What have you eaten today? (Low carb forum)

Good to catch up on this thread and feel inspired again. Been a difficult month with one thing and another and I have fallen off the wagon slightly this past week or so. However I'm motivated to get going again! Interested to see what everyone is chowing down on today. I'm going to try and fast for as long as I can today so not sure if I'll want something cold (yoghurt and berries) or something hot (cheese and mushroom omelette) when I first eat. Definitely roasting a chicken for dinner later with cauliflower cheese and plenty of greens.

Great to see you're back on the wagon after a difficult month. Enjoy your meals after your fast. I'm planning on one main meal again today after a more generous food day yesterday.

@MrsA2 couldn’t agree more - it is sad and frustrating to see people so resistant to the idea of low carb. Even my GP said she couldn’t give up bread!
It dawned on me tonight that the last day or two vertigo symptoms weren’t vertigo at all, but side effects of the vertigo meds which can cause dizziness! I didn’t take any this evening and already feeling a bit more like me, with any luck I’ll be able to go outside tomorrow, don’t care if it rains.

B- scrambled eggs
L- h/m fishfingers ( cod fillet cut into oblongs and coated with pork panko) salad of rocket with some of my sprouting seeds. I’m growing radish, broccoli and cabbage cress for their powerhouse nutrient value. H/m mayo.
D- bacon cheeseburger with more salad. H/m yoghurt with raspberries and seeds and some Montezuma’s Absolute black a bit later with a cup of tea. View attachment 66461
Crossing fingers 're your dizziness staying away and you get some time out of the house. Im interested in your seed growing to produce mixed sproutings. Do you use seed trays or a special unit ? I'm hoping to do more gardening this year but this would be good to start meanwhile. I know you can get special units for sprouting but wondered about trying some trays would wet kitchen towel work as a mat do you think?

Morning all. And I can say morning because it is 2.35am. I can't sleep. My eyes are really playing up. I was at the hospital for nearly 4 hours today and I have been diagnosed with cellulitis in the skin round my eyes. I thought you could only get it in your legs and arms. Atm they are gradually swellng up and by morning my right eye will be shut. It's quite painful, hot, itchy and sore. Back to the food. Monday lunch and it was 2 sausages with cabbage, carrot and 1 scoop potato after a small dish of chicken soup. I took my own dessert which is a lemon and lime mousse. Yesterday, because I was at the hospital so long, low carb was impossible. So today it's steak with a poached egg, I've gone off fried eggs. I know my fbg will be high so maybe I won't bother. Have a wicked Wednesday ;)
I hope @RosemaryJackson this has died down by the time I read all the posts. I have had situations like this due to allergies, and it is deeply unpleasant when it affects the eyes. Fortunately, allergies can be treated quickly. Cellulitis in the eye area is certainly a new one on me too. I hope it has gone now.

Back to Monday usual brekkie slice LC toast good butter and copious tea.
Lunch two slices corned beef, tomato. Lettuce, pickled onions.
Supper was chilli & tomato mini meatballs with 2 0z spaghetti, sometimes not a problem and I’ e never found a lc replacement I like other than just green veg, dont like courgetti.
Yesterday same brekkie.
Lunch was pack of Serrano & Manchego rollitos, tea.
Supper was lightly spiced and baked chicken breast with cauli cheese.
Out to lunch today with friends at a nearby pub which fills me with dread over the food choices. Bad FBG today so only choice might be bowl of soup minus the bread and even that might have thickener.
@RosemaryJackson so very sorry about the eye problem, sounds really painful and horrible, you could have done without the 4 hours in A&E. big hugs for getting over it soon. @DJC3 sorry the vertigo is back, good you have medication that helps but must be so difficult to leave the house and avoid falls. Get better soon. @maglil55 we’ve just booked weekend in Bath for late April and will be trying Raphael and Antica you enjoyed on your trip. Also trying the Portofino seafood and wine bar, will report back!
I love both these restaurants. Make sure you check the specials board in Antica. That was how I got that fabulous mixed seafood main course. They also do the Affogato with an espresso, which (thankfully) doesn't affect me with only 1 scoop! I'm sure I've seen Portofino. It must be within walking distance of the Doubletree.
 
Saturday 17 February bed 7.9 FBG 7. Schools were not due to return until Tuesday 20/2, so I was still relaxed. A whole weekend to myself, as no swimming lessons either.

L. Nothing

D. Usual cold cuts. Deli roast pork, ox tongue, pork and egg, ham, German mini sausage, veggie salad and coleslaw. Scoop of Halo Top with raspberries.

Sunday 18 February bed 6.7 FBG 7.4

B. TAG and 2 slices of SRSLY toast with deli roast pork and coleslaw. Benecol dairy free.

L. Nothing - took the opportunity to change beds, ironing and general cleaning.

D. My trusty Rick Stein stroganoff recipe. Fillet was on offer at my butcher, so I can't resist an offer. Hubby had normal chips. Mine were celeriac (which I was still waiting finishing!) Usual campari & soda.

Monday 19 February - bed 7.9 FBG 7.4. Last day of school holidays. A lovely Aqua session followed by a relax in the spa (since I had time), then a get organised for tomorrow.

B. TAG and, on return from Aqua, 2 slices of SRSLY toast with egg mayo. Benecol dairy free.

L. Late on, a bit crustless quiche.

D. Nice and easy, as I had stroganoff left from yesterday and the remains of the celeriac.

Tuesday 20 February - bed 8 FBG 7.9 Back to school. Eldest had a double free on a Tuesday, so he makes his way to ours, where I take him through maths, physics or English depending on what homework is needed.

B. TAG and 2 slices of SRSLY toast with egg mayo. Benecol dairy free.

L. Nothing

D. Got this at my butcher's. They call it a smoosh burger. A GF burger, sandwiched between 2 portobello mushrooms. Inside, a cheese slice, some sliced red onion. I had it with avocado, tomato, and coleslaw. It is really tasty. I'll certainly buy this again. CC little chocolate pot.

Sorry to read vertigo has returned @DJC3. Touch wood, it's been a while since my last attack. Horrible thing. I'm with you on the road works. I'm already making massive detours to get to the gym, as the main road from our town has had pretty major roadworks for weeks now. The temporary lights, continually stick, and the workmen just ignore it! The collapsed culvert is a much bigger issue. That is an incredibly busy route into the south of Edinburgh. There had been men working on the numerous potholes at that part of the road, they finish then the culvert underneath collapsed! It's a very large crater. Now they've said it will be May before it will be fixed.

Gave a like for the food but also wanted to send a hug for all the roadworks problems.

Just making shortbread - it's DIL's turn to take "goodies" for the staffroom tomorrow and they have requested my shortbread. That's good, I was feeling like doing some baking, as opposed to the cooking I've been doing recently, but had nobody to bake for, so I'm happy to comply.

Meals look amazing. Road works big issue round here too we can't drive over the river bridge in one direction for next 18 months so it's a long way round! So I empathise with road works frustration.
 
Busy day today and tomorrow so did a one meal day and plan same tomorrow I do think it's good to switch things around a bit at times and had a slightly higher than usual fbg this morning so will probably help. I've got my annual diabetic check in a week so I'm a bit more aware of my bgs than usual! I need to be busy though these days to do one meal.
Today black coffee except small hm kefir with supplements after waking.
One meal - cauliflower mash reheated in oven with some grated cheese sprinkled on top and slow cooked beef - enough leftovers for when get back tomorrow. Pudding of a small slice of my hm LC lemon cheesecake with spoon of clotted cream. I've kept out a piece for tomorrow but frozen rest in portions so a treat over next few weeks.

Matcha green tea, black coffee, sparkling water/ordinary water through the day (usually forget to mention this!)

Home made low carb bread (ground flax and pumpkin, hydrated chia seeds, spelt, yeast and water... no sugar at all)
Glass kefir

For tea just now
Harissa (do you get the idea I like harissa seasoning?!) fried pork mince - coconut oil to fry
long sliced courgettes also fried in coconut oil
Mozzarella and cheddar

Layered in a pyrex dish, browned the top cheese in air fryer.

It was lovely, or maybe I'm just really hungry!

I picked some purple sprouting broccoli in my garden today, also harvested some small green leaves from the same plants, and had those with tea. Will have the broccoli spears for breakfast I think.

Wow well done on the harvesting I ought to plant some early harvesting veggies next season. Even my home grown rhubarb has a while to go yet. I'm determined this year to do more edible stuff in garden. I love harvesting from my garden, obviously it's cheaper and tastes better, but also gratifying feels like you've created something. I particularly like my tomatoes and raspberries.

1 portion jelly with extra blackberries and raspberries still frozen

Mid afternoon hot chocolate with Baileys.

D: out at neighbours. Big cheese feast. 5 good cheeses, almonds, pistachios, walnuts, carrot and celery sticks, hummus, Kimchi, cherry tomatoes, crackers and crispbread for the carb eaters. I took seed crackers.
A lot of red wine was drunk
I provided a dessert of raspberry sugar free jelly smartened up with blackberries and raspberries marinated in 1 tablespoon Cointreau , topped with more jelly mixed with greek yoghurt. Did it layers so looked impressive and tasted really fresh after all that cheese.

We split the cost of the cheese delivery and so have a good few bits in the fridge . Should last 2-3 days. Not cheap though, but was a lovely special occasion treat.

2 hours gardening. It's so good to be outside, and no rain!
Mid afternoon, 2 sqs hm lc rhubarb cake and several small samples of the cheeses (was giving soemt to visiting son to taste and ate rather too much)

D: will be 1 drumstick, some hm lc coleslaw and maybe a bit more cheese!

The broccoli is one of the great survivors of my failed attempt to grow a load of vegetables last year - it was very difficult because I was still deeply depressed and struggling with stress and work on selling family property etc. A lot of things I planted never got their own pots, and some that did were completely neglected! However I do know even the keenest gardeners have similar fails at times, so let's both get growing this year and go with the flow! I love my runner beans and courgettes, tomatoes less so but I grew a lovely one a while back, an heirloom variety of yellow plum called (unfortunately!) Cream Sausage!! Despite the scary name it's delicious.
