What have you eaten today? (Low carb forum)

Saturday 16 March bed 7.4 FBG 6.9. A chaotic weekend trying to do everything I can't get done during the week due to home schooling. Today was pretty much a write off what with shopping, ferrying Hubby to football and back, and dozing off on an armchair!

B. TAG and 2 slices of SRSLY toast with pate.

L. A bit of crustless quiche

D. Cold cuts. Ox tongue, deli roast pork, corned beef, pork and apple, mini German sausage, coleslaw, veggie salad. Halo Top and raspberries.

Sunday 17 March - bed 5.9 FBG 6.8

No swimming lesson today. Grandson is performing in something with the drama groups. I can't go as the local theatre is using external venues due to their premises being unsafe because of the wrong concrete problem here, that is affecting schools, hospitals etc. I have no idea whether the venue is accessible enough for me. Ended up doing 2.5 hrs ironing! Meeting them after for a meal out.

B. TAG and 2 slices of SRSLY toast with pate. Benecol dairy free.

L. Nothing

D. Out at the seafood restaurant. GF calamari with alioli to start. Grilled halibut with a sauce of tomato, garlic, onion, capers, and olives. Broccoli with garlic and parmesan. Green beans. Affogato - lactose free ice cream with a wonderful espresso on top. No alcohol - I was driving. I wish I'd taken a photo. Halibut was really good. This was a belated mother's day meal.

@shelley262 what a pretty plate of food. It's lovely to see all the colourful food appearing again.

Washing powder? I use different powder for bedding & Hubby's clothes. Like many of you, I double rinse.
 
Monday 18 March - so starts another week. Bed 6.7 FBG 6.3. Yesterday's outing was obviously good for the BGs as well. School run for younger grandson, then off to Aqua. Picked up elder grandson afterwards as we had a mountain of work to get through on Google Classroom. Into school after lunch (persuading him back in). I had to leave today as I had to collect our meds. He agreed that the sky didn't fall in!

B. TAG and a slice of SRSLY bread with egg and salad cream. Benecol dairy free.

L. Nothing

D. A mish mash of leftover cold cut stuff. Ox tongue, pork and apple, German sausage, chicken drumstick, coleslaw, veggie salad. Halo Top and raspberries.

It was a quick dinner as youngest had swimming training and it was diving practice tonight.

@PenguinMum- Luton Hotel- Yikes. I only stayed at Luton Airport once in my working days. Thankfully, it was OK.
 
Neil has allergies to dust and smoke as well. Odd one is peat dust which blows around quite a lot when drying the cut peats, so he has never been able to go with us to bring the peats home although he can go to do the cutting. We don't do it any more though, which is a relief to him.

We are starting to think that Em might be reacting to the laundry powder that her mum uses - she pretty well always sneezes a lot and last week she had that rash and felt quite ill. It doesn't seem to be related to food in her case.

Tree pollen is another common allergen; birch and willow producing prodigious amounts of pollen from March to the middle of May in the UK. The grass pollen season kicks in during May and lasts until the end of July.
 
I had a blip last week. I passed the local chip shop, and decided to try my old favourite of chicken curry & chips. I only had a medium, rather than a large one. It wasn't too bad, glucose-wise: I went from 4.5 to 6.3 after two hours (thanks to the memory on my Gluco Navii). But I just couldn't believe how much the price had gone up, nor how different it tasted (not nearly as good).

It can be difficult navigating the supermarkets. It's almost impossible to avoid ultra processed foods, which I don't have any more. I really must get more creative.
Sounds like a plan @IanBish. Think of the money you've saved on take-away meals (carry-outs in Scotland, I believe) which, as you say, never taste quite as good as anticipated.
 
Been feeling more and more unwell for the last few days - started a few days back but it eased off and I forgot about it but a serious headache has been building for the last 4 days and today it turned into a migraine, affecting my eyes which it never used to. Haven't had a migraine in years until this week. Thought I was going down with something and I just had a glass of water and settled down with a blanket in the kitchen chair. Eventually it eased off and I am just left with a headache. I only realised this afternoon that this has all the hallmarks of a reaction to something. Question is - to what? As with Rosemary, it is a matter of working it out. I think I have an inkling though - saurkraut (in my 2 lots of bigos). Such a pity if that was the cause.

It could well be the fermentation process that is the problem. I tried komboucha a week or so back and it caused a headache which I recognised as a reaction right away. As usual, it is a puzzle to be solved - makes a change from trying to solve problems in family history.

No trees are even beginning to bud here, so it will only be an issue from mid or late April. I did notice that we, at last, have daffodils out.

A carry out in Scotland is alcoholic. Food is a take away.
 
Yes I tend to leave sauce, I’ve got out of the habit of mopping it all up. In fact here’s my plate after eating my Spanish chicken!

I don't like too much sauce on most things. I'm the same with gravy on a Sunday lunch; some people just drown their food in gravy! In the before times when I used to eat special fried rice, people used to have a curry sauce with it. Sacrilege!

Indeed. I can spend that money on grass-fed steak and full-fat Greek yoghurt instead, which I did today. I still haven't managed to find wild-caught salmon yet, but I'm still looking.

Today:

B: Two poached eggs with a knob of butter and avocado seasoned with a good grinding of black pepper plus a wedge of goat's milk Gouda.
Water to swallow tablet.
Espresso.

L: Wild Alaskan salmon fillets baked with broccoli, chestnut mushrooms, double cream and lemon verbena.
Steamed asparagus spears and French beans smothered with butter
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, baby plum tomatoes, celery, Romano peppers, cucumber, Halkidiki olives, flat-leaf parsley and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with roasted macadamia nuts.
Water to wash down tablets.
 
10:00 2 scrambled eggs
Hours walking
12:00 cold meat with some of my hm lc cauliflower cheese bake thingy reheated, with green beans in olive oil. 2 puds! First was new ice cream from the expensive shop - gooseberry and elderflower 29g carbs per 100ml. Only gooseberries, cream sugar and elderflower syrup. And very nice it was. 2nd was the last of the hm lc cheesecake

Late afternoon a biscuit binge. Nuff said.

D: steak with broccoli and mayo.
A little more of the gooseberry ice cream. Hubby and I have to get at least 6 portions out of the 400ml pot.
That ice cream sounds delicious. We have gooseberries grow in our garden and elderberries on open land next to us, would be a good ice cream to try making. Now you’ve got me planning

It's not low carb, but at least it's real ingredients. Just try to stick to very small portion.
Just noticed they've labelled it fruit cream ice rather than ice cream. I assume Theres an official definition of ice cream somewhere in the UK regulations

We grow gooseberries too but only one Bush so never enough for ice cream. I used to make elderflower syrup from foraged elderflower but the sugar content is huge. I'm thinking infusioning the somehow, maybe into the cream?...

I just looked online and infusing the elderflower flavour into cream should work. It suggests heating very gently and then leave in the fridge for 12 to 24 hours. I usually make ice cream with a monk fruit & erythritol mix replacement for sugar. It’s not exactly the same, but definitely better than no ice cream, and no additives either.
 
Morning all. Mondays food is best forgotten but lessons taken from it! After yesterdays Osteopathy session, didn't feel much like eating or cooking so bought a pack of sandwiches. I Know! Naughty but handy. Eyes are much, much better so it looks like it was the tissues from Lidl that I'm allergic to. In the last 3 and a half weeks, I've been to the doctor twice and twice to Johnsons hospital and once to Lincoln hospital. Have one more visit to Lincoln then this episode is done. Thanks for all the good wishes, friends. :happy:
 
Bit of yo-yoing yesterday evening. BG was low all day but rose to 13.9 by bedtime - just before midnight. That was because it had dropped so low, I had to have ginger nut biscuits (the only ones in the house other than KitKats) to stop the hypo. It rose to 10.2 in 2 hours and kept on going but I just ignored it and went to bed at a quarter to midnight. By this morning at 3:20 it was 8.7. Came down to 7.4 and then sgarted to rise again after cold chicken breakfast. Didn't need to dose before food yesterday so thought I'd not bother this morning either - it was just chicken and BG at that point was 7.6. Of course, I should have dosed for it. Immediately dropped to 7.4 but then rose again to 9.2 so I took a small dose of insulin at that point. Now 8.2.

No more food until much later. That will be the salmon and leeks hat I intended to have last night but was in no state to stand and cook it.

Well done for sorting that out Rosemary. It's amazing how some seemingly similar products to our usual ones can do so much damage.
 
My Kefir production is definitely outpacing our consumption. Idea is to produce one lot of kefir a day and drink the daily output but we only like a small portion and despite discarding some of our overproductive organic kefir grains we can't keep up - shame non of you live near me for a supply of organic kefir. This is my fridge today -my supplies backing up.

Breakfast kefir then two boiled eggs and LC roll
Lunch cooked rhubarb with hm yoghurt and LC lemon drizzle
Dinner hm Bolognese and glass of red wine followed by LC chocolate brownie and decaffeinated coffee.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner out at Nando’s: 4 boneless chicken thighs with coleslaw.
