after hip replacement the daily exercises are vital. I used to count them out to encourage her. @RosemaryJackson hope you feel better soon. @Antje77 a mouse in the car eeeekkkk…..I’m bad enough if a wasp gets in.

At least mice don't sting!

My mother always used to encourage the child me by saying that, once you get stung by a wasp, you'll never be afraid again. One day, I was stung just below my knee. My leg became horribly swollen and I couldn't put weight on it for days! That certainly didn't cure me of my fears. When a lecturer, my main room for teaching at our college always had wasps flying in in the summer - we had to keep windows open because the room did not have air conditioning - and I was forced to remain calm while my students panicked and the class was disrupted yet again until I managed to marshall the intruder out of the window.

Breakfast: bacon and eggs with plenty of tea.

2nd meal will be rib-eye steak and onions and some more of the Brussels sprouts.
 
Wednesday 18 October - bed 7.2 FBG 6.3. I get the feeling the chances of a lie in are getting very remote on this holiday "break" from the school runs. Today, the eldest had toothache, and I transported him to our dentist. It was one of his baby teeth (he still has quite a few), but it still was not ready to come out. One filling later, and a visit to the shops to restock on Guinea Pig supplies, I eventually got home at 1pm.

B. TAG and a Benecol dairy free.

L. A bit of crustless quiche.

D. Last of the frankfurtersausages, fried egg, slice of GF Black pudding, and santini tomatoes. CC little chocolate pot with raspberries.

@DJC3 - Have a lovely holiday. The storm hasn't been too bad here. Remember we had flooding a few weeks ago. This time, it's just constant rain and strong winds. It's also quite chilly.

Thursday 19 October - bed 8.1 FBG 7.8. Aqua this morning again. Energetic Emma (as I call her) was taking the class. Believe me, that's an accurate name. I wish I had half her energy! My arms were still aching on Friday.

B. TAG and 2 slices of SRSLY toast with cheese triangles and ox tongue.

L. A bit of crustless quiche.

D. Roast gammon with cauliflower cheese, mixed green veg. CC little chocolate pot with raspberries.

I had to call the doctor today. I'd noticed that there was an interaction between the allopurinol they wanted me to take and 2 of my BP meds. I spotted it by accident, but it didn't say what the interaction was. It turned out the doctors hadn't spotted it either, and it took a bit of digging to track down the information. Upshot was there was a tendency to allergic reaction which they reckoned was too big a risk. Now, I'm back to adjustments to my diet (which is going to be fun!) merging low carb with low purine! I'll be rechecked in 6 months unless I have another gout flare first. He did tell me it was well spotted as the interactions hadn't come up on their checker.
 
I guess you could call the dish either Vegetarian Cottage Pie, or Vegetarian Shepherd's Pie, just to ring the changes. :hungry:
It's correct that the vegetarian version is called Shepherdess's Pie. There's a vegan version, too. Goodness knows what that is called! Incidentally, the French call Shepherd's Pie, Hachis Parmentier, although I believe that's a catch-all name.

@Antje77 - I'm a big fan of the Hairy Bikers. Their recipes usually require a bit of tweaking, but they tend to be very tasty.

You are always so busy, supporting your family, @maglil55. I do admire your energy (even if it's less than Energetic Emma's) and your perseverance. Your family are very lucky.

Shame about the adverse interaction between medications. That'll make things more difficult for you. Well done, though, spotting it when your doctor's software didn't.
 
Friday 20 October - bed 7.9 FBG 7.8. Today, I was up early to give DIL a lift to work in atrocious weather, and the eldest grandson was coming back with me to avoid bickering with little brother! At least he's not a problem.

B. TAG and 2 slices of SRSLY toast with ham and cream cheese. Benecol dairy free.

L. Nothing

D. Another couple of slices of yesterday's gammon with a Diet Doctor recipe of aubergine hash brown. It's very simple. 1/2 an aubergine and 2 ounces of halloumi - both diced. Chopped onion. Fry in a little olive oil until browned. Add chopped parsley and a little Worcestershire sauceto finish. Top with a fried egg.

@JenniferM55- I have a friend who has had both knees replaced. He says the difference, after recovery, is amazing. As others have indicated, the post-op exercise is very important.

Well I didn't manage to fast the rest of yesterday after all.
These nuts were way too moreish . Pics are of empty packet.

@Antje77 they are from Marks and Spencer (m&s). Might be part of their Christmas specials, might be regular stock, don't know . Will try to recreate them lower carb by using coconut oil and leaving out the sweetener. Loved the depth and tang of the seasoning.

Today, skipped breakfast. Walk with a friend
L: 4 mini sausages, last of the Saint Agur cheese and a bit of brie. Yoghurt and double cream for pud.

Off out tonight to Turkish restaurant. Will stick to grilled meat and salad

Saturday 21 October - bed 7.1 FBG 7.3. Finally! I had a lie in of sorts. I still had to go shopping as the wind/rain had prevented any meaningful shop.

B. TAG and 2 slices of SRSLY toast with spread. 2 scrambled eggs, another thin slice of that roast gammon. Benecol dairy free.

L. Nothing

D. Cold cuts. Roast deli pork, gammon, ox tongue, pork and egg, coleslaw and vegetable salad. CC Little chocolate pot with raspberries.

I'd taken son shopping yesterday evening, so just me today.

Thanks, @Annb. They do live very close to me, so I do what I can. I'm very cautious when it comes to any medication as I am prone to allergic reactions. I must be one of the few who actually reads the leaflets, but, in my case, I go online to check as well. What caught my eye was ACE inhibitor. I knew the lisinopril I take is an ACE inhibitor. A bit more digging then revealed the second interaction. I'm not surprised the doctors didn't find it at first. It was well hidden, which is a cause for concern when it is an allergic interaction. I'm currently taking 5 days of colchicine to try to get rid of the last of the "gout" in my toe. It's not bothering me, but it is still there.
 
Day 3 of hols. B-2boiled eggs and SRSLY buttered toast
Afternoon at a falconry course which was really enjoyable.
Looks like this might be the only dry day of the week so decided on bbq. H/m bacon cheeseburger in SRSLy roll. (I’d taken a bite before I remembered to photograph) Couple of glasses wine.

8am - An early breakfast (for me) of 3 back bacon rashers, 2 creamy scrambled eggs, and sauteed mushrooms.
3pm - Coffee and cream
5pm - Early dinner of rib-eye steak, mushrooms (again), sprouts, and swede air fried chips. Made the chips from half a pre-cooked microwave swede. Glass of red wine, strawberries and cream.

There's a plan that's rattling round my head for a Monday 24hr fast. It's a challenge.

Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a vine tomato, sprinkled with chopped, flat-leaf parsley and seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Baked whole sea bass, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed French beans smothered with butter.
A medley of baked broccoli, red onions, leeks and sweet red peppers with garlic chestnut mushrooms.
Water to drink.
Raspberries and Greek full-fat yoghurt.
Four squares, Montezuma's absolute black 100% chocolate.

D: Salad made with anchovy fillets, eggs, avocado, Padrón chillies, Welsh onions, lemon verbena and a touch of lemon juice, with a dollop of aioli for dipping, topped with walnut halves.
Water to swallow tablets.
