What have you eaten today? (Low carb forum)

2 boiled eggs for breakfast then off in a foraging course which was brilliant. She’d made us a picnic lunch, the wild garlic whipped feta was heavenly, and the frittata made with herbs and oxeye daisies looked wonderful - I had a tiny slice and discretely left potatoes.
Dinner was steak and salad.

Breakfast 2 boiled eggs then off to work.
Took a packed lunch of low carb roll filled with a slice of beef and cheddar. A Lille bit of Montezuma’s AB and 4 walnuts.
Forgot to get anything out of the freezer for dinner so popped into the Coop on my way home and made a meal from some yellow sticker bargains: chicken thighs ( airfried, rubbed with olive oil and spices) aubergine and courgettes, also airfried, and a salad of avocado and cherry toms drizzled with posh olive oil. H/m mayo. 2 glasses Malbec as it’s Friday.

Breakfast kefir then cooked some mushrooms in olive oil with a dash of Worcestershire sauce served with a poached egg on low carb toast.
Lunch cheese, celery and a few LC seeded crackers followed by a few strawberries with yoghurt
Dinner wild salmon with local asparagus - also added spoon of mayonnaise after photo

Followed by a LC hm lemon cake warmed and served with cream.
 
Breakfast kefir then fried a few tomatoes in olive oil and served with poached egg on a slice of low carb toast
Lunch my new LC rolls arrived so had one filled with a tin of mackerel fillets in olive oil, some horseradish and kimchi followed by a couple of strawberries with yoghurt
Had fun this afternoon using low carb panda flour to make some LC mini naans - used my new cast iron tortilla press and made 10 so extras for freezer as well as for tonight's curry

Dinner chicken curry with coriander and mint raita served with a lc mini naan. Lovely and soft and puffy.

Followed curry with a piece of my hm LC rhubarb and ginger cake.

Lunch cheese, celery and LC seeded crackers followed by two strawberries with yoghurt
Dinner don't have steak as often these days because of cost of the good quality grass fed stuff and especially fillet steak, our favourite, so this was a special treat.

Served with mushrooms, onion and a few small tomatoes and a glass of red wine. Followed by hm LC chocolate brownie.

Had an experiment making LC pitta breads using Panda flour

Worked well but unfortunately I had to deal with something else just as timer went off and although they came out of oven all puffy by time I could snap them they had flattened and also hard to split to make a pocket in the pitta. So ended up serving the tandoori chicken on top of the pitta. I'd marinated the chicken breast chunks in yoghurt and spices and cooked with some onion.1748280492295.jpg
Dinner had one LC pitta halved with some tandoori chicken served with raita, salads and hummus

Also had glass of white wine - as it's a bank holiday - followed by hm LC ginger and rhubarb cake.
Remaining pittas have been frozen to reheat at a later date.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: coffee shop cappuccino and another carb killa bar.
Dinner: creamy garlic prawns with sliced sautéed courgettes.

I'm trying to add more fiber to my diet. I fried Brussels sprouts today and they taste disgusting! How do you cook it? frying with spices is clearly not an option. I like the fried green peas and green beans, but the Brussels sprouts are disgusting. How else can I increase the amount of fiber?

I like them shaved very thinly and tossed with a Caesar dressing

Shred and fry with a bit of diced onion & diced bacon - I love Brussels - especially cold with a mayo dip
