What have you eaten today? (Low carb forum)

Oh that’s good, off to order some!
If you like making your own the Endurance crackers on ohsheglows.com are very simple and tasty. Edited to add at the halfway point instead of trying to flip the cracker I simply turn over the parchment paper so that it’s on the top of the crackers and peel it off then return to the oven without parchment. Much easier.
 
Evening all

Today:

B: Two poached eggs with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Salmon fillets baked with broccoli, chestnut mushrooms, double cream and lemon verbena.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Strawberries and full-fat Greek yoghurt

D Seafood salad using brown shrimps, mussels, lettuce, baby plum tomatoes, celery, Romano peppers, Kalamata olives and salad onions, dressed with an olive oil, balsamic, garlic and mint vinaigrette, topped with toasted pistachios.
Water to swallow tablets.
 
I wish - they are Olinas simply seed crackers 1.2g of carbs for a portion of 4 crackers. Love them but not cheap especially on amazon
So I definitely limit them. I've found them cheaper from sow and arrow and from Hey lo and previously from Srslyl as part of a big order.
Edit to add it would be much better to make them and I used to - think I stopped because of all expensive ingredients and some seeds have short dates but would be good to go back to some more baking.
I make a "near enough" copy, updated to use a full packet of mixed seeds from lidl. Recipe is in my cmt.
Occasionally I find the Olinas ones on a local market stall, among all the cheap sweets and cakes!
 
Regarding the Olina's Seed Crackers, they sell them in Waitrose, £2 a pack. Waaayyy cheaper than Amazon, that price made my eyes pop!

My meal was a sirloin with mushrooms & some halloumi fries with a few bluesberries & a dollop of cream to follow.

Edit I've got a Waitrose online click and collect order this week and just found them available at my nearest store. Thank you so much for the tip off.

Not feeling like even simple cooking today after a fall and bruises, but my home help and I cooked cake yesterday so that was breakfast.

It was a new recipe based on one from an organic box site. Butternut squash, apple, walnuts, orange. I substituted xylitol for the sugar, but less than the recipe listed.
I guessed at how much ground almonds plus coconut flour I should use instead of wheat flour then added an extra egg as these flours always need more egg in cakes.
It is still a little sweet for me, as my taste for sugar has declined but good.

I usually make a lower-carb cake but this one is my fruit and veg for the day!
 
My plans of skipping dinner last night went OK, but then I succumbed to cheese at 21:30. Maybe too much as woke fine this morning for first hour then major migraine hit. Full aura including loss of arms and sight.
Have now been lying in darkness and mostly sleeping for 9 hours.
Hubby did bring me scrambled eggs at one point but massively over salted.
Just about coping now, but no idea what to eat, or what to cook for boys
 
The 2 nearest us are only small, maybe I need to travel further , fingers crossed

But... noticed they had a different Olina's cracker, Bakehouse Pumpkin Seed Flatbreads. They are long ones, 5 in a box & are 0.4g carbs per serving, £3.29.

Anyway, rather knacked after town with a heavy arm after having Cov jab, so an easy dinner of some ham & cheese with either some Olina's or a SRSLY roll, haven't decided on that yet.

ETA: Sorry you've been knocked down with migraine, MrsA2, hope you recover quickly. Have something you fancy that is easy & let the boys fend for themselves would be my plan. ;)

Breakfast a small portion of kefir then two boiled eggs and one keto buttered roll
Lunch like yesterday three LC seeded crackers, small portion of cheese and kimchi and sauerkraut followed by Apple peel and two squares of 90% chocolate
Dinner hm chilli with olives rather than kidney beans served with slice of LC garlic bread and glass of red wine pudding of LC brownie and decaffeinated coffee.

Managed to get Waitroses 2 quid olinas thank you. Just looked at Holland and Barrett online and they seem to be 2.99 so in between Waitrose and Amazon price wise!
Hope arm heaviness goes soon I'm due my vax in a week.

L: Mushroom and spinach frittata made with eggs, Cheddar cheese, onion, double cream and thyme.
Vegetable tray bake using broccoli, cauliflower, sweet red peppers and leeks.
Steamed French beans smothered with butter.
Skipped pudding.
Water to drink.

D: Seafood salad made with brown shrimps, kalamari, lettuce, baby plum toms, celery, Halkidiki olives and salad onions dressed with home-made mayonnaise for dipping, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a Aldi protein bar.
Dinner: cheese and mushroom omelette, didn’t burn it this week! :joyful:
