What have you eaten today? (Low carb forum)

@DJC3 Egg whites, triple zero stevia - about 1/2 as much in weight as sugar in normal recipe. Put half of that in at first as normal. The other half you make like icing sugar using herb/coffee grinder and fold it in at the end before placing in the oven. We had a trial and decided this method was best. Erythritol weights will need trial. After a 1 hr dog walk bg @ 2 hrs was 4.8 as opposed to 4.9 after lunch - just before eating EM, so Eaton mess stays! :woot::woot:

I haven’t got stevia so might have a go with erythritol. I have 2 egg whites in the fridge left over from mayo.
I adore Eton mess.
 
Hi all. Not a vegetable in sight today.

Breakfast - none

Lunch - M&S Serrano ham and Manchego cheese rollitos and a bag of M&S pork crackling.

Dinner - kippers with butter followed by 5 hotel chocolat 100% buttons.

Evening all busy day today at mums about to have chicken salad and a bottle of fizz to celebrate my new hbac1 of 30! I've put up a post this morning in success stories.
Lunch beef sandwich on low carb bread picnic in car on way
Dinner about to be chicken salad and fizz followed by raspberry mousses I brought up. Will be a bit erratic over next week or so would imagine but celebrations are on the cards re bgs. Interestingly mysugr predicted a higher figure at 31.2 - so you didn't win the sweepstake @DJC3im thrilled
 
Good evening all. Firstly. fantastic Hba1c Shelley. Today seems to have seen an attack of the munching monster but looking back at the menu I don't think anyone would ever think it was a restrictive diet.

B: 2x SD mug tea - 1 almond milk and 1 with double cream;
60 mins static cycle steady 66% HR
MMS: Starbucks mug coffee and double cream
Sauntered around garden inspecting and getting ready to spray tomorrow (yes it is not in line with my ideals but spray from 2 farmers surrounding definitely drifts over our land and the areas I spray abut their borders)
L: Salmon fillet; EV Olive oil; Cider vinegar; Dijon mustard; Chia seedsr; lettuce; spring onion; radish; Cherry tomatoes Waited 2 hrs & tested before eating Eaton Mess. Don’t really like eating dessert straight after main course without wine
MAS:Low carb Eaton Mess - meringues made with triple zero stevia
65 min dog walk
Slice ham; 4 ribs probably from a rat they were so small
SD Mug tea
D: Asparagus (ours); Poached egg (ours); Hollandaise
There may be alcohol involved later depending on football results!
MMS = mid morning snack; MAS = mid afternoon snack SD = Sports direct
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: 2 x scrambled eggs with 1 slice of HiLo toast followed by Greek yoghurt and strawberries.
Mid-afternoon: Hartleys 10 cal jelly and black coffee.
Dinner: kedgeree made with cauli rice followed by chocolate and hazelnut Oppo with strawberries.

May be a silly question but.... I have just purchased the Oppo ice cream- do you know how many grams is in a scoop? Or how many grams in the 100ml serving?

I am used to very big scoops of ice cream

I have scales that have a mls setting. 50mls = one scoop according to Oppo’s blurb
 
Just had Eaton mess with LC meringues - like meeting a best friend from childhood after years apart. Can't say I don't care what the reading is after 2 hours but not too bothered. Who am I kidding?


Ianspurs - If I recall correctly, a standard supermarket bought meringue nest is only about 10gr carb, and I guess the little meringue shells would be much less, if a once in a while sweet hit is what floats your boat.

Thanks for the information. One of the best points of making our own meringues is that it is a good way to use some of the 9 eggs a day we have and the whites are a perfect use for the by product of homemade mayo.

That cheesecake filling is exactly how I make it.
Double cream, cream cheese, and enough lemon and erythritol powder (I don’t use stevia) to get the flavour balance.
Same with lemon chia pud.

Mr B always says I use too much lemon.
Nonsense.
You can’t actually overdo it ;)
 
Happy hump day all :)

20-24 hour fasting seems to be becoming the norm here but I noticed a few pounds off the scales today so must be doing something right. Sugars even went down to 5.5 today - haven't seen a 5 in at least a week.

Dinner: "Breakfast" bagel - low carb bagel, sausage and herb patty, egg, brie, and bacon, with a side of pepperoni crisps
Snacks: Adonis blondie
And of course will have an almond milk mocha before bed.

B: blue cheese omlette. Coffee and cream.

L: prawns, avocado, hot smoked salmon and mayo.
Choc chia pud with raspberries

D: smoked haddock on buttered spinach, topped with a poached egg and asparagus.
Strawberries and cream.

Glass of wine later to celebrate Shelley’s success.
 
Bed 7.7 FBG 7.6. Been sitting quite high all day. Even after aqua (which I forced myself to) hardly put a dent in it.
B. Tassimo Americano grande with a dash of cream.
L. 1/2 Mattesons smoked sausage with 2 scrambled eggs.
D. Rib eye with 2 chestnut mushrooms, lettuce, 4 Santini tomatoes, 1/2 small avocado, 2 Walnuts, helmanns, baby beet.
A bit achy again but as I said I forced my way through aqua. I feel as if I've done something to my right hand. Pinkie finger is very sore. Hopefully I'll feel better tomorrow.

Does the lemon juice with the cheese loosen it down, or thicken it? If I'd been making it up, I'd have added the citrus to the creat to make it thinker, a like like the Nigella's no churn Mojito Icecream.

It definitely loosens it.

I mix the lemon juice in with the cream cheese (hand blender), then sweeten (to taste), then blend in the cream to get the texture.

That recipe says that it will thicken as you continue to beat it, so maybe that is the answer. :)
