What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and DGF shortbread.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: meatballs in tomato and mascarpone sauce with brocolli, cauliflower and carrot followed by SF cherry jelly and cream.

I had your glass of wine tonight! Haven’t had any this week but Thursday is almost the weekend.

Late breakfast of LC toast topped with cream cheese, smoked salmon and h/b egg.
L- slice of ham, cheese and spoonful of h/m sauerkraut. 3 Montezuma’s Absolute black peanut butter mini eggs. The last 3 in the pack, don’t know where the rest have gone as I haven’t reported eating them here!
D- fab sounding recipe ‘Marry Me pheasant’ which was lovely. Creamy sauce with chilli, oregano, parmesan and sun dried tomatoes. I’d definitely have it again with maybe pork or chicken ( pheasant came from neighbour who runs Gundogs and gives us a few birds each year, Paul enjoys channeling his inner caveman and plucking gutting and jointing them) broccoli and spinach with it. My mood brightened again after yesterdays unexplained gloomy day. :joyful:
So I was happy to cook again today!

More of the snow peas with butter and salt, a slice of celeriac with cheese and paprika, and more of the steak pieces. Last time they were slightly overdone, this time they were just a tad rarer than I prefer (both times close enough to be very tasty) so tomorrow they'll be perfect!

I'm also happy to inform especially @maglil55 that it looks like I'll finally have the chance to watch The Lady in the Van in the near future, thanks to @Annb !

That looks great esp the celeriac - how did you cook it? Did you boil it then grill with cheese and paprika?
Ps I also loved the story and film of lady in the van and always think of you and your garden neighbour when you mention them.
 
Coffee with about 50ml of milk.
1: 2 eggs, small avocado, lettuce, mushrooms and a handful of tomatoes.
2: Mixed vegetable soup (was pretty carby veg too), lettuce, 50g of cheddar.
Tea with a splash of milk.
Was hungry so I had a handful of grated mozzarella with a spoon of houmous then a coffee with some cream.

Sugars seem happy with eating like this as been checking them before and after, almost want to go mad and see what they say but danced with the self sabotaging thoughts for a while and I'm not actually going to do that.

I simply sliced, added a drop of olive oil and slices of cheese and put in the oven for about 25 or 30 minutes.
Would have been even better to only add the cheese halfway through, but while motivated to cook, I wasn't that motivated! :hilarious:

I'll definitely give you all an update once I've seen the film. :joyful:
 
Just about to have breakfast. It will be the chicken and mushrooms in cream sauce.

Anticipate a second meal today - using the black sausage and maybe some bacon.
It was black sausage with some cheese melted over it. Couldn't be bothered to do bacon as well. Then I made a wholemeal loaf which, for some reason didn't rise very well but was a reasonable texture inside. Of course, I ate a slice with lots of butter. Very tempting. Very moreish, as they say!

Em will be here again tomorrow morning before school. Her dad will drop her off at 7.30, on his way to work by which time her mum and big sister will be on the ferry and almost half way across the Minch with a bundle of pups. Hope the swell has died down a bit. Apparently the ferry did make it in this evening from Ullapool, so it should be allright. Apparently though, it is going to build up again by Sunday. What it will be like on Saturday when Alistair goes with Em and the remainder of the pups - who knows?
 
What a great idea! Thank you I will do that, I bought a small bottle today but it usually goes off before we finish it so freezing is helpful on all levels.

There are a gazillion variations on these big boys, which we use for freezing marinades or pastes, like the Tandoori paste for lamb. Means we can get enough out for a couple of portions, rather then be forced to batch cook or waste the excess.


I was looking at more of these the other day in the Chinese shop nearby.
 
A while ago you mentioned both black sausage and black pudding in one post, and I've been wondering what the difference is ever since.
Google isn't helpful, so can you tell me?
It was an idea that I saw on one of the foodie programmes I watch. A butcher somewhere in the north of England was mixing black pudding with minced pork to make sausages. So, I took equal quantities of black pudding and minced pork and it turned out very well. I made patties of them because I can't stuff sausage skins. The black pudding gives all the extra flavour I would want without extra seasoning. Next time I will probably make it 3/4 mince and 1/4 black pudding. It will still give sufficient flavour but it will be different enough from black pudding to make it worth doing.
 
FBG this morning is 6.7 yesterday's food was ....Breakfast ( had a carb craving ) 2 wholemeal rolls with 3 slices of bacon and a dab of sauce and a cup of coffee .( 50 carbs ).
Lunch was tuna ( tinned ) salad black olives bit of mayo and another wholemeal roll cup of tea .( about 25 carbs )
Evening meal was 2 low carb sausages 2 small new potatoes ( with butter ) and some sauerkraut ( 24 carbs )
Then a low cal hot chocolate drink before bed ( 6 carbs ) . Rest of drinks throughout the day were water and herbal teas .

I use similar, but a bit smaller, for everything from homemade stock to ice cream. Helps portion control on the latter.
 
Breakfast: Lorne sausage on a wholemeal bread sandwich. BG fell by 3 points (it was a bit on the high side before breakfast)

Lunch (maybe Linner): Ham wrapped in a one egg omelette - very flat and able to be rolled - with some cream cheese dotted on the ham. Had it about an hour ago and BG is currently at 7.9. That should be OK for the rest of the day.

Plenty of tea. I'm getting very forgetful when it comes to having drinks - especially later in the day so if I can take maybe 5 mugs of tea on board before lunch time, it should keep me sufficiently hydrated with what I remember to drink in the afternoon/evening.

Would like to add vegetables and did have mushrooms yesterday, which are not normally a problem so was a bit put out when insides reacted strongly early in the day. Maybe leave it a few more days before trying to add onion - normally not a problem either.
 
Usual issues at my blood draw today ,- my veins don't like needles so they jump away meaning they have to dig around and I end up with two bruised arms as they always hope other arm is better and start again on other arm! Results in about a week but I've already had part one of the you should take statins talk based on previous years LDL cholesterol results but no mention of the fact that all my other results over past almost six years including my blood sugars have been in their normal range. We also had the why do you bother fasting for the full lipids panel as for usual lipids you wouldn't need to fast. Her jaw positively dropped when I said I didn't find fasting difficult as did it most days........ Part 2 and results next Thursday.
I also felt annoyed when waiting in waiting room as the screen was showing a healthy eating presentation which I wanted to argue with. It encouraged you to drink pure fruit juice as one of your healthy 5 a day - I know for a fact that my daily orange juice consumption contributed to my hba1c of 97! Why do they always focus on fruit rather than vegetables?
Anyway needed more food today for some reason and a glass of wine,!
Breakfast one rasher of bacon,egg and mushrooms
Lunch LC wrap with filling of tinned wild salmon mixed with some avocado followed by some kefir and 100% chocolate
Dinner salmon in lemon butter with asparagus and glass of dry white wine followed by LC chocolate brownie.

Thank you - I already have quite a collection I use for freezing whey and concentrated stock. I’ll repurpose some of them. I’ve a bit of a Tupperware addiction so don’t want it spilling over into ice cube trays!
 
Should have been just black coffee until daughter came for lunch ( which was air fried chicken thighs with chilli mayo). However the last remaining Crimbo crumble kept calling me so I ate it for elevenses.
Mid aft had a cup of tea ( with milk) and a DGF cookie.
Dinner was prawn curry with mushrooms, green beans and peppers. Couple of glasses dry white wine. IMG_1855.jpg
