I’m doing one meal a day with a fasting day between. Tonight’s dinner was a big bowl of zucchini noodles (I need to get a new spiraliser, this one from the supermarket is rubbish!) with a “carbonara” made from bacon, mushrooms, Parmesan and a drizzle of cream. No egg and with mushrooms so I know not an authentic carbonara, LOL. A generous size bowl but I reckon still under 1000 calories even allowing the big margin of error I’ve factored into my calorie counter app.
Pre meal BG was 5.3, two hours post is 5.3. I’m going to reward myself with a second cup of peppermint tea.
@Chook @Tipetoo Cheese and onion as sandwich filler - you have my interest. Do you mean raw onion, or cooked? Or pickled onion? I may try this if I can ever get my hands on the precious as diamonds “5g carb per two slices” magical wonder bread from ALDI.
This 5g carb per 2 slices Aldi bread has escaped my notice! Is it new? What’s it called?
A day of chaos and mayhem (our two year old twin grandchildren) and their sister (aged 4) Little Miss Pamplemousse.
They breakfasted on milk and porridge- I had tea and then koffy.
After a morning on the beach and a bit of beach combing - collecting treasures - they feasted upon ice cream and flakes - I had two sausages and some mushrooms.
Crazy afternoon in the garden - then dinner - a request for meatballs by the Pamplemousse - two versions prepared - one without spices and with pasta and cheese - a grown up one with lots of garlic, chilli, lemon, stuff like that and a courgette spaghetti.
All the grandchildren now sleeping - merlot time.
A chia and kefir pudding with raspberries and low carb granola for afters.
Then - maybe - a glass of merlot and GOT.
This evening we had our rack of lamb, which had been swapped yesterday (from yesterday to today).
In age-honoured style, MrB was Head Chef, with me his Comis, so having prepped the veg and sorted out tomorrow morning's early morning baking, I was a bit nervous to see the magnificent little rack smiling at me, thrrouogh the airfryer door window.
Uh-oh, thinks I. I wonder how that'll go. That's not going to be the usual low and slow cooking.
I have to say, it was absolutely delicious! Oh, me of little faith. I hung my head in shame.
It went in on the meat setting (pre-set 185c), for about 25 minutes.. The fat was beautifully rendered and just a lovely pink on the inside. Another triumph for MrB.

Gorgeous day.
Dog No 1 wilted in yesterday’s heat (at 11am) so much he had to be carried home from walk. He isn’t v stoic, and nly weighs 4.5 kilos, so not too traumatic.
So today we walked at 9am.
Then gardening.
Then a lovely relaxed afternoon of reading.
B: none
L: brinjal cream prawns followed by the 2 smallest surviving profiteroles.
D: chicken curry on oomi noodles. Very nice, but i cankt accept curry and noodles as a good idea.
Hope tonight is calmer. We live in a town, and the last few nights have been noisy with some drunken idiocy on the streets. Arguments, soul searching, relationship breakups, and some absurdity last night when a car was driven up a curb and knocked the front left wheel so far out of alignment it was wobbling and scraping the wing. Expensive night out, eh?
Sounds delicious. I think rack of lamb is best served pink in the middle. I am beginning to regret my self control in not pucking up the Airfryer in Lakeland last week.
