What have you eaten today? (Low carb forum)

Hi all.

Welcome back @DJC3 lovely to see your cheery posts again.

Another late day at work - it’s crazy right now - and another impromptu OMAD day. Had lunch with a colleague - small doner kebab (no bread) with salad. She was delayed in a meeting and was very hungry so had 25g almonds as a starter.

Not hungry when I got home so cooked the fish that I’ve been planning to eat for a few days and made a creamy/cheesy sauce: all packed up to take for lunch tomorrow.

Totally off topic but any other Apprentice watchers among you?
Hi I’ve always watched the apprentice but will only get to see the first episode then will miss the next 3 due to hols so am debating whether to watch or not

Evening everyone, late post due to yoga class
Coffee with cream and s cheese omelette for breakfast
Roast beef, whipped cream cheese and baby tomatoes for lunch with a small pack of pork scratchings, only able to eat a couple of pieces as they were really big and too hard
D bacon and 2 large portobello mushrooms

Have you considered the IP Veggie Stock Paste yet? It's a fantastic, easy addition of seasoning to almost anything. I can struggle a bit, seasoning as I go and this has saved my bacon so many times. Even @ianpspurs is a fan!

It doesn't totally freeze, due to the high salt content, but that also helps preserve it.
Much to my chagrin I have to admit the veg stock paste has become a favourite. However, even a stopped clock is right twice a day:angelic:

Yes! Watching now!

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Mid morning: Americano with a dash of milk.
Lunch at Prèt a Manger on route home from our anniversary break: crayfish and avocado salad followed by a Coconut Bite.
5pm: black coffee and banana Carb Killa bar, limited edition flavour found in Holland and Barret on our travels.
Dinner: cheese omelette with cauliflower and broccoli salad followed by SF jelly with cream and LC chocolate granola.

Thanks for those kind words and thanks for your encouragement the last couple of days.
I watch The Apprentice cringing all the time - they are all so irritating, but it’s addictive.

I’ve only got a stick blender in Cornwall which would make it v hard I think.
I did reduce the last lot of gammon cooking liquid which had herbs and a few veg in - I put it into ice cube trays and it is very salty so will have to do until I get a proper food processor down there ( another gadget for the tiny kitchen)
I remember you saying you save parmesan rinds for it.

Ah yes, wasn’t thinking Scotch broth!
And it was indeed Scoth Broth. Hearty is one word for it. Spoons will stand vertical in it tomorrow! I can usually get another pot full once I dilute with more stock. It varies what hubby puts in it veggie wise. Current batch has onion, celery, cauliflower, chopped turnip and loads of grated carrots. Add to that the broth mix AND he puts in loads of peas and extra barley plus the chopped meat from the boiling beef.
The boys absolutely love it. They were jumping up and down the day before going Yah, Papa is making broth. As soon as they got in today they wanted their broth and crusty bread. Another popular one is lentil but broth is the favourite.

Sounds wonderful and very like my mum’s stew - except she made it with neck of lamb. Like yours it was full of barley and allsorts of goodies and a spoon would stand up in it next day. I can almost smell it just thinking about it, not surprised the boys were so happy with it.

Hi All,

I think I forgot to post yesterday.
B: coffeesubstitute and cream
L: a handful of posh popcorn. Disgustingly sweet and not worth the money. No bg impact because I ate so little of it. However, then went on to eat about 70 g of v dark peppermint choc during the course of the afternoon. That did have a slight bg effect. :D
D: chicken thigh rogan josh using Pataks curry paste.

Then spent the rest of the evening cleaning up an old cast iron frying pan of mine.
Bought it, um... 25+ years ago, pre internet access, and didn't really know what to do with it. So didn't season it properly. And because it was cheap, it didn't have a properly smooth inner surface. Anyway, thanks to the wonders of t'interweb, I have now discovered where I went wrong, and have begun the resurrection process. Fortunately, I didn't get it rusty, just used too much oil when I seasoned it, and didn't understand about how to cook with it (low to med heat and let the thing heat up evenly before adding food).

The evening was spent removing the old seasoning and sanding down the inner base and sides to a better smoothness. Today will see it being seasoned properly. And then... drumroll... there will be a test using a sacrificial fried egg. ;)

I have to agree with you. It's difficult to decide who is worse although I think the women succeeded in being really awful people on last night's showing. I would have hated to do business with any of the individuals that pop up on that show. Hubby has to remove things from in front of me in case I start throwing them at the TV. But yes, it's an addictive irritation and I do love Claude.

Record or get it on catch up? But there again 3 episodes of irritation in one go might be overload

I haven't eaten anything today in fact my last food was yesterday lunchtime when I had a ham salad.
Looking forward to halibut today but not sure how I'll cook it. I've also got some broth I made from a lamb bone, chucked in some cabbage and other low carb veg for lunch.
Feeling a bit peckish but don't do breakfast

I love it - highly entertaining. Last year one of the candidates was the ex of one of my colleagues.

The combined effect of reducing carbs even further and cutting out sweeteners seems to be keeping me fuller longer and my energy levels have gone up a notch. Very interesting.
Is that why they are an ex?
