What have you eaten today? (Low carb forum)

@DJC3 and @jayney27 I know what you mean about shopping sprees. One trip to collect pre-ordered loaf mould = new padded jacket and new fleece from TK Maxx (had never been in until about a year ago, now I keep them in business).

Have considered it, but I have a tiny, tiny kitchen and don’t think I’m creative/adventurous enough to make full use of it. Maybe when the small one comes to the UK, but I’d want to see one in a shop first to check out the size.
An IP is a bit like the club badge here.:arghh:

It does sound impressive but I only tend to use it as a slow cooker, I’ve never experimented with all the functions, if I’m honest it scares me a little bit, the instruction booklet claims it can be used for cakes, bread, yoghurt, jam and rice to name but a few!
 
Evening Peeps. Strange day FBG 9.5 after 8.5s the last few days and I only had pork with fried eggs last night.
I ran 3 miles then walked a mile with the mutt and this morning and it stayed stubbornly in the 9s
It finally dropped to high 6s an hour after lunch of cheese, nuts, cream, an avocado and stayed there until 6pm
Appointment with DN this afternoon, really good news, she’s disagreed with the Doctor, Doc decided I’m T1 but didn’t tell me. He said he’d get me a referral to an Endocrinologist in a week, this week became 3 months! The DN disagrees and looked at my BG numbers and diet and she reckons I’m T2! The good news is she’s arranged a blood test for this Friday and will go through results with the useless Doc prior to seeing me again on 4th Sept. She’s said I must eat some good carbs, especially before exercise cos I’ve lost another 5kg in the last month and I’m pretty skinny. And she says I’ve done really well, so don’t worry if my BGs go up a bit, in fact don’t be so obsessive about testing it! So against my better judgement I’ve had a little pot of fruit this evening on my train ride from Kent to Liverpool plus a massive 15g of carbs in a protein bar plus some no carby meat. I’m now in the high 8s after a 2 mile walk from the station. Not sure what to think
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: left over cauliflower and broccoli cheese apwith peas and sweetcorn followed by Greek yoghurt and strawberries.
Mid afternoon: white Americans at a coffee shop with raspberry phd bar.
Dinner: cheddar and mushroom omelette with cauliflower, broccoli and yellow pepper salad followed by SF jelly, cream, strawberries and LC chocolate granola.
I’m in an Air bnb tonight waiting to meet my daughter off a late flight before driving home tomorrow and yes, I confess I have coconut porridge ingredients and my favourite saucepan and wooden spoon with me for tomorrow morning! :joyful::hilarious:

I’m in a hotel tonight and jealous of your preparedness. I’m gonna miss the coconut porridge in the morning :-(
 
@Geoffno6 I hope you get some answers soon. Can’t be easy when the HCPs are not even agreeing.

Thanks @DJC3 , what’s puzzling is if my pins and needles in my toes and fingers has been caused by high BS then why do I need to eat carbs knowing they’ll push my numbers up. Anyway, I’m much happier this evening knowing I might not have to wait months for answers.

Unless things change in the future, the only non-online-retailers selling the Instant Pots are Costco, which requires a membership (I'm not a member).

When mine arrived, it was packed in a box the size of a small suburban bungalow, leading to my OH uttering the immortal words "What the heck have you bought now?". Once liberated from it's big box, to reveal the manufacturer's box (the size of a London apartment), we were still a bit fearful, and remained nervy when the thing came out, but it has relatively quickly founf it's perma home. It doesn't live in a cupboard. It lives on a worktop.

If you like to batch cook, the 6ltr is fab. If you like to make mega-batch cooks, the 8ltr works (as @Brunneria will attest). My desire for the 3ltr is for sides and very small batches, but I have done small amounts in the 6ltr too, without any issue.

Like you mine lives on the worktop. No way would I keep it in a cupboard. I got an amazing bargain on the 6lr through the Good Food subscribers club. £69 for the 6 lr. It helps that it's a good looking piece of kit.

That was indeed a bargain price, Maglil. Mine was Black Friday almost 2 years ago. I'm hoping, if not before that the Mini will be launched for Black Friday this year.

Update on the baking front. @shelley262 I’ve identified a new section for the recipe guide: the idiots/beginners guide for those of us who weren’t bakers/cooks pre low carb.

Now have something approximating high fibre chocolate bars in the fridge, but doubt they bear any resemblance to those originally produced by @ianpspurs . First attempt at caramel resulted in smoke filled kitchen (which in my place means smoke filled flat) followed by rapid googling for help. Not sure second attempt was actually caramel, but wasn’t up for a third go.

However, half size lemon zucchini cake in small loaf tin appears to have been successful.

Reports on both tonight.

No inulin - too expensive until I establish regular need/use.

I melted butter then added erythritol until it dissolved before turning up heat.

Googling offered some recipes without inulin but I followed the processes suggested rather than changing ingredients.

On the plus side the bars do smell good! Will be interested to try them tonight.

Could do with one right now - train is stuck outside London Bridge due to broken down train ahead. Will be late for book signing that won’t impress you - Alan Smith.
 
Bed 5.6 FBG 5.4. Got a rest this morning. Son was off so he walked the boys to school. Trouble is my body is so tuned to wake up time I woke at the normal time. Still, it was nice not to be heading out early. Got The whole day off tomorrow but plenty to do as both boys are staying on Friday.
B. Tassimo Americano grande with a dash of cream, slice of Tesco's high protein bread with lurpack and 2 scrambled eggs before heading out to Aqua fit and swimming.
L. Nothing
D. Oomi noodle carbonara. Chia Pudding and 6 raspberries.
Tesco high protein bread...Wow! What is the carb content?
