What have you eaten today? (Low carb forum)

Are you eating enough protein? Doesn’t look like much here. I read somewhere that we should aim for 0.8 x bodyweight in Kg just for basic maintenance, and more if exercising.

Most days there is at evening meal some meat, fish, eggs. Lunch time can be eggs or cheese. I am struggling to eat much as I have abdominal discomfort due to having had several surgical misfortunes resulting in adhesions and other complications. Yet I still remain fat.
 
I’ve made it with olive oil, part olive oil, and part avocado, but (confession time) I was hoping to find a ready made brand.

If I make my own mayo, I either ‘eat it up’ or I chuck the rest because it is getting old. Both seem wasteful. Whereas a bought brand has a longer shelf life.

I’ve heard good things about baconnaise, but haven’t collected enough bacon grease (yet)

Would the rendered fat from a gammon joint, or hock be bacon-ish enough for your baconnaise?

When I have roasted a gammon hock in the past, there has been an extraordinary amount of fat rendered on the way to the most stupendous crackling.

Took it easy yesterday and slept a full seven hours, which is a lot for me, and woke up feeling so much better. So, thanks again. I am absolutely certain your thoughts did do a lot to help.

I remember having seen a ready made mayonnaise with avocado oil and just did a little search. There is a Hunter & Gather brand (amazon.co.uk) and a Primal Kitchen brand, they tend to be bit pricey, though. Also saw a Dr. Will's brand (contains 71 percent avocado oil and a much smaller amount of rapeseed oil), but is much more reasonably priced.

@DJC3 -- I see you have beaten me to it -- must have somehow missed your post. Great minds think alike:D.

I have nearly bought one on several occasions but they are quite expensive and I’ve always chickened out by checkout.

On the way home after a great day. Phone call early afternoon to say I’d been successful with a very large bid for work then a lovely afternoon and early evening in London with @Debandez after her photo shoot.

Walked in the sun - T-shirt weather- along the Regent canal from Haggerston to Islington stopping for coffee along the way. Then dinner at Five Guys before walking to Euston for coffee and cream at Caffè Nero and then dropped @Debandez at station.

Dinner was bunless bacon cheeseburger with lettuce tomato and onion with mayonnaise, (OMAD day).
Thank you so much @Goonergal for taking time out to spend it with me. I had such a great day. Thoroughly enjoyed myself.

Weather is warming up again and looking forward to spending Saturday outside. The forecast says sun and 25 degrees. Hope all of you get to enjoy brilliant weather this weekend too.

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Tartar with mayonnaise and two fried eggs. A small bowl of canned tuna with mayonnaise and celery. A bit of low-carb sesame brittle.

Dinner: Homemade naked burger with cheddar, tomato, onion, avocado, mayonnaise and low-carb ketchup. Turned out to be tastier than anticipated. A glass of red wine.
I think you've just settled what I should get for tonight @ziggy_w. A burger of some description with avocado and other bits and bobs sounds just the ticket.

@Goonergal -- So good to hear that you and @Debandez enjoyed your time together. I have to admit you are two very good looking women.

Today was a bit frustrating for me. Haven't been really feeling up to snuff, a bit of a cold coming on, my gums are also hurting. Hope after some decent sleep, I will feel a lot better. Unfortunately blood sugars were a bit higher today too, hardly dropped below 5.6 and as high as 6.6 (something I don't normally see a whole lot of) -- I know not really surprising given the way I feel, but still frustrating.

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: One wiener sausage. Chicken cubes fried in a pan with homemade sate sauce (about 6g of carbs per 100g) plus the fried chicken skin (in my opinion the best part of the chicken).

Dinner: Homemade soup with coconut milk, red curry paste, beef stock, oxtail, little beef dumplings, bellpepper, celery, mushrooms, fennel, pumpkin and onions. About two tablespoons of Oppo vanilla ice cream with sesame brittle. Two glasses of red wine, which eventually caused my blood sugar levels to drop below 5.6.

Hi, I love the roasted sprouts, I can’t believe how good they taste. Haven’t tried the Parmesan yet but will do. I have cooked them twice now, once with bacon then tonight with pepperoni.
Some pine nuts through the sprouts are good too.
 
Forgot about yesterday. Bed 6.1 FBG 5.7. Very busy Friday. Usual morning school run then on with the organising for packing. No time for swimming today as both boys had their dental check up in the afternoon and back to mine for haircuts since I had our hairdresser coming. @ziggy_w glad to hear you are feeling better and I hope everyone else that was feeling unwell have now recovered. @jayney27 - have a wonderful holiday. @Goonergal - the jobs I did provided a wealth of comedic moments which was useful in my professional career. Kept you sane!
B. Slice of Tesco high protein bread with pate pate the fruity one.
L. Tassimo Americano grande with a dash of cream.
D. Had what I thought was a safe beef and tomato from the Chinese with beansprouts. Something Very carby was in it - put BGs to a horrible 11.7 but they crashed to 6.4 very quickly. No wonder I felt off. Serves me right for trying a new dish.

Oh dear, I do sympathise, having had some heavy duty abdo sugeries myself last year, with various post op complications.
Not being able to lose the weight especially when eating so little is really rubbing salt in the wounds.
I wish I could offer something other that a virtual hug.

Slightly off topic ... went to supermarket to buy a few bits and bobs for me to snack on and for meals (everyone else in the house is a carboholic) and was amused to see someone with almost the same basket contents as me - steak, chicken (cooked for snacking), nuts, cheese, avocados, salad, blueberries and dark 85% chocolate. We had a half smile at each other and I wondered if I'd caught another LC eater shopping!
