What have you eaten today? (Low carb forum)

Is oat meal with raspberries and cream ok
It might be OK for you to have a little. For me it would be disastrous but we're all different. The only way to tell is to test BG before eating and at about 11/2 - 13/4 hours after. That would give you some idea. Even so, the effects might be different on different days, so it would bear checking more than once. A lot of people find that a few unsweetened raspberries are fine. I probably would, but to me the oatmeal would be the killer!

Cream should be OK for most people.

Do test but would not work for me - it’s too high carb. I use pure oat fibre in my baking like my crumble recipe which is 0g of carbs as it’s not digestible and works for me as a replacement flour type ingredient - or you could always just stick to a few berries and cream or full fat yoghurt.

This weeks included the one in photo a Mediterranean peppers and artichoke one which I have frequently happily kept in fridge for a couple of weeks and any left over olive oil has been used up in salad dressing. Start by charring peppers of various colours. I put in oven at fan 180 high and put peppers on a tray and cook for 20 mins - if roasting meat for dinner like today it’s good timing as need oven hot for meat. I then put peppers on tray to one side to cool. when completely cool you can take skin off and separate flesh from the core and seeds then cut into strips and put to one side. If liked - drain a can of cooked artichokes in brine and slice. Peel a few cloves of garlic and drop into jar using with some sprigs of basil.i also used a few slices of fennel root as like the flavour. Then add a good dollop of vinegar to jar - I use live apple cider vinegar and twice as much again olive oil add the veg and mix.’ Seal’ the jar with a sprinkle of sea salt and olive oil before adding lid. Pop in fridge and will be good for at least two weeks adding a touch of low carb sunshine to your meals.

Food today
First thing a few spoons of hm yoghurts with my supplements
Lunch two egg omelette with mushrooms cooked in butter served with a few spoons of hm sauerkrauts and salad followed by a few berries with hm yoghurts.
Dinner roast chicken dinner with cauliflower mash and a few batons of organic carrots as well as a couple of glasses of dry white wine followed by hm lc rhubarb crumble with spoon of hm yoghurt.
 
ah ha, the actual challenge @maglil55 was dealing with the pitying looks and lack of understanding that eating 'our' way can put your diabetes into remission! There was lots on the menu I could work with...

I had a starter for my main course, a selection of cured meats, marinated peppers, artichokes, french beans, buffalo mozzarella. A gin and tonic and a coffee. Then, having skipped the pudding, some strawberries and cream I'd brought with me to eat back at the in laws (only to be offered a slice of Victoria sponge cake)!:banghead:

I've given up explaining how this diabetes thing works......:(

Tori, my way of dealing with the queries around diet were to say I'd had some blood tests done, and it looked like some of the things I'd been happily eating weren't doing me any favours, so I'm avoiding them for the time being.

After a very short while it's just accepted that's how it is, and the fact I've never gone back to some "stuff", if queried, has met with the response that my bloods showed a marked improvement, and I felt very well, so I'll just stick with it.

I haven't had anyone make too much fuss about it. The odd raised eyebrow is their own to deal with.

In terms of us today, we've just had the most incredible roast beef. I have to say, my OH makes a delicious roast.

Thank you, I had read somewhere large rolled oats where slowly absorbed and ok for type 2 diabetics In fact I had a keto no carb high fibre with coconut flakes cereal from Costco fresh blueberries yoghurt with some whip cream
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Atkins coconut bar.
Skipped lunch.
Mid afternoon: black coffee and DGF millionaires shortbread.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!

Can I ask, are the m&s crackers g/f? I fancy trying them!
I'm afraid not. I buy 2 kinds. Crispy Cheese and the Weaten crackers. Both have gluten. I buy them as they are only 2.5g carbs each. Usually I'll have 2 or 3 which was very doable when I was barely eating.
 
At least you seem to be a little bit better, but it is going so slowly. I do hope you feel a lot better very soon. Cold sore - not only big but painful. You need lots of hugs from your nearest and dearest, along with a good deal of TLC.
I do feel a bit better. Still weak but thatvis sorting itself as I eat again. No one wants to get too close to my cold sores! I can't blame them.

I have a face full of cold sores , too, at the moment. You have my sympathy @maglil55 . Most painful first day or two. Mask wearing hasn’t helped, but at least they are hidden from view when I go out of the house.
Have been fasting , and intermittent VLCD, since last week, but today my one meal was baked haddock with lemon mayonnaise, and chestnut mushrooms. Copious quantities of mineral water completed the repast.
 
Cheese on low carb toast for breakfast.
Nothing to ear or drink for smoko.
Sand crab meat, prawns and mixed salad, last of the pineapple jelly for lunch.
Homemade fish cakes for supper at six.

Six pepper crackers with cheese and vegimite on the them watching Carnival Row.

I never get questioned either. I always tended to eat meat in an Italian plus I tended to be a veg or salad person. I was also known to be very fond of shellfish or an antipasto to start.
I spent a lot of time in Italy when my sister was alive and I always said eating pizza and pasta in Italy spoiled it for anywhere else ( plus I could make it better myself).

That's how I feel too. The masks don't help but at least the darn things are not on display. I empathise. Mine are at their most vile today so the cream is working.
 
Brunch. Hubby had bacon, fried eggs, baked beans and tomatoes. I used the same ingredients to do a crispy cheese coated bacon omelette with half a tomato on the side. Skipped the beans. Was very tasty and filling.
Spent the afternoon at a yoga and relaxation event. Lovely.
Walked into roast chicken, cabbage carrots and broccoli cooked by hubby. He's not as good a cook as boy is, yet , but he tries hard.
2 squares cinnamon cake with cream and a large glass red.
Not bad for a Sunday
 
Saturday bed 4.6 FBG 4.9. Apart from running the boys to jujitsu with Mum, I just rested, had a shower and rested again.

B. Just water.
L. Very early, 3 M&S crackers with Philly.
Later, 6 very large cherries
D. Slice each ham, roast beef turkey, mortadella, coronation chicken and ox tongue. Coleslaw, bit cheese, waldorf salad. Couldn't finish it.

Still just drinking water.

Today. Bed 6.9 FBG 6 3

Took youngest to swimming and I managed the walk to the pool and back without breaking into a cold sweat.

B. Water and 3 M&S crackers with Philly.A peach & turmeric Kefir shot.
L. After swimming lessons, 2 slices SLC toast with egg and a 1/2 pack of M&S pancetta crisps.
D. Yay! I managed my campari and soda.
Baked gammon, carrot and swede mash and cauliflower mash. 1 plum. The plum was a M&S plum - very large and very delicious.
 
As promised, a picture of the 'zuurkoolspek' as it looked when I took it from the fridge today, after cooking it in water yesterday. Of course I had a piece of it as it is while cutting some slices for the picture. :hungry:

Below a picture on how I used it in my evening meal today: a couple of slices fried together with some cubed bacon, and a slice simply reheated on my plate of zuurkoolstamppot in the microwave. Yum!

Looks fab. We have something similar here which is usually in the ‘Polish’ section of the supermarket. Some are smoked and some not. Going to try one after seeing this.

In other news, whisper it quietly, the M&S food hall in Canary Wharf is very well stocked with ‘the’ crackers! Yes, I may be open to bribes. Decided to buy a box of each to experiment.

Yesterday’s food was an extended OMAD. Course one was 4 of the cheese and onion variety of the crackers with butter. Could definitely taste the cheese (in a cheese and onion crisps kind of way), but don’t think the crackers are tasty enough to warrant eating alone with butter.

The main course was 2 ribeye steaks and 4 Halloumi fries. Yum.

BG a bit on the high side today. All the same I had the end slice of my wholemeal loaf toasted with a banana squashed onto it for breakfast.

For 2nd meal, I will have some mushroom fricasee out of the freezer - that'll be one less thing taking up space in there. Not much of a noticeable space left where it was, but it's a start.
 
Change of plan. Not sure yet what I'll eat today, but it won't be more of my lovely zuurkoolspek.

I found the butter on the kitchen floor this morning, must have forgotten it on the countertop after cooking yesterday. I was very surprised not more of it had been eaten by the cats and dogs and counted myself lucky.
Until I noticed this little white and blue plate sitting innocently and squeaky clean on the countertop...

I guess after eating this much pork belly there simply wasn't any room for butter left in the bellies of my dogs and cats. :bag:
