Oh my gosh @maglil55 that dauphinoise (I’d call it “scalloped not-potatoes”) is something Mr ZF would eat too and call it good! And possibly the roasties too. Congrats on cupboarding! And the being ruthless in the kitchen supplies. I’ll ship you ingredients for bread!

Well. Big whoop. I just cut and peeled a celeriac (?) and it was no more fuss than an equal sized potato. Chopped up and why not boil up for mashed faux potatoes? Try for lunch tomorrow. Or maybe set aside for roasting; tastier sounding right now.
Brilliant. Used Celeriac today and did shove 2/3 of it in the freezer as suggested by @shelley262 et al.

Lunch; 2 poached eggs, 1 slice bacon, 1 slice black pudding.
Mid afternoon snack; 1 Keto bread roll, toasted and soaked in butter.
Dinner; 2 sausages, dauphinois celeriac, braised broccoli with onions and mushrooms.
Pudding; Greek joghurt with blackberries and chia.

Evening all. No snow here yet bit like March really. @Chook stew looks promising - I would love the radishes but is erith (can't bring myself to type it) really needed and stewing beef is not usually to my taste. @DJC3 Hemsley flaxseed rolls/bread freezes and toasts well.
Breakfast: Tea - 3 pint mugs; Lunch: 2 x poached egg on smashed avocado atop livlife toast ; 2 x 1.5 pints Tea without which I would have been starving still; Late afternoon: Tea: Evening meal: Meaty bone stew - couldn't face all the fat so picked some meat off with mashed swede, celeriac and greens bubble and squeak impersonator; tea
Starting to find I can't eat the same types of fat I could even 6 months ago. Not health/cholesterol related just starting to recoil at the thought - anyone else had that? Who knew Meghan thingy was and avocado toast whisperer?

I didn't bother with sweetener (of any kind) and added in a few vegetables that my husband enjoys. We get most of our meat from a farm's butcher shop and all their meat is lovely. You could probably use any cut of lamb or beef that you prefer that benefits from a long slow cook.

I must admit, i tend to use recipes as a guideline rather than following them as written (unless its the magical alchemy known as baking which I'm rubbish at.)

Sorry to hear fat is becoming a problem for you. I’ve always been a bit like that ( hence chicken and fish skin shudders) Mr C will happily eat the fat on a lamb chop but I never could.
Fat on lamb and pork not so much a problem at least the meat is not dry. Cream, butter, cooked cheese bit of a mental block just now. @Chook thanks for that I was not sure why erith was included.

Doesn’t the Hemsley Recipe contain maple syrup?
Must admit that I don’t consume the amount of fat that I did 2 years ago - all that bulletproof proof coffee. I tend to stick to bits of cheese and nuts for fat but do use monster amounts of butter in cooking. Not for any recoil reason, just searching for a balance between fat and fibre.

Greetings from Snowy Derbyshire! I didn't get chance to post yesterday, as we were at the Eye Hospital again for Mr B's review and got a bite to eat on the way home to celebrate. It was all good news! The bleed in the right eye is clearing, so it looks like he won't need surgery (vitrectomy). There is no apparent progression of the retinopathy in the left eye (his good eye), so no laser needed. Injections for the maculopathy continue for now, but hopefully they will start to become less frequent. I'm over the moon for him. On the way home, we went to our favourite local American diner type restaurant that specialise in fancy burgers, ribs and burritos. It was the first time we've been since Mr B's diagnosis. I'll spare you the sordid carby details of my meal, but Mr B made good choices. He had his fave burger (with in-house smoked bacon and cheese) served without the bun, coleslaw and an extra halloumi salad. He had literally a couple of chips but showed remarkable restraint. Today has been more restrained for both of us and our first bash at gentle IF (although we tend not to eat past 8 in the evening, so we have an 11 hour fast most nights).

Breakfast: Coffee with a tiny drop of cream (will the cream in the coffee spoil the benefits for Mr B?)
Lunch: Mini frittatas with cheese, tomato and spring onion. Baby spinach, avocado and cucumber. Greek yoghurt, berries, almonds.
Dinner: Salmon with pesto wrapped in prosciutto. Roasted asparagus and tomatoes, cavalo Nero with chilli, garlic and lemon. SF jelly and cream. Almond milk hot choc, because ***SNOW!!***

OK. Few hints if your going to try the chicken....

I cook the chicken (diced) in a pan with my taste in chilli.
Add the peanut butter to taste, may take practice as you need to balance the hot chilli with the sweetness of the PB will need some seasoning.
I use some American style stuff that's 99. 5% peanut and some salt, no palm oil nothing. Just nuts. Well and salt.

Called pip and nut. I buy 1kg pots.
13g/100 carb

Once you have added the PB if it gets too sticky/claggy add a little bit of water to make it more sausey like.

We have never put maple syrup in the flatbread so I assume the rolls may work without but @DJC3 used sugar free. @BibaBee, fantastic news about your husband's improvement and improved prognosis.

Yes do, very quick and easy. I don’t know how essential the maple syrup is, and the sugar free one is expensive but only 1/2 tablespoon is used so should last for ages.

Yes, I used sugar free variety. Just 1/2 tab.

Evening all. A sprinkling of snow here and a packed up boiler (literllay an hour ago just stopped working) - so it’s fluffy pyjamas and blankets all round and a lot of giggles from me listening to my husband cursing at himself for not having shaved this morning as planned because doing it in freezing cold water isn’t nice. I did suggest he boil the kettle although the fact I mentioned this after he’d shaved didn’t seem to go down too well :angelic:

Breakfast - usual protein peanut & chocolate bar with with tea
3 coffees throughout the day at work - no lunch
Handful of salted peanuts to snack on whilst doing coursework once home from work
Dinner - cooked the chicken I didn’t do Sunday so a mid week roast of chicken, broccoli, green beans, spoonful or peas and a drizzle of gravy.

I’m the opposite. Finding it hard to get enough fat - hence all the dollops of cream!

Wonderful news not surprised you celebrated really pleased for you both. I don’t think cream in coffee will spoil the fast im sure that Jason Fung says it’s ok to have small amount of cream if can’t fast without it. I did IF and one meal a day with black coffee and black tea for one month but needed to lose lots of weight at that stage. I do tend too to fast from about 7 to 10 following am most days with only water and black tea it’s a personal choice. Good luck

Funny story - I actually asked for a hot water bottle for Xmas. The only present I specifically asked for. Over and over. And the only present my darling husband didn’t buy me :rolleyes: thankfully I have a fluffy sock collection large enough to open my own sock boutique so cold feet at bedtime won’t be an issue :)
