What have you eaten today? (Low carb forum)

For dinner I had a home-made beef Madras
Looks amazing!

I had my prepared evening meal on the bridge, all reheated in the microwave: runner beans with blue cheese, a tuna melt muffin, and a vegetable and egg thing.
Earlier in the day I had a seeded cracker with ham and later on a cold tuna melt muffin. Bedtime snack will be chicory with hummus and maybe some nuts.

Thank you. Basically, it's just a diced onion, ginger, garlic and chopped chillis fried and then mixed with curry leaves, cumin, coriander, turmeric, chilli powder and garam masala, and then mixed with chopped tomatoes. In this case I simmered the stewing steak for a couple of hours before adding to the sauce, but chicken doesn't take nearly as long. I left it in the fridge overnight to allow the flavours to mingle.

Breakfast kefir then one poached egg and slice of bacon on one slice of low carb toast
Lunch low carb crackers with kimchi, celery and cheeses followed by one strawberry cut up and spoon of yoghurt .

Dinner wild salmon cooked in parcel in oven with lemon, butter and sumac served with local asparagus - my favourite veggie when in season

Followed by piece of hm LC lemon cake with decaffeinated coffee.

Breakfast sheep’s milk yoghurt with nuts then a ham and cheese omelette.
Lunch - various salads
Diner - baked fish fillet topped with a prawn, Greek salad and a cold aubergine dish which was delicious. 1/2 glass of red with some cheese afterwards.
I’m finding it quite hard not to overeat as there are so many delicious and low carb dishes to choose from at every meal. (Happily I’m not even slightly tempted by the desserts)

Daughter goes back to uni tomorrow so very special day foodwise.

"Breakfast" well technically it was a pub lunch - cauliflower wings, was going to have carvery but the meat looked really dry so went for fish and not chips (substituted with salad), peas and one bite of bread and butter before donating the rest to hubby. I feel really guilty passing my unwanted carbs to family members but I hate waste and they're free to say no (they don't, carb monsters that they are, sigh).

Snack - mini mozzarella balls and beef carpaccio with parmesan

Dinner - bacon, fried egg, asparagus and spinach. First asparagus of the year hurrah, wish the season was longer but then it wouldn't be so special. Carb monsters each polished off a whole pot of caramilk dessert (105g sugar, supposed to be 6 servings OMG) while I enjoyed a single one of my birthday pistachio lindor.

Thought I wasn't going to eat any more but started feeling hungry and had forgotten that I hadn't finished yesterday's egg mayo so going to have that as a bedtime snack.

Yes, completely agree with you here. I can’t abide food waste but feel I shouldn’t be encouraging family to overeat carbs. They rarely refuse the offer, maybe an instinctive desire to avoid waste too, but I do feel conflicted by it.

Morning all. I have 2 chicken legs for today plus 2 boiled eggs for later. I had a small piece of cheese for bf as I'm supposed to take the sr metformin with food in the mornings. I don't normally eat bf but now I have to. Tomorrow's food is a piece of steak which I'm going to have with a fried egg. Years ago my husband used to deliver groceries to the East Kirkby base when the Americans were encamped there. They always gave him a steak with a fried egg and he used to come home and rave about it. I never wanted to try it but now I'm going to! Have a lovely weekend everyone and hopefully enjoy the sun.

I think we need to know the name of this hotel! Please :)

B- sheep’s milk yoghurt with nuts and pumpkin seeds followed by a ham and cheese omelette.
L- trip out to a nature reserve where you could dive off rocks into crystal clear water. Family all bought gyros from a food van, I had a Cyprus Special which was smoked bacon, halloumi, tomatoes and cucumber in a pitta bread. ( didn’t eat the bread obvs)
Dinner back at the hotel - curry night so chicken tikka, lamb kofta, grilled aubergine and cauliflower in a curry cream sauce but I only ate half as if occurred to me it might be thickened with a flour roux. Glass of white wine and soda.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: same as yesterday, other I/2 of LC pizza with coleslaw.
