What have you eaten today? (Low carb forum)

Just had my lunch after a 22 hour fast - well sort of. I had some nuts last night before bed after gym, was feeling very peckish.

My main meal was around 1-2pm yesterday and I ate at 3pm today. My PRE eating BG was 4.8mmol.

I had:

3 Salmon Fillets, marinaded in crushed chilli, pepper, herbs, butter. These were fried in some Ghee.
A good amount of greens
Feta cheese
Salt, Pepper, Olive Oil, Vinegar on the greens as dressings
Mayo
Tabasco
Nandos Chilli Sauce HOT

Also had pepper on the fillets after fry

To finish off, I had half a biscuit:

so around 9 grams in carbs. Brother got me a pack and I couldn't resist, even though I said I can't have it, can't be rude... My main meal was very low carb anyway.

Relaxing now with a can of diet coke - of which I need to stop too...
 
And ANOTHER beautiful day!! Breakfast out in the garden again. I might have to re-think it though because the garden table and chairs are comfortable but low and the table is coffee table height... so whatever I'm eating us the perfect height for the dogs.

Breakfast: Boiled eggs and crispbread to dip in the yolk - a couple of strawberries (note to self: don't buy Asda strawberries cos they are tasteless and go off quickly) and a whole pot of decaff to myself
Lunch: just a medium chunk of Wensleydale with cranberries, kefir and a couple of Montezuma chocolate buttons
Dinner: roast lamb, sprouts, broccoli, cauliflower, a few bits of carrots and just one roast parsnip, gravy, h/m mint sauce
Dessert: more of those tasteless Asda strawberries disguised with some Turkish yoghurt
Drinks: decaff coffee, more decaff coffee, still spring water and red wine with dinner
 
@Chook the picture in my mind of the dogs vacuuming your table is priceless! Thanks for the giggle! I could have eaten on the porch but was feeding cats (their food, to be clear...) and then emptying dishwasher. The remaining young mother in me can't stop multitasking around food!
Bfast new usual cinnamonnom chia pudding made with soy, egg, 3 daring olives, DWC.
Lunch 1 sq 90% chocolate bc between the pollen, short night, and my physically heavy/droopy eyebrows, I am feeling half asleep at all times! There is a surgery for that but an ophthalmological surgeon told me 5 years ago he wouldn't do it bc shortening the muscle of the eyelid would cause the eyes not to close fully at night and infections would result. I didn't ask him to shorten the eyelid! It's the eyebrows that are falling into my eyes! Ah well.
Supper will be a two-parter or VERY early meds. Something portable for driving, maybe a spinach eggy cheesy muffiny thing cos the spinach has got to get eaten. And a flax muffin. Had butter with last night's, but not seeing how that would be tidy for the car. Ok, spinach eggy cheesy flaxy muffiny thing? I guess I'll go try that now!
 
A day of chaos and mayhem (our two year old twin grandchildren) and their sister (aged 4) Little Miss Pamplemousse.
They breakfasted on milk and porridge- I had tea and then koffy.
After a morning on the beach and a bit of beach combing - collecting treasures - they feasted upon ice cream and flakes - I had two sausages and some mushrooms.
Crazy afternoon in the garden - then dinner - a request for meatballs by the Pamplemousse - two versions prepared - one without spices and with pasta and cheese - a grown up one with lots of garlic, chilli, lemon, stuff like that and a courgette spaghetti.
All the grandchildren now sleeping - merlot time.
A chia and kefir pudding with raspberries and low carb granola for afters.
Then - maybe - a glass of merlot and GOT.
 
I’m doing one meal a day with a fasting day between. Tonight’s dinner was a big bowl of zucchini noodles (I need to get a new spiraliser, this one from the supermarket is rubbish!) with a “carbonara” made from bacon, mushrooms, Parmesan and a drizzle of cream. No egg and with mushrooms so I know not an authentic carbonara, LOL. A generous size bowl but I reckon still under 1000 calories even allowing the big margin of error I’ve factored into my calorie counter app.

Pre meal BG was 5.3, two hours post is 5.3. I’m going to reward myself with a second cup of peppermint tea. :)

@Chook @Tipetoo Cheese and onion as sandwich filler - you have my interest. Do you mean raw onion, or cooked? Or pickled onion? I may try this if I can ever get my hands on the precious as diamonds “5g carb per two slices” magical wonder bread from ALDI.

This 5g carb per 2 slices Aldi bread has escaped my notice! Is it new? What’s it called?

Lunch none as we on the spur of the moment booked a river cruise and the only slot free was across lunchtime!
Mid afternoon at a coffee shop: a small cappuccino and a raspberry PhD bar
Dinner: chicken supreme with peas and sweetcorn followed by SF jelly, cream and LC chocolate granola

GOT for me too - I am already dressed in my dragon onesie to Mr C’s dismay.

Sounds like you are having a wonderful time with the grandchildren.
 
Evening all. It’s been a day of using up leftovers for me. Breakfast just CWC
Lunch black coffee after swimming ( trying to wean myself onto black as I’m going through too much cream I think)
Mid aft: leftover bbq chicken skewer (3 bits chicken, red pepper, courgette) with mayo and Tabasco. A few almonds then a bit of my HC 100% dark Easter egg.
D: leftover roast lamb, leftover cauli cheese and some fried mushrooms. A litlle Stilton and glass of Malbec afterwards.
 
This evening we had our rack of lamb, which had been swapped yesterday (from yesterday to today).

In age-honoured style, MrB was Head Chef, with me his Comis, so having prepped the veg and sorted out tomorrow morning's early morning baking, I was a bit nervous to see the magnificent little rack smiling at me, thrrouogh the airfryer door window.

Uh-oh, thinks I. I wonder how that'll go. That's not going to be the usual low and slow cooking.

I have to say, it was absolutely delicious! Oh, me of little faith. I hung my head in shame.

It went in on the meat setting (pre-set 185c), for about 25 minutes.. The fat was beautifully rendered and just a lovely pink on the inside. Another triumph for MrB.

Gorgeous day.
Dog No 1 wilted in yesterday’s heat (at 11am) so much he had to be carried home from walk. He isn’t v stoic, and nly weighs 4.5 kilos, so not too traumatic.

So today we walked at 9am.
Then gardening.
Then a lovely relaxed afternoon of reading.

B: none
L: brinjal cream prawns followed by the 2 smallest surviving profiteroles.
D: chicken curry on oomi noodles. Very nice, but i cankt accept curry and noodles as a good idea.

Hope tonight is calmer. We live in a town, and the last few nights have been noisy with some drunken idiocy on the streets. Arguments, soul searching, relationship breakups, and some absurdity last night when a car was driven up a curb and knocked the front left wheel so far out of alignment it was wobbling and scraping the wing. Expensive night out, eh?

Sounds delicious. I think rack of lamb is best served pink in the middle. I am beginning to regret my self control in not pucking up the Airfryer in Lakeland last week.

We've been getting a bit of that kind of stupidness, too. We'd hoped that since our last next door neighbour moved away (the one with the idiot boyfriend who'd tried to kill her after they split up) that we'd have more peace on warm evenings, but obviously not. Yesterday evening Mr C was working lates so there wasn't a car parked out the front. There was a lot of shouting and running around type noise going on out the front, similar to your noisy idiots, then about 10 mins after it went quiet someone tried the front foor. Jack (dog) started barking madly so it wasn't a neighbour or anyone he knows and whoever it was ran away. It was probably teenagers... but was worrying.

We need to experiment a bit more.

Last night, we did some leftover (well, saved from an earlier meal) uncooked gammon rind, which made the most fabulous crackling.

MrB goes off in the morning to play in a golfing competition, so I have a few days left to my own devices. I intend to do some more Moo Grob, using thick uncooked gammon slices. Boy, was that delicious last time!

Another lovely warm day but gather from forecast only one more day before go back to usual uk wet and cool!
Breakfast scrambled egg with one slice of bacon
Busy and full so no lunch just lots of black tea.
Dinner beef short rib with cauliflower cheese and glass red wine followed by small piece lc choc cake and double cream.
 
So, August weather at Easter - all good. Good Friday (Julie's birthday) barbeque/barbecue in the sun hosted by No 1 son (and wife) and 2 grandchildren plus No 3 son and his wife (last month of pregnancy). 6 yo Grandson had written a menu and greeted us at the door to welcome us to his restaurant. Saturday and Sunday just tea and water plus drive to Southampton to see No 2 son (and wife) and 2 granddaughters. Monday I should probably have just continued the fast but 63 hrs left me hungry - didn't much like the food. Hotel breakfast - bacon, egg, mushrooms and some tomato not good really. Lunch was Five guys bunless burger - not something I will repeat. Quote on the wall from Evening standard said the burgers were succulent - tender, juicy, and tasty - mine was definitely not. Hope you all had a great Easter

BG 4.4mmol, after gym. I tested 2.5 hours after my meal and my bg was at 5.2mmol. Now it's 4.4mmol after a rigorous gym session. Still fasting, had no solids since 3pm, fasting until around 3pm tomorrow!

Ending the night with a cup of tea.

@ianpspurs I am So Glad somebody else has the same opinion of Five Guys as I do! We were on a car search in Washington DC a couple of years ago, no go on car, had to wait for traffic to clear out so visited National Cathedral, which had progressed by nearly 30 years since the last time I'd been in it, then ate at 5 Guys. No fish so either I had chicken if available, and definitely had the deep fried onion flower, which had been a must-eat at the State Fair for many many years. It Was Abominable. I have never eaten so much nearly-rancid fry oil in my life. Couldn't eat much of it and felt sick all night. At least there were not-too-bad complimentary roasted salted Virginia peanuts-in-shell on the way out.
So, here's supper. I waited a minute to take the pic, and they all fell to half their height, waaahhhhh. IMG_8109.jpg
Don't know what to call them. Spinach swiss/parmesan flax EVOO egg white mini, um, quiches? Muffinos? Muffalini? No, sounds bad. Quiche Muffinini? Join the fun! Make up a ridiculous name! Half of all profits (with only 10% having to be declared to your IRS) go to best wordsmith!
