What have you eaten today? (Low carb forum)

Hello all.

Hope everyone is doing well and all those who have been suffering from a cold/flu feel a lot better now.

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: A DD keto roll, half with goat cream cheese and smoked salmon, the other half with mayonnaise and beef salami.

Snack: A small serving of Oppo's vanilla ice cream with sesame brittle, plus a bit of sesame brittle along the way.

Dinner: Two scrambled eggs with okra and gouda. Tuna with mayonnaise and diced celery. A glass of red wine.
 
Catching up after a few days, so all this is a bit belated.

Happy Wedding Anniversary @Rachox.
Sounds like you had a great time @shelley262, except for annoying carb munching passenger

Breakfast - Hi-lo toast with butter
Lunch - toasted lo-dough wrap with turkey and salad filling. Olives and a 1/4 pack of quavers!!! Strawberries and thick cream
Dinner - Lo-dough pizza with salad. Mosser Roth 70% chocolate (tasted like milk chocolate after eating the strong stuff:happy:

Full. For now......

Weather picked up here as the day went on - started the day with catch up with a friend and then lots of gardening in the sun - wonderful day.
Breakfast one slice of bacon and egg and a quarter piece of lo dough soaked in egg and cooked as eggy bread
Lunch low carb veggie soup - celery, courgette, pepper and spring onion with cream for thickening just before serving (was a bit nervous about veggie soup and avoided last winter but one of lowest bgs ever this pm so a winner for me)
Dinner trout with lemon butter served with cauliflower cheese and glass red wine followed by raspberry clafoutis with yoghurt.
@DCUKMod ive gone and bought an IP as want to make more soup and stock in particular. I did initially decide to buy a much cheaper electric pressure cooker which had similar spec to the ip including metal cooking pot and this arrived yesterday but despite my best efforts it wouldn’t work had error message so ended up returning it this am and ordering an instant pot - lots of fun ahead with it provided it works!

Shelley - Good choice. When I was choosing which to buy, I specifically wanted a stainless steel pot, as opposed to a non-stick one and the IP was about the only one I could find with that. They do a non-stick inner pot too, as an accessory.

If there are ever any issues with your IP, their service is excellent. There is a closed UK group of IP users and I learned a HUGE amount on there. Several of us arer on there, although bearing in mind the IP uses our real names, we're all still incognito. :) If you ever want the group details, any of us potters can direct you there.

My only comment would be DO NOT have a dickie fit when you see the size of the packaging the pot comes in. It's a BIG box!

My OH is away for a golfing competition for the next couple of days, so I a, singleton cooking. We had a scrumptious brunch before he left, si I just wanted some soup this evening.

I had some leftover butternut squash soup in the freezer from last week, but it didn't look quite enough, so I put about a cup of water into the pot, and added the frozen block of soup, and a few cauli florets. I gave it 5 minutes pressure cooking, then blitzed down the cauli and added some soured cream just before eating. I'm very, very full!

I must say, my stick blender is coming into its own with the pot for soup, when I want it less chunky.
 
Evening all. Ive been awol for a bit - can’t believe how many posts to read in just a few days!
I do hope the horrible lurgy afflicted people feel better soon.
@shelley262 I’m glad your holiday was so good and you have arrived home safely. You wont regret the IP - I love it.
@Rachox glad you got down from your treehouse safe and sound. Happy Anniversary.
@Tori71 how on earth did you manage just 1/4 pack of Quavers?

My bgs still inexplicably higher than a couple of months back but sticking with low carb...

Early: tea with almond milk

B: 1 scrambled egg. 1/2 avocado. 50g smoked salmon. Coffee and cream.

L: Coffee at Waitrose cafe with a friend ( took my own cream in one of the test strip pots again @Goonergal seems such a waste to just bin them doesn’t it?)
1/2 pack Waitrose chorizo and jalapeno cheese rollitos when I got home.

More tea with almond milk this aft.

D: Steak, celeriac chips and salad with olive oil/ acv dressing. SF jelly with a spoonful of cream to follow

Thank you I use my stick blender a lot. I’ve requested to join the Facebook group and done a fair bit of research - will run the water test when it arrives. I did look at soup makers whilst doing research but they seemed bad value just seem to do the blending as an extra but did lots less of all the other stuff. I’m also looking forward to using it as a Bain Marie amongst other things!
 
Evening all. How the day went still to be decided - Spurs Barcelona will be the clincher. Menu may show my new pet like. @Shelly23 the IP draws another one in - had high hopes of you being resistant:angelic:

Wakey Wakey: Tea
Breakfast : Soya milk hot chocolate - new Dualit h/c maker with 2 tsps 100% organic raw cacao powder from Peru (divine).
Lunch : Large salad with tin of mackerel in olive oil and avocado; chia seeds and psyllium husk powder
Mid Afternoon: Soya milk hot chocolate as per breakfast but 3 tsps
Evening meal: Cottage pie; remains of Sunday roast + tin corned beef - celeriac+cheese topping; gravy from h/m bone and veg broth (ok, used IP); broccoli

Good to see you back again you’ve been missed always love the sound of your food. Love idea of test strips pot for cream too. I’m quite excited by the IP. Keen on trying out beef broth and stock to add more flavour.
 
Bed 6.4 FBG 5.9. Usual school run then yet another funeral. Cousin's wife this time who died on holiday. Boys were demanding broth so stock was made yesterday in IP and finished today. Collected from school and they came rushing in yelling Broth, broth , broth. Large bowl with a chunk of crusty bread and they were happy.
B. Tassimo Americano grande with a dash of cream.

D. 4 rashers crispy streaky bacon, 4 mini tomatoes, last wee bit of the wee black pudding, 2 fried eggs.

Hubby has just had a large plate of broth and much as I enjoy it my BGs don't and they're already that bit higher than usual.

I wonder why broth raises your bg though?

Welcome back @DJC3 lovely to see your cheery posts again.

Another late day at work - it’s crazy right now - and another impromptu OMAD day. Had lunch with a colleague - small doner kebab (no bread) with salad. She was delayed in a meeting and was very hungry so had 25g almonds as a starter.

Not hungry when I got home so cooked the fish that I’ve been planning to eat for a few days and made a creamy/cheesy sauce: all packed up to take for lunch tomorrow.

Totally off topic but any other Apprentice watchers among you?

My fridge is full of jars of broth now - it makes so much difference to homemade soups. You’ve got it at the perfect time as the autumn weather kicks in.

Not wishing to speak for @maglil55 , but Scotch Broth will usually contain root vegetables, plus often a broth mix, which is, pearl barley, yellow split peas, green split peas, marrowfat peas and split lentils. It's a hearty soup.

Gosh couldn’t cope any more with that small amount of food!
I usually watch the Apprentice but usually have mixed feelings about it the contestants are often hard to like and AS is irritating ! I also find that I prefer it towards the end as numbers reduce!

Have you considered the IP Veggie Stock Paste yet? It's a fantastic, easy addition of seasoning to almost anything. I can struggle a bit, seasoning as I go and this has saved my bacon so many times. Even @ianpspurs is a fan!

It doesn't totally freeze, due to the high salt content, but that also helps preserve it.

I love it - highly entertaining. Last year one of the candidates was the ex of one of my colleagues.

The combined effect of reducing carbs even further and cutting out sweeteners seems to be keeping me fuller longer and my energy levels have gone up a notch. Very interesting.
