We made Christmas fruit cakes at school one year, we matured them for 6 months and laced them every week with the plonk and a bit more religiously!! The home economics room stank of booze for the next 6 months! When we had marzipaned and iced them, we took them home and displayed them on our Christmas tables. My relatives couldn't believe that I had produced such a fine cake with such potency! It was a brilliant Christmas and one I will not forget!!You are not alone, I baked a "Bero" fruit cake the week before the coronation but decided it was too "young" to divvy out at party time. Its now happily maturing for a future occasion. I do have a big birthday coming up soon but I wouldn't eat it, my OH is trying to diet and my "local" son and family don't like fruit cake! I think it may be looking for a new home.soon. Perhaps I can donate it to my lovely lunch club family.
