What have you eaten today? (Low carb forum)

B: Two poached eggs topped with a pat of butter, avocado and four tiger prawns seasoned with black pepper.
Water to swallow tablets.
Espresso.

L: Mushroom and spinach frittata made with eggs, extra mature Cheddar, leeks, double cream and thyme.
Salad using watercress, chicory, celery, mint, Kalamata olives and salad onions, dressed with an olive oil, garlic and balsamic vinaigrette, topped with roasted macadamia nuts.
Skipped pudding.
Water to drink.

D: Seafood salad made with king prawns, brown shrimps, lettuce, baby plum toms, celery, Halkidiki olives and salad onions dressed with home-made mayonnaise, topped with toasted sunflower and pumpkin seeds.
Water to wash down tablets.
 
Breakfast kefir then fried some tomatoes in olive oil served on low carb toast and one fried egg
Lunch some goats cheese mixed with sauerkraut followed by peel of local apple
Dinner wild salmon with cauliflower cheese ( it's a big cauliflower - veggies for at least five meals!) Cauliflower cheese is delicious I think but very beige and not very photogenic but excellent low carb veggie! Pudding DGF low carb chrimbo crumble - added a few drops of brandy before warming and serving with spoon of double cream.

Agree about cauli cheese not being photogenic - such a shame as it’s so good!
I’m not sure whether to thank you or not for your tip of adding a tot of brandy to the Crimbo Crumble. I might remember that for Christmas Day, I daren’t do it now, I can imagine how deliciously moreish it would be.

Out all day at graduation ceremony for a family member so no lunch. Did have a complementary glass of Prosecco afterwards though.
Dinner out at a tapas restaurant. Harissa chicken on bed of garlic aubergine puree, king prawns, meatballs in a fiery tomato sauce and fried aubergines with something hot sprinkled on them. Photo is the harissa chicken, all the dishes were fab though and BG only rose 1 mmol.

L: Packed lunch made with leftover spinach and mushroom frittata.
Lettuce, Romano peppers, celery sticks and cherry toms with a dollop of home-made mayonnaise for dipping.
Almonds and hazelnuts.
Water to drink.

Mid-afternoon: black filter coffee.

D: Smoked salmon and cream cheese salad made with watercress, baby plum tomatoes, mint, Kalamata olives and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pine nuts.
Water to wash down tablets.

Finally found the time to make a peanut sauce again, should do it more often!
Green beans, onion, bell pepper, and garlic, spiced with a spoon of black beans in chilli oil.
Spicy peanut sauce.
Oven baked pork belly pieces rubbed in black bean and garlic paste.
Fried egg.

I expect the same meal tomorrow, maybe the day after as well, and then I'll likely turn the leftovers into peanut soup.

L: Aperitif: dry white wine.
Tuna steaks rolled in finely chopped celery and sage, baked with red bell peppers and aubergines, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed runner beans topped with a knob of butter.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% cocoa chocolate.
