What have you eaten today? (Low carb forum)

My cast iron frying pan experiment is an absolute triumph!

My sacrificial egg became a cheesy scramble for lunch, and my goodness, the surface is wonderful.
This is doubley excellent because i couldn’t season the pan in the oven (prehistoric and unreliable), the pan won’t fit into my loverly and otherwise perfick wee halogen oven, and i had to do it on the hob.

V easy, and very good result.

Now... wot else can I cook with it...?

I spent what seemed like eons about a year ago refurbishing/re-seasoning the cast iron cookware. We've got a fair bit of it. Most of it isn't used very regularly, but a couple of frying pans, and a couple of griddle pans. The griddle pans used to be a nightmarre to clean, as MrB quite likes to do a roast sitting on then in the oven.

All better now. I was lazy and used the ovens to do them. They took and absolute age to cool down again after the main phase.
 
Hi all. Definitely a day of feasting today featuring a very odd dinner.

Lunch - my fishy/cheesy/creamy concoction. Not sure about it, think a bit too much cream and some of the fish was too strong for me (used a pack of chopped salmon, cod and smoked haddock). Felt the need for a little something else so bought one of the M&S packs of 2 x 40g packs of clotted cream and ate that with 30g almonds.

Dinner - really fancied a Lidl roll so had my penultimate one. Couldn’t decide between bacon or almond butter so had one half with the butter and the other with bacon! Then made a generous dessert of almond butter mixed with cream. Only had runny double cream so just stirred hard until it was all combined.

@maglil55 @DJC3 and @jayney27 I managed to drop off shortly after the start of The Apprentice, waking up just in time to see one of them being fired.

Lucky you, by falling asleep you missed all the silly bickering and daft comments, perhaps you way is the way to view the programme, snooze through all the rubbish and wake in time to see who gets fired :)

Enormous pile of chicken wings in lime, garlic and chilli oil, just now. Thought they were going to be a failure because they were coming up all flobboly and anaemic, but I whopped the oven up for the last few minutes, and they came out perfect. May have some cheese later. :D
 
Hello!

Breakfast - Hi-lo toast with butter
Lunch - Pate, salad and olives.....and rest of packet of previously mentioned quavers @DJC3 (so much for restraint). Two squares of 70% chocolate.
Dinner - Beef stew made with carrots, onions and mushrooms, and green beans. Strawberry Clafoutis with cream. A new favourite in our house.
Supper(ish) - Maybe some nuts. Rock and roll:rolleyes:

Every year I say I won't watch The Apprentice but do. Then end up shouting at the TV:banghead: ...a lot
 
Evening all, very busy day today 3 training sessions back to back!
B was a smoothie made with almond milk, some of my low carb choc granola and almond butter
L was a quick affair, sliced ham, couple of small tomatoes and whipped cream cheese
On route from one venue to the next I devoured a phd bar, today that seemed to raise my BG a bit more than it normally does, but maybe that happened because I was busy
D chicken thighs cooked in a maggi sauce with celeriac

Lunch mackerel with olive oil @nd Apple cider vinegar with stick of celery and four Lc seeded crispbreads followed by one square of 90% chocolate
Dinner bolognese served on bed of buttered Mushrooms followed by raspberry clafoutis with yoghurt
@Goonergal enjoyed that the Apprentice was set mainly in Malta - a place on my to see list which made it more watchable for me but agree with @jayney27 lots of bickering often is in initial programmes when lots of them gets better as fewer of them so may be more watchable when you get back from your hols Jayney!
@DCUKMod My IP arrived but only an hour ago so have only managed water test so far - which it passed unlike the other brand - but may have a go at some veggie stock in a bit ready for some soup tomorrow! I’m also planning a chicken one pot tomorrow when eldest son here will be interesting to see how it turns out.

Bed 6 FBG 6.7. Usual school run and yet again tried to get it into No 2's head about The need to recover the multiple items he's left at school. In one ear and out the other. Managed to get his hat in his bag and a girl's cardigan? How he thought that was a v neck I don't know. Chilly again today. They decided they wanted broth again so it saved me from braving the supermarket.
B. Remains of the Mattesons chicken sausage and 2 scrambled eggs.
L. Tassimo Americano grande with a dash of cream.
D. That has to be The worst meal I have cooked. A buttered chicken crown which I overcooked and it was tasteless and I did my microwave cauliflower cheese which I used whipping cream in and crumbled cheese instead of grated - it was awful! Whipping cream doesn't work. I think the fact I couldn't be bothered didn t help.
I'm trying to run the fridge down for going away so I'm getting light on chilled ingredients. Hubby chased me away to Aqua which did me some good.
Will have a scoop of Halo Top and raspberries as I need something to take the taste away
Note. The new candy bar halo top does not taste like a candy bar. It's like hazelnut ice cream and if you like hazelnuts it is delicious!
 
Hello all.

Weather is warming up again and looking forward to spending Saturday outside. The forecast says sun and 25 degrees. Hope all of you get to enjoy brilliant weather this weekend too.

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Tartar with mayonnaise and two fried eggs. A small bowl of canned tuna with mayonnaise and celery. A bit of low-carb sesame brittle.

Dinner: Homemade naked burger with cheddar, tomato, onion, avocado, mayonnaise and low-carb ketchup. Turned out to be tastier than anticipated. A glass of red wine.

Shame the sort of fish pie didn’t work, sounds like it should have been nice.

I did wonder at you watching the Apprentice as you’re always up so early. You missed the full cringe- fest of loud opinionated big heads. Addictive tv.
 
Spent too much of today trying to solve an IT problem when the weather was rather spiffing. Very simple food today but then with intensive coaching I might make an adequate simpleton - well it's good to have ambition:)
Menu:
Wakey Wakey: Tea
Breakfast : Tea
Lunch : Large salad with tin of mackerel in olive oil and avocado; chia seeds and psyllium husk powder; Sugar free coke
Mid Afternoon: Tea
Evening meal: Celeriac chips; Mushrooms; 3 fried eggs;water

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch at Prèt with my lovely non diabetic friend who always eats the same as me :): chicken and egg protein box (chicken, egg, avocado and green salad) followed by a coconut bite,
Mid afternoon: black coffee and banana Carb Killa bar.
Dinner: lamb and mint burgers, one slice of HiLo and cauliflower and broccoli salad followed by SF jelly, raspberry chia pudding and LC chocolate granola.
