What have you eaten today? (Low carb forum)

Certainly no need to throw it out if you can just buy one of those for 3 euros!

My oven is an ancient gas oven, at least 70 years old, so no other way as the numbers must have worn off long before I was even born. :)

Yes - I found one of these amongst some kitchen stuff Neil brought down from the loft. It does give a rough idea of the temperature, but as soon as the door is opened, the temperature drops a bit. Still, it does back up my estimates - approximately.
 
Son has tested positive now but, apart from a slight fever, runny nose and slight headache two days ago, he says he feels absolutely fine. Both DIL & grandson are fully recovered. DIL even went for a New Year wild swim with her swimming group yesterday morning. They all tested positive before Christmas Day but all feel fine.
Had to laugh. I did change it but autocorrect had "and slight headache" as "and slight gendarme"!! No idea how it managed that.
 
Looks like an OMAD day here.

Large mixed ‘grill’ (food was either air fried or conventionally fried) of home made burger, topped with streaky bacon, pigs in blankets made with Waitrose 1 free range Cumberland sausages (0.8g carbs per 2 sausages), eggs and lamb chops. Stars of the show were the lamb chops, but it was all pretty tasty.

@Goonergal, thanks for the tip. I have some John lewis vouchers to use up plus I am feeling bored with the rather narrow range of low carb foods available to me. It's years since I ate a sausage, time to experiment. (Especially as the Waitrose pigs live their whole lives outdoors.)

Just be sure to pick up the right Cumberland sausages, there’s another Waitrose own brand of them with considerably more carbs.

I forgot your DIL was a wild swimmer too - I went at a nearby beach, quite choppy but very bracing and a great way to start the year.

Not sure how this loaded twice. I know my wifi connection is a bit dodgy, so that's probably something to do with it.
 
My nut habit returned over Christmas and although nothing technically wrong with nuts - good nutrition -but at about 13g of carb for mixed nuts per 100g it’s easy to bump up carbs if not careful so went on research hunt for lower carb alternatives and came up with a winner and keeper for me of pumpkin seeds which are only 1.3g per 100g and you get lots for 100g compared to nuts ! I dry fried them in a heavy bottomed frying pan for a couple of mins until they popped and started trying to escape the pan. I then added seasonings you can use your preference but I chose celery salt (ground celery seed and salt)and sprinkle of ground pepper - yum. They can be roasted in oven for a few mins if prefer but you need to watch as burn quickly. Toasted pumpkin seeds will feature in my daily food record from now I’m sure mainly as lc nibbles and or in salads.
Lunch three eggs scrambled in butter with half a hm lc buttered roll followed by yoghurt and a few raspberries
Mid pm lc millionaire shortbread and a few pumpkin seeds nibbled - for testing purposes only !
Dinner roast chicken with roast veg and glass of dry white wine followed by lc Christmas pudding- my last one very tasty and less than 2 g of carbs .
 
No breakfast as straight out for a walk before the rain
L: scrambled eggs with smoked salmon, avocado and bacon. Boys had theirs on muffins. Small slice tiramisu panettone - its him indoors birthday
D: toad in the hole, hubbys birthday request. Flour batter for the boys, a low carb alternative made with arrowroot for me. Did it the Delia way with sliced onions and fresh sage in the batter. Roasted cauliflower and gravy
1 macaron, 2 profiteroles
That's the last of our birthdays in Christmas 12 days so hopefully normality will resume soon
 
Leftovers with leftovers!

A small bowl of yesterday's leftover soup, and leftovers from new years eve.
It suddenly hit me that if I'd just cut a slice and a half of low carb bread in very small pieces with different toppings, it would be no less festive than having crackers with the same toppings! :happy:

I also finally remembered to take the boeuf bourguignon from the freezer. That was my planned meal for both yesterday and today, but I don't like tricks to thaw quickly, that's why I had the improvised soup yesterday and today's party for one!

Hi what white wine do you drink and how many carbs does it have please?
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a gingerbread Carb Killa bar.
Skipped lunch.
Mid afternoon: black coffee and a DGF mince pie
Back to normality with Sunday tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!
 
TAG - Tassimo Americano Grande. Large Tassimo black coffee (sometimes with a dash of cream). I suppose that would make it TAG/DOC?

DGF just do cakes, brownies and cookies but if you’re looking for savoury stuff try The Low Carb Food Company. I have been buying their low carb sliced bread and bread rolls for a while now, but I bought some of their other products for Xmas. I had the pork pies, sausage rolls, cheese and tomato pizza and rosemary and sea salt focaccia. All nice for a treat and are no different to the real things, but very expensive:

It is the bread, specifically toast that I crave. I have tried making with almond flour and flaxseed, but it gives a rather heavy texture.
Will try your suggestions.
