What have you eaten today? (Low carb forum)

B: Homemade courgette & walnut bread with Brussels pate
S: A handful of olives
L: Smoked salmon & avocado salad, strawberries & cream
D: Beef mince omelette with cauli & broccoli, blackberries & cream

May have a piece of cheese later.
 
Hello everybody. After being inspired by christinerm and this thread I have just made my first low carb chocolate 1 minute muffin. Wow it's delicious!!!!! Thank you everybody :)
 
B - spinach and cheese pancake with bacon and no sugar syrup
L - French onion soup
Snacks - some coconut bark and pork scratchings
D - beef peanut stir fry with courgette noodles and mushrooms, sauce wiped up with half a lidl roll
 
B: cheese omelette
L: chocolate and peppermint chia pud (tasted like an Aero!), strawberries, fennel tea
D: courgette and manchego frittata with caramelised red onions
 
Amendment to my post earlier...
I'm not having buttered prawns and veg. Too late & too tired. I've nicked some more of my son's spicy breaded chicken (it seems I can cope with the carbs) and I'll have some more babybels for the fat.

Not the best meal, but I'm too tired to be bothered.
 
Breks: 4 chipolatas (Tesco finest) and 2 fried eggs
Lunchie: Tuna and Helmans with mixed salad
DinDins: Avocado, bacon, chicken & goats cheese salad drenched in the best Olive oil ever and strawberry sherry vinegar

S: Single espresso with a bit of cream and a little piece of 72% choc
L: Lime and coriander chicken, broccoli, a few sweet potato fries, yogurt and berries. A glass of Shiraz.
S: Pecans
D: Pan fried salmon fillet, avocado, sauerkraut.
S: Goat cheese, sundried tomatoes, black olives.

B. 2 slices chia seed bread with butter

L. Bacon, egg, a sausage, half tomato and mushrooms.

S. Chocolate 1 minute muffin...... Delicious!

D. Chicken with cheese and leek with roast onions, peppers, courgettes and mushrooms cooked in olive oil :)
 
B: Chia seeds et al, straws, blues and walnuts
11: black coffee, cheese, almonds and walnuts
L: gherkins, feta, black forest ham, fried aubergines, celery.... difficult to know what to eat...
D: Zizzi, antipasta and chicken salad, water
Soright.

That is one decadent menu, I like :)
 
B - scrambled egg with cheese, mushrooms and a slice of livlife toast buttered. Then 35g raspberries and a coffee with milk.

L - bit of chicken breast, some pastrami, babybel, 5 cherry toms, cucumber, 1 ryvita crackerbred with soft cheese. 65g strawberries

S - chilli mixed seeds

D - salmon, asparagus, baby sweetcorn, 1 small new potato, butter and then 70g strawberries, dollop of extra thick cream and a rich tea finger for pud. Glass of white wine

49g carbs today

@mo53 what recipe did you use? I fancy trying a chocolate mug cake!
 
Hello @PerfectStorm . I'm sorry I seem to be having problems copying and pasting recipe. It was the low carb one minute chocolate mini cake from food.com. There is a search on the website or if you google it will come up. I'm sorry I could not get it to copy. Hope this helps:)

INGREDIENTSflax seed meal
  • 1teaspoon oil



[paste:font size="4"]DIRECTIONS
  1. Mix all ingredients in a coffee mug.
  2. Micorowave for one minute on high.
  3. If using frozen berries, microwave for 1:30 on high.
  4. Smooth on some butter and enjoy!
  5. It will be moist at first, but as the muffin cools it goes away.
 
I did the chocolate one because it uses cocoa and therefore you don't need the flax meal. I don't like flax as it overpowers everything with its smell and taste.
 
INGREDIENTSegg, beaten well
  • 2tablespoons cocoa
  • 5drops liquid Splenda (3 small packages of splenda)


DIRECTIONS
  1. In a small bowl, beat egg with fork and add in the rest of the ingredients until.
  2. a smooth batter is formed.
  3. Pour into a cup which will hold 8 ounces. You could use a coffee mug.I Pammed it.Microwave for one minute.
I tried a few more times and got it. I hope I've got everything. My first successful paste using iPad. :)
 
Can anyone advise as to the carb value of croutons please?
I love Caesar Salad and you really need just a few to give a bit of crunch.
