I'm trying to add more fiber to my diet. I fried Brussels sprouts today and they taste disgusting! How do you cook it? frying with spices is clearly not an option. I like the fried green peas and green beans, but the Brussels sprouts are disgusting. How else can I increase the amount of fiber?

I agree with @lovinglife shredded and sauteed with bacon is lovely.
If you still don’t like them ( and not everyone does) don’t bother, just choose different green veg.

@shelley262 your Panda flour experiments look wonderful, especially the mini Nan breads. I keep meaning to get some to try.
Today I had scrambled eggs for breakfast.
A low carb roll filled with chicken and h/m mayo for lunch, followed by raspberries and cream.
Dinner was air fried duck breast with cauli cheese. More raspberries and cream to follow.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: liver in onion gravy with cauliflower, broccoli and carrots.

The new version of the flour seems much easier to work with. You can get small sample packs and free delivery which is a bonus. Remember too when looking at cost that 30g of panda flour is the same as 100g of ordinary flour so it goes a long way. I'm planning to try low carb pastry when I get the time.

Does it just absorb a lot of liquid then? I really should look at some of the videos and recipes they put up. It would be great to have a good pastry substitute. I like fat head dough but it’s a bit of a pain to make and work with.

I find seeds work for, either whole or milled. Chia or linseed(flax) for preference. No more than 3 tablespoons a day to start with, reducing to 1 tablespoon a day when "regularity" achieved ;)

Easiest is to add the nice thick yoghurt to let it thicken even more with a few berries or a square chopped chocolate added, or nuts.
Or sprinkle onto salad or veg to add crunch, or to lc bakes or 90 second bread.

Some people just add seeds to water then drink it but that's too much like wallpaper paste for me.

Or another way with Brussels is boil them until soft then puree in a blender with cream, butter and/or cheese. Add seasonings (nutmeg is surprisingly nice) Comes out lovely bright green colour and tastes amazing, nothing like Brussels

Yes it does use a lot of liquid I also find that it's really easy to make and work with. I mix the wet ingredients together - usually yoghurt ( I use 0% fage or similar), egg(not always used) and water ( plus sometimes melted butter) and then mix in the dry ingredients a few spoons at a time so it absorbs more easily. I'm doing a coffee and walnut cake tommorow again as it's a family favourite and runs out the first of my freezer cake stocks!

Lunch picnic as out all day - had a ham and cheese low carb roll and also last of my hm LC coffee and walnut cake
Dinner Sea bream and asparagus plus a glass of chilled dry white wine

Breakfast kefir then some tomatoes fried in olive oil with a poached egg on LC toast
Lunch cheese, celery and low carb seeded crackers
Made a hm LC coffee and walnut cake today which I cut into portions and froze most of it just left a few pieces in fridge for next few days. I'm taking part online this weekend in the Public Health Collaboration's (PHC) 2025 conference so will be busy.

Looks lovely. I used to make a high carb one a few years ago. Do you have a link to the recipe?
It uses Panda flour
It's an adaptation of their recipe I'll type it in if interested although they also do pre mixes of all their dry ingredients for cakes which is how I started out you can choose different samples and it's free postage:

It seems quite simple, using sweetener and almond flour. I might add some vanilla extract too.
