What have you eaten today? (Low carb forum)

Day one (of my fast)

My last meal was dinner yesterday. I decided to avoid breakfast today (and am regretting it now) due to wanting to trigger autophagy as soon as possible.

So far the fasting going quite well: It was a close run thing but I managed to survive Mr C's pre-work lunch and him faffing around out in the kitchen making up his normal huge packed dinner for work I'm drinking plenty of water and a couple of large mugs of black decaff coffee which I put some Himalayan pink salt in to.

I've read on another thread that protein can prevent autophagy from being triggered so i won't be having any bone broth or Bovril - just water, fruit/herbal teas and black decaff coffee.
 
@ziggy_w welcome back!! I did go feral on a piece of tres leches cake a few months ago, and spent a week wondering how to make that lc. I finally decided that sweets are just not a thing I should have. 90% chocolate takes care of it for me. The cake, however, was the real deal angel food, and worth every crumb. Another piece next year, God willing!
Went to bed late-ish last night after the “15 minute clam chowder” turned into 2 hours of prep! Slept late too. FBG yikes! Paybacks for late supper and must also be the DP. Circling round the notion of skipping lunch (a pretty big deal for me although routine for many here). We shall see.
CMT is an app called Copy Me That. It lifts recipes from the internet very neatly, so you have them all in one place. You form “recipe circles” with others. Please sign up and we’ll look for you!
Your leg situation sounds like a real pain to manage. It would seem to me that patient observations of improvement ought to count for something!

Thanks so much for the welcome back, @zauberflote. Sorry about your higher fbgs -- might not be anything you did, sometimes I get higher levels without any rhyme or reason.

The clam chowder sounds wonderful -- but does sound as if it is a bit of work. Is it New England clam chowder? How I miss it. What do you put in it?

Definitely have to look into Copy me that. Sounds like a great app.

Managed the 48 hour fast. Briefly entertained the idea of extending it as despite going to bed hungry, woke up feeling fine. However by lunch time it was apparent that food was a good idea.

Lunch was at Nando’s. Two plain chicken legs. And on the house as I’ve built up a stock of reward meals.

Dinner was @Brunneria s eggy, Parmesan, creamy thing with some smoked bacon lardons added along with a sprinkling of herbes de Provence. Definitely a keeper. Editing to add that I fried the eggs in left over fat from the weekend’s short rib. Adds a nice bit of flavour.

@ziggy_w the FBG was due to the extraordinary lateness of my evening meal I expect. I am attempting to skip lunch today. Attempting.
Yep NE clam chowder. I’ve never wanted to make it before but I’ve got a brand new Instant Pot and the recipe promised me 15 minutes. Ha! Cutting to chase, I used celeriac, cauliflower, a little bit of onion, clams, water, butter, butter, cream, cream, and a butter/flax meal roux for the cream. Smoked paprika, bay leaf, thyme, edit to add Worcestershire sauce and would have used maybe a little white wine for deglazing if I’d had any. Mr ZF pronounced it good. The flavor was very good, but not quite yet what I want. It was verrry sweet from the celeriac. Less of that, less water, more paprika, for the next try if there is one. Not cheap to make! And since we go to Cape Cod about 4 times a year, I can save it for a treat and make it the regular way (in a pot on the stove...).
Are you a transplanted New Englander?

Congrats on the 48-hour fast. I've never even come close to this. Is it very hard? Do you get hungry at all? If you do, do you just ignore it?

Thanks Ziggy. This was my first successful 48 hour fast and it wasn’t planned - started with a big lunch that meant I skipped dinner and then wasn’t very hungry the next day so decided to go for it. The only difficult time with hunger was last night - got very hungry later in the evening but by the time I woke this morning that had passed. Was very ready for lunch today. Generally hunger comes in waves and passes if you distract yourself.

Your NE clam chowder does sound delicious, though I agree it also sounds like a bit of work. I wonder if one could use the cauliflower stalks (as replacement for potatoes) instead of the celeriac.

I have never tried roux with anything else but regular flour. Does flax meal work, even though it doesn't contain gluten? I was thinking about binding the cream with egg yolks -- only thing is you have to be careful not to apply too much heat then.

Unfortunately, I haven't ever gotten around to seeing the Northeast. Lived in El Paso, Texas for 13 years and another 5 years in Columbia, South Carolina. Do miss it often though -- the incredible space and freedom quite different from Germany.

Hope skipping lunch won't be too hard. Usually if I keep busy I don't feel hungry leaving out meals.
 
@zauberflote I love the sound of your clam chowder. Its very hard to get good fresh clams here but I guess could be swapped for mussels which are always available.
Yesterday I had one big meal at a carvery at lunch time, roast lamb, broccoli, mashed swede, cauliflower cheese, small amount of peas. Then I didnt eat in wvennf except two squares of Montezumas Orange and Cocoa nib with a cup of tea. This helped my FBG today I believe.
Today I had some one slice HiLo toast for breakfast.
Lunch was cauliflower soup.
Supper is tomato and red pepper quiche (crusts cut off) mixed salad, bibof Wooky Hle cheddar on the side.
@Chook good luck with the fast,huge admiration.
@Rachox hope you are home and comfortable. Well done for getting through hospital food and hope you are on the mend.

Please @maglil55 , i stole the idea for the chicken...sounds delicious,
but the Dr almond bread..i se there are many varieties, did you buy a particular one or did yoiu make your own.

I miss the bread, so am looking into baking some , have not as yet tried any recipes, and wondered if you had and how they compared to the dr almond bread...( probably only need a slice or two a day, so keeping sliced and in fridge would be fine.)

I did grind some rock salt on top and added more seeds on the top. Not cheap but it lasted 6 or 7 days in the fridge in the large Lakeland soup n' sauce bag. Although it isn't cheap the fact it lasts until it is finished, does nothing to my BGs, is a dawdle to make, let's me have a sandwich with 2 slices of bread and tastes amazing was good enough for me.

I also got the baguette/ciabatta mix. Think I said it's not as "holey" as real ciabatta but still tastes good and not a crumb wasted. I rock salted this one too. The next seedy one I'm going to try yeasting/proving and feeding the yeast on inulin to see what that does to the mix.

It's way better than any bread I've made myself (at least with ingredients from the mystical cupboard). I am slowly adding to the mystical cupboard to get all the ingredients to have a go at mixing this myself. They're kind enough to list the ingredients but obviously not tell you the mix. However, I reckon I can have a fair stab at it.
 
Breakfast: Greek yoghurt, strawberries and black coffee.
Lunch: cheese omelette with green beans followed by SF jelly.
Dinner: tuna mayo omelette and side salad followed by Greek yoghurt and two squares of 90% chocolate.
99% sure I’ll be discharged tomorrow, fingers crossed!
 
@Rachox thats a lot of eggs bet you’ll be fed up by time you are discharged! My dad used to say when I was a child if I ate too many eggs I’d get what he called egg bound! Do hope you don’t suffer ! Hope your discharge goes smoothly tomorrow

I managed to fill both test tubes this am from one little finger took about 5 mins max and sent off at teatime so no doubt my results will be online in a few days.
Hungry busy day with a few worries so had three small but comforting and filling meals
Breakfast egg and one slice of lc Hilo bread toasted
Lunch tin of mackerel in olive oil on three lc crispbreads followed by thin slice lc lemon cake warmed with cream
Dinner chicken salad with avocado, lemon mayo, walnuts, mixed leaves, celery and tomato followed by lc lemon and lime mousse with cream, decaf coffee with cream and one 100% choc button.

Evening everyone - know I said I’d be back today to post but no food to report - decided the only way to combat a naughty weekend was to dive head first into a fast so that I’m reset as quickly as possible. Don’t plan on doing one of my extended ones - fasted all day today and will just see how I feel tomorrow
 
@ziggy_w great to see you back again. I certainly wouldn't be happy wearing compression socks full time. Sometimes it's a necessity but I hate the things. @Rachox - would you like a rescue team sent in if they don't let you go? @Goonergal - glad to see the sofa is safely installed. I was thinking about you the other day. There was a question on Mastermind about a woman in London that had walked all the streets for the first Knowledge. Cant remember her name but couldn't help thinking it was you. Bed 6 FBG 6.2. Last day of half term. No lie in had to get ready for Aqua.
B. Tassimo Americano grande with a dash of cream.
L. After aqua - 3 of M&S 97% pork chipolatas, 2 rashers of crispy streaky bacon, 2 mushrooms , 2 small Roma tomatoes, fried egg.
D. Wasnt much hungry. Some prawns, egg mayonnaise, 2 Roma tomatoes, lettuce and avocado. Avocado was hard so dumped most of it and the lettuce. Did gave a little bit of the rhubarb and strawberry crumble though with cream. Definitely too sweet. Need to probably half the monk fruit.
Back to the early starts tomorrow.

@maglil55 you said things kept jumping into your trolley at Lakeland - did you manage to wrestle them out again? If not what did you buy?
@zauberflote I am coming round to your way if thinking that perhaps ‘sweets are not a thing I should have’ sometimes it’s just more sensible to do without.
@Rachox 2 omelettes today! I do hope you get home tomorrow is your OH bringing in extra supplies of Greek yogurt and phd bars?
Just had 2 medium meals today 4 hrs apart 10:30 and 2:30
10:30 after gym smoked salmon scrambled egg and avocado
2:30 (latest I can eat before yoga at 6:15 orherwise I feel ill) baked gammon broccoli and cauliflower in blue cheese sauce
Having peppermint tea now in preparation for tomorrow’s Thriva blood letting
Well done @shelley262 on filling those larger than expected tubes and I hope you managed to sort out those worries you mentioned.
@Brunneria hugs for the medium bad results but yay! For the not terrible. I’ll look up the other thread in a sec.
 
A bit of a late one for me tonight, after my first yoga class in over 3 years. I was extremely rusty with the postures, but boy did I notice how much easy it was being nearly 4 stone lighter! Feeling a bit tired, so struggling to catch up.

@Rachox I imagine you're not going to want an omelette for some time after this! Hope you're back home soon.
@DJC3 Snap....my post yoga meal was the same as your post gym one.
Well done / good luck to those of you fasting. I'm thinking of taking the plunge mid week to try and kickstart my weight loss again.
@jjraak Thank for the choc nut idea! I made a big batch last night, using almond butter (no peanut butter in) and almonds and pecans (toasted first). They are bloomin' lovely, but extremely moreish - I might have to hide them! I also made the mistake of letting them set completely before cutting into chunks, so I struggled to cut into even pieces.

Okay, today was a bit fragmented due to yoga...
Breakfast: Strawberry and vanilla chia pudding with almonds. Black coffee
Lunch: Smoked salmon, avocado, cream cheese and a few raspberries.
Pre yoga snack: Baby bell and a small chunk of @jjraak's choc nut delight.
Dinner: Scrambled egg, avocado, smoked salmon. SF jelly. Decaf coffee

Edit: Forgot to mention that I made a cheesy mushroom omelette for Mr B pre yoga, as he's not keen on smoked salmon.
