What have you eaten today? (Low carb forum)

I use either a flat rectangular plastic box, like takeaways come in, or a for a roll shape a pot that contained ricotta or marscapone for example.

I couldn't quite remember the original measurements so always wing it, and it mostly works.

Melt some butter in the container and set aside.

In a blender or processor or whisk or fork, mix together most of a tin of tuna (having set aside rest for the cats ;)), a large egg, a tablespoon of milled flax or chia seed and about half a teaspoon baking powder. Add seasoning to taste (dried seaweed useful here :cat:).
Pour resulting gloop into buttered container.
Cook in microwave for 90 seconds, check if still runny in middle repeat 30 second bursts until cooked and looking like wholemeal bread.

Some people let it cool then use like bread (apparently it can be toasted) but I'm always too impatient, and then slices of cheese added on top melt in straightaway and taste great.

Recipe can be adapted and if you don't have (or don't want ) tuna can use 3 tablespoons of milled seeds, or ground almonds, or a mix of both
Can also add grated cheese to the basic mix before cooking.
It is really quite adaptable, just don't expect it to be the same every time.
It just nice to have something quick and warm - but it does use a lot of utensils

Do you think it'll work without the milled flax/chia seeds? Never used those and next shopping day is friday, and I do have everything else...

Cats and dogs approve of your recipe as well, step 2 sounds like a non-skippable step. :cat:
 
Back to the subject of yesterdays chicken thighs - I took the skins off as I didn’t want them in the curry sauce, I put them on a plate in the fridge until I decided what to do with them. Serendipity decreed that I listened to a UK Low Carb podcast with Carl Franklin ( two keto dudes) this morning and he said he uses chicken skin as the wrap for spring rolls. He deep fries them but I used the airfryer to cook them. Rolled the skins round leftover brisket and h/m sauerkraut. They were fab ( right up your street I reckon @Goonergal) crispy on the outside moist and delicious inside.

Stuck indoors today, snowed in apart from taking Dennis out so there was some boredom eating. ( another thing I got from the podcast was a Japanese saying “I’m not hungry but my mouth is lonely” perfect description)
Nuts, brie, DGF cake few more nuts.

Those "spring rolls" look fab. I WILL be doing that.

MrB batch cooks a decent curry, which now tends to be our Saturday night option when at home. I usually buy chicken breast which is almost always skinless, but will be changing my ways forthwith (aka as soon as we get home).
 
Yesterday: Brunch: a big avocado

Dinner: vaguely Mediterranean brew of small amount of leftover chicken cut small, with aubergine, green tomatoes, two spring onions, a pepper, courgette, garlic, vegetable stock cube, knob of butter, olive oil, paprika, juniper berries.

Brunch today will be lumpy soup, and dinner will be my famous fish pie with thinly sliced leek and cheese topping.
 
First experiment with nori, in my aim to increase my iodine intake a little.
I had planned to go to the sea to see if I could find fresh seaweed but the weather is foul so the sea can keep her seaweed today.

The idea was to make some sort of cracker by spreading hummus between sheets of nori and baking it.
Tasted great but it was definitely not a cracker, soft and chewy.
Someone on Facebook advised this but didn't tell how thick to spread the hummus or how long in the oven at what temperature. The side of the nori I spread it on might have made a difference as well.
Still, fun experiment resulting in a tasty seaweed thing. :)

Can't cope with the idea of seaweed since the day, in Japan in 1965, when we caught a bus going to a kind of tourist spot and when there we bought, as a snack, a bag of small biscuits. They were about an inch square and very shiny. We expected them to be sweet. They weren't. The taste of seaweed was so strong! I haven't been able to eat any seaweed dish, other than agar used as a thickener, ever since.

Breakfast was a bowl of mushroom soup.
Had lunch today. It was a cold chicken thigh.
Will have a third meal today. It will be more chicken in the stew I'd cooked it in - just chicken thighs, an onion, a carrot and a stick of celery.
 
Eaten quite a bit today.

Meal 1 was assorted deli meats followed by a few Montezuma’s buttons.
Meal 2 was fathead pizza with chorizo and Spanish salami followed by ‘lazy mousse’ made with double cream, cream cheese and some of the Moser Roth 90% chocolate. The cream and cheese improved the chocolate no end.

Started day as usual with a few spoons of kefir with my daily supplements
1ish wanted fried eggs on low carb toast but am trying to eat at least one meal with some fermented veg. And didn't like idea of them together so had a three course lunch started with kimchi mixed with some very mature Shropshire blue cheese,then eggs and then one baton of 100% chocolate
5ish hunters chicken thickened on hob with addition of dash of cream and knob of butter pudding LC blondie with spoon of yoghurt

Wednesday 18 January bed 7.9 FBG 7.5. Boys here for dinner. All a bit rushed as I had to get the eldest back to school quick after lunch as DIL had a hospital appointment I had to get her to. Then rush back to collect boys from school, all while giving Hubby cooking instructions. Still very cold.

B. TAG and a bit warmed crustless quiche when I got back from the school runs. It's too cold to eat it cold.

L. Nothing - too busy going here, there and everywhere.

D. GF Haggis. CC little chocolate pot. I just had a longing for haggis. Will probably have it next week too with neeps and cauliflower mash.

I'm debating whether to have a gin and zero lemonade.

@Riva_Roxaban hope your infusions gave you added vim and zest. I recall my brother always being perky after his "infusions" although he decreed an infusion of Highland Park would be even better
 
Breakfast: ff greek with seeds and some plum compote found the freezer.

Then off for a doctors appt. Got there early, was seen early and was back home before the original appointment time!)

Then a day out doing a couple of errands and fitting in meeting friends for garden centre lunch.
Cottage pie for me (tried leaving most of the topping but ended up leaving just a little). Still virtuous compared to hubby's fried southern chicken burger with chips followed by a huge piece of hm bakewell tart (Is there a smiley for envious/frustrated?

Stopped at a large m&s foodhall on the way back and found chicken shwarma you all rave about. Was going to have it for dinner tonight but then had yellow reduced stickers result!
Boys had a takeaway Chinese box reduced from £12 to £4. I used a spoon of the black bean sauce to flavour some mushrooms reduced to 40p. Beans down to 20p in the fridge for tomorrow. Boys will be on apple hot cross buns and marmite rolls both 50p for 4.

All in all a good day
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: cappuccino and a carb killa bar.

Not far into the day yet but it is a cleaner's day (she promised) so am getting organised early. FBG at 3.30 am was 9.7 and it remained there through pills, tea, glass of coconut milk, more tea and 2 crumpets with butter. Still there at 7.30. Both teas were with coconut milk. I hadn't realised that coconut milk rather than cow's milk could make that much difference. Must investigate this further.

That, then, was breakfast. I will have 3 meals today, having started so early.

Lunch: I have some cold chicken and will add some kind of salad to that.

3rd meal: a cheese omelette seems like a good idea.

Em is suddenly interested in geography but I realised that she has little concept of the size and shape of the landmasses of the world, so I bought a fairly cheap globe from Amazon to see how we get on. If it goes down well and she remains interested, I will buy a better quality one. She spent a happy hour finding where places are and comparing the size of countries to the UK/the Hebrides. The globe shows the tracks of various explorers of the past so she is also learning about some of them. She was quite impressed to learn that one of my SIL's grandparents had a mountain in Antarctica named after him (Mount Dickason - he was a crew member on Scott's Antarctic expedition in 1912-13.)
 
I have missed you all! I am just getting back on the wagon now after the Christmas New Year splurge and pushed my luck due to a Libre3 giving incorrect readings... Anyway back on the wagon now.
Fasted all day... Dinner was roast chicken, steamed broccoli cauliflower cheese, cabbage, homemade chicken stock gravy. desert was a spoon of greek yogurt and a few raspberries...... Then an hour or so later as my BG looked nice and low on my Libre3, I risked it with a 4 chocolates from the Roses box! Big mistake, but BG corrected after 2 further hours. I am not trusting that gadget anymore, and no more treats!
Goodness you are taking risks ! Splurging and then fasting? Are you joking ?
You should be eating steadily and carefully- I’m sure you know that. We all go off the rails a little bit but this sounds extreme and very dangerous. It isn’t your gadget you shouldn’t trust but your commitment.
 
Keeping an eye on BG. Before breakfast I took my normal amount of insulin and BG is dropping currently to 4.4 on the Libre (5.4 on the fingerprick). This can't just be due to coconut milk! I know I have intolerances but, as far as I know, no actual allergies. I have always used dairy products (we were taught that milk was good for us). May have to rethink that. We'll see how it goes. Libre is beeping at me right now - BG must have slipped to 3.9 on it. Not to worry - it will really be still in the 5's.

Edit at 3.55 pm: Still staying low. No good reason for that (if it's not the absence of milk or lactose) but it is remaining within the desired range. I did have butter and yoghurt earlier but those are both modified milk, or perhaps just not enough to affect BG.
