Can’t quite believe it but bridge still closed with river Severn on the rise yet again! Predicted to peak yet again in a few days so all barriers staying in place and bridge remains shut. I’m pleased we at least have protection from the flood waters though, so looks like another week of much more complex caring visits for me via the very roundabout congested route- wish rain would go away and Spring would arrive. Had fooled myself when working in garden early pm with sun out and looking at the bulbs emerging that things were turning round and then saw the environment agency warnings! Now half term is over from tomorrow the roads are likely to be more complex. Still it’s the price to pay for living close by to a glorious stunning and mature river - which we love.
Breakfast one slice of bacon and egg with half a toasted chaffle
Lunch veggie soup - last remaining portion
Dinner @Goonergal took your advice and reverse seared the steak today it definitely improved it. We bought some steak in a flash sale a few weeks ago and the other piece was tough so gave it a go today!
Reverse seared steak, halloumi chips, mushrooms, hm lc coleslaw (@Antje77 added horseradish wow wonderful didn’t add much in quantity but this small amount added great piquant taste thank you) and hm avocado,walnut and celery salad. Glass of red wine. Pudding lc raspberry sponge with yoghurt.

I think it is currently iPhone only. I'm sure I read they are working on the Android version. What I do currently is keep an internet tab open on the week I'm on so I can access the recipes/list etc.

Yes you’re right it’s iPhone only atm I forgot.

Horseradish is one of those things I use almost every day for a couple of weeks and then forget about it again for a year. Only to rediscover and wonder how I could've forgotten :)

Did it! Cooked the scary meal and it turned out fine, no fire or explosions :)
Moo grob with a quick spicy dipping sauce of soy sauce, another Indonesian soy-based hot sauce, some grated ginger and a little nutritional yeast, with snow peas cooked in lightly salted water and served with butter.

It tasted very good but I won't be cooking it again until I've fallen for the airfryer, I didn't enjoy being scared while cooking :hilarious:

Too bad I'd already put the cutlery on my plate, it turned out to be perfect finger food. I mean, if you eat chips with your fingers, why not snow peas? Now I have to remember to take the dirty cutlery to the kitchen again, and I didn't even use it! :banghead:

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: roast lamb, one small roast potato, one small roast parsnip, mixed veg and gravy made from meat juices thickened with flax, followed by SF jelly, cream and LC chocolate granola.
Mid afternoon: raspberry phd bar and black coffee.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake :hungry:

End of half term... this is the point where I dream of early retirement... or a stupidly rich husband... although that would mean getting rid of the current one!

Lots of work done today. Lots of planning, resource collecting and emails. I've had a nice week, lots of running around after teenage daughter as she did dreadful teenage things like go to the theatre, museums and drink tea in nice tea shops!
In between I have done some nice things for me, one of which is just being by myself for a bit!

Breakfast bacon sandwich - hovis now does a low carb bread at 10g a slice.
Coffee and tea!

Lunch- not really, had some of the peanut 'cookies' I make, although forgot the 3 dates that I mush to give it a little sweetness. (That is split between 20 or so little biscuit things)

Dinner - chicken in a miso sauce thing that husband brought back after work that had a good old yellow sticker on it and roasted brussels and broccoli.

Not looking forward to the alarm tomorrow!

Today, slow day at home.

Breakfast: Two double decaffeinated espressos with cream and erythritol. A chicken meat wiener sausage.

Lunch: A bit of h/m soup (green beans, white beans, oxtail and beef). Another chicken meat wiener sausage. 25g of 85% chocolate. A tablespoon of h/m low-carb chocolate mousse.

Dinner: A DD keto roll made into flat bread topped with creme fraiche, spinach, garlic, olive oil, gorgonzola and baked in oven. Another DD flat bread with butter.

Two glasses of dry red wine throughout the day.

I think it would work with any piece of meat with a bit of fat on it which doesn't need hours to get tender. What about moo chicken (skin on!) or lamb grob?
Pretty sure it would be delicious, even if not the same as with pork.
Let us know how it turned out when you try :)

I don't think there's enough fat on chicken, as perhaps from thighs meat, but even that's could become quite dry. It would definitely work, to an extent with lamb breast, but there's no skin there for the ultimate crunch.

How do you buy the konjac? I've only seen konjac noodles, this must be something else.

Chinese/Asian supermarkets sell konjac products in various forms, and colours. To be fair, it's usually clear or green, but I have seen a sort of pinkish hue.

Those are daint pieces of pork. Mine are usually about 2cm x 2cm x 3cm tall?

We don't deep fry in our house either. The closest is about 1cm in a small milk pan to crisp sage leaves to go with very, very garlicky pork chops (a la Raymond Blanc's Mama)

Today :

Breakfast : parfait ( with strawberry and greek yogurt and LC clusters ) .

Lunch : cauliflower pizza again ( loved it so much ) . A picture of my pizza attached .

Afternoon snack : cheese , a few cherry tomato and cucumber and one strawberry

Dinner : not feeling hungry . I’m a bit sick . Might be a kidney stone .

@Antje77 : I love your sheep mug ! So cute .

Ordered some keto chocolate cookies on amazon since they had good reviews . Missed having cookies with coffee.

I have so many coffee pods of different flavors that they no longer fit in my apartment. Today , I have been organizing them . There is this brand of Australian coffee that I missed. It is called glories jeans . When I found out you can buy them in US, I bought lots.

Long day, tough day, busy day. Nervous about diabetes specialist appointment and HBA1C results tomorrow, going to ask for a lactose intolerance test as I have narrowed down my stomach reactions to diary and lactose, this morning was the most milk I consumed at one time, and the results were explosive to say the least.

Breakfast: 54g rolled oats cooked in water, 67g blueberries, 170g full fat greek yoghurt, 3 coffees with 0.75cup of whole milk spread throughout them.

Snack: two sugar free red bulls

Lunch: Blue Dinosaur cookies and cream protein bar as I was catching busses, 4 peices of sugar free gum

Dinner: 200g carrot cabbage coleslaw, 111g left over pork roast, 105g tomato, 90g cucumber, 60g baby spinach, about 60g butternut cauliflower mash, 20ml salsa, mustard, salt, pepper.

MrB won't have a conventional fryer in the house. His wife (he is widowed) was badly burned using a deep fat fryer, so he's understandably anti them. Hence we have the air fryer.

It'd be worth having a try with almost any fa tier meat, but the crispy skin or a bit of a crust at least is part of the huge win.

You need an airfryer in your life m'girl.

Disrupted day in which my food was largely irrelevant. Julie has the weird virus hitting many in this family. Lurgy like but with conjunctivitis for some including youngest GD. Then DIL told to go to hospital at once - ongoing issues with platelets. I needed to collect grandson from school, feed, change, deliver to Beavers - he navigated expertly - collect and feed again. My intake has been tea with lacto free semi-skimmed (shortest date first, rule) - 20 gms chorizo as v hungry midday. Hi-lo chicken + small squirt mayo sandwich, 20 gms rocket and CWC 2.30. Evening will be some version of crispy omelette. Main focus today is safety and happiness of grandson, DIL being looked after and Julie's eyes getting better. I'm chief cream putter inner.
