What have you eaten today? (Low carb forum)

not so confident with even some of the new words..braising, saute, etc..and half the FOOD i've never tasted or even heard of before
....so its a real uphill battle..;LoL :hilarious: )

I’ve always liked cooking and baking but you’re right about some of the ingredients, they just sound so strange. It was a very steep learning curve.
 
Hi all. Found myself quite hungry today.

Had lunch a little earlier than usual. M&S Serrano ham and manchego cheese rollitos and a bag of their pork crackling followed by a 45 minute walk.

Dinner was a big juicy ribeye steak. Instead of my usual garlic butter, added some left over juices and fat from the weekend’s short rib. Dessert was some extra thick Jersey cream with almond butter.

2 meals again for me today. Early light lunch was a flaxseed bun and about a teaspoon of cream cheese and a sliver of smoked salmon.
Dinner made up lamb koftas just because I bought a couple of packs of organic lamb mince which were at their sell by and reduced. (Made a DD moussaka for tomorrow too.) had the koftas with green salad, 2 cherry toms, avocado and a bit of grilled halloumi. Thought I had some Greek yogurt but sadly no.
Finished with a handful of Callebaut buttons and coffee
 
Good evening all. Lots of tea and water today then at about 15.00 a slice of Dr Almond still warm black bread and big slab of President butter - very much to my liking. Evening meal same as yesterday - large chicken thigh and avocado salad with plenty of chia seeds.
Highlight today I can walk unaided. Hope you all had good days.
@maglil55 good to know fibre doesn't taste of anything. By palatable I meant something I could recognise as bread and actually eat but I think that may have to be written off.

Thank you, but definitely not stupendous. Its more difficult than i thought. I was so jealous of my dogs when I gave them their dinner this evening - even dog food smells enticing.

I’ve done shorter fasts and felt the same way. Never actually though dog food smelled enticing though - that made me laugh.
 
Lunch, a couple of eggs cracked into bacon fat, smothered in cream and Parmesan with crispy bacon topping - saw it on this thread I’m sure.
Dinner; my granddaughter and I made meatballs. A mix of pork and beef mince, herbs, salt and pepper. Finished off with a topping of melted cheese.
 
I don’t know Dobbies but definitely agree with the other 2.
Is Dobbies a Scottish store? We are coming up in June for a holiday, stopping at Glasgow 1 night so could have a little detour....

There's quite a few in the Glasgow Area. Our one at Melville (which is outside Edinburgh) has loads of things and I'm looking forward to seeing the results of the refit. Their in store food hall is wonderful - right up there with Westmoreland (Tebay services on the M6) which was my overall favourite when running up and down the M6 for work. Although they started as a simple garden centre there's a lot more to them now but they still have the most wonderful plant supplies.
 
Evening everyone. Decided at midday that a 40hr fast would do nicely and so lunch was just a couple of chunks of cheese
Dinner - made beef meatballs with garlic powder in, made a chunky veg sauce using spring onion, red pepper, a couple of chopped tomatoes and some chilli flakes and served it all on lettuce and cucumber with a heap of grated cheese on top

So breakfast was at hospital: I had Greek yoghurt but had run out of strawberries, so risked half a satsuma kindly donated from a fellow patient and only saw a rise of 0.8 at the two hour mark, so happy with that :)
Lunch at home: gouda and chorizo rollitos with cauliflower and broccoli salad followed by Greek yoghurt and raspberries.
Mid afternoon: I celebrated my homecoming with three squares of Green & Blacks ginger dark chocolate with a black coffee.
Dinner: liver and bacon with mixed veggies followed by SF jelly, cream and chocolate granola

I underestimated how hot the jerk marinade is. By a lot. You know that ‘add fat to cool it down’ thing?
Well, there’s a limit to how much fat you can add, and sometimes it is still too HOT.
But in a good way. :D

Hi all busy day today so missed lunch
Breakfast boiled egg and four buttered lc crispbreads
Dinner beef curry and four LC crispbreads followed by slice of lc lemon cake and yoghurt.
had response from Thriva this afternoon - amazingly fast as only posted yesterday pm - re my hbaca1 sample that the blood had clotted so they couldn't get results!!! so looks like it is back to the drawing board on that one. Cholesterol results back though as first test tube didnt clot!! and its up a bit - hoped they would have magically dropped but alas not - but worked out all ratios and all still ideal so will review when get my next NHS cholesterol lipids done in a month. All my life ive never been below 6.5 cholesterol even when eating very very low fat for weight loss reasons ( didnt work of course either on my cholesterol or weight!) so reckon its probably my genetics.
Gym induction planned for tommorow morning - should be interesting as Ive never gone to a gym apart from the odd trial session over the years. Keen to build up my ageing muscles!! Will reward myself afterwards with a swim, jacuzzi, steam and sauna
