What have you eaten today? (Low carb forum)

Serious question, what's an lc sausage?
We use LC abbreviation a lot on this low carb eating thread as we all aim to keep our carbs as low as we each need to to manage our diabetes so LC sausage I'd have thought is low carb because it is a high percentage meat sausage rather than one with lots of filler. You always need to check carb content of anything like sausages as some have loads of starches added. @RosemaryJackson correct me if I'm wrong.
Low carb eating can be a big challenge when you are not in charge of buying and cooking your own food. Generally speaking sticking to simple ingredients like non processed fish, meat, eggs, fats like olive oil and butter plus above ground vegetables makes it easier but once you add in processed food or meals out it gets harder!
A few days away from home this week including a post burial wake and then yesterday a long standing friends significant birthday lunch reminds you how it really isn't easy to eat low carb when not in charge. I started this way of eating almost 6 years ago and love how it keeps me healthy physically and feeling good mentally too. I'm still amazed how many people come up and say things like are you still on that crazy diet it's hard to persuade people that the way I eat is just as it is and right for me. Interestingly the vegans at the birthday lunch yesterday were really looked after with lots of vegan choices and not asked were they still on their crazy diet! I ordered Cajun chicken without the bun or the chips but of course it turned up with both on the plate and when I asked politely for simple Cajun chicken with the salad you'd have thought I was asking for the moon! I just hate waste and leaving stuff on plate why is it seen as being difficult when you are just asking for them to serve some bits from a meal? Trouble is it makes you feel uncomfortable with everyone asking why I was still on that crazy diet! There were several other diabetics there who don't understand why I don't just take the meds so that I could eat normally! Problem is that I no longer see all that processed food as proper food anymore.
sorry about my little rant but I just feel a bit sad that low carb hasn't become more acceptable as a way of life over last 6 years.

today so far 10ish kefir with grated lime zest
1ish fried a large mushroom and two eggs in butter and served on low carb toast
Tea planned for about 5ish is a hm chicken curry which is simmering in my slow cooker and I will serve with a LC wrap and small glass of red. I'll probably have a LC cake too with my early evening decaffeinated coffee.

Edit: perhaps I'm lowish carb as well. I'm well below the guidelines anyway. I've actually started adding carbs to my diet to cover the insulin I have and I don't particularly enjoy them

It's pretty different from country to country. In the Netherlands almost all sausages are low carb, but in the UK most of them have lots of fillers.

The last meals you posted are rather high carb for this thread, considering this is the low carb section of the forum.
Eating those carbs is absolutely necessary for you at this point, but in time you'll get more freedom again with your food choices. :)
There is absolutely nothing wrong with carbs if you can dose for them, but you might like to revive this thread if you want to share your meals ;)

Please be careful.
Yesterdays breakfast was weetabix, so quite carby, todays breakfast has very little carbs.
If you're taking your set dose of insulin you may well end up too low!
 
Saturday 4 March - bed 5.2 FBG 6.2. I don't feel as if I have a load of grit in my eye now. It's still a bloodshot, black eye, but it's improving. I'm finding it very weird not running about all over the place, though. The eldest grandson appeared to pick up their swimming gear (and have a look at my eye).

B. TAG and a bit crustless quiche

L. CC Little chocolate pot and 2 slices of SRSLY fruit loaf with butter.

D. Usual cold cuts - porcetta, ham, spiced ham, roast beef, ox tongue, egg mayo, coleslaw, 1 baby beet, and I pinched 4 of Hubby's chips.

Currently sipping a Peroni 00!

@Annb - are they maybe diabetic eye checks? I suspect you'll be welcomed with the usual drops, photos, scans, and the field test (or the sneaky test as I call it). Some of these lights are ridiculously small and faint.

@shelley262- I totally agree. I can manage at quite a few restaurants, but hospitals are a nightmare. They looked at me as if I'd grown horns by refusing egg sandwiches, chocolate biscuits, etc. At least I had my almonds with me.

I'm trying to keep things as simple as possible for Hubby.
 
Morning all. Cwc and I always eat at lunchtime (unless I'm not hungry) and today I'm having 2 lc sausages with 2 eggs fried in butter and tomatoes. Then I'm going out to a quiz at a nearby church. They also provide a lovely tea so will have to be careful. Thinking about not being hungry, for so many years I have had a fear of going hungry. I never thought I could fast like I now do. I wonder if it comes from the war years when food was scarce? The war rations were extremely small. But we were healthy. I bet not many were Type 2's!

I remember reading somewhere that at the end of the war (or maybe late 40s/ early 50s can’t remember exact date) the government declared that T2 diabetes no longer existed in this country.

I’ve been thinking about you today, and sending supportive thoughts your way, I know it’s a difficult time of year for you.
 
Glad your eye is feeling a bit better today @maglil55 I really feel for you and @PenguinMum having to have the Clockwork Orange clamp and eye procedures.
@shelley262 I completely agree about the frustration re other diets which are often lifestyle choices being accepted into mainstream, and how caterers seem to bend over backwards to accommodate them. Low carb however is seen as faddy. It’s really annoying and so tiresome to have to ask for adjustments every time.
Back in topic. Breakfast was scrambled eggs on Schneiderbrot protein bread.
Lunch was a DGF cake and some nuts
Dinner: fantastic rack of hogget and roast veg. Couple of glasses of Malbec because it was worth it. IMG_1993.jpg
 
I'm improvising because my last grocery run was on tuesday and I'm very much out of planned meal stuff.
I'm also refusing going to the supermarket because of my birthday plans on monday: Party will consist of a friend and I driving to Germany to buy foreign food stuff and get some holiday vibes, so it would be stupid to go to my usual supermarket right now.

I also ran out of cheese a couple of days ago, but my aunt asked what I wanted for my birthday and I asked for cheese (she has an amazing cheese shop close to her home and knows her cheeses), so I'll likely have more cheese than I could wish for early next week. :happy:

I read something about sautéed lettuce so I had a go at it with the leftovers of the mystery 'snack lettuce' I used for stuffed salad leaves earlier this week. It was quite a firm type of lettuce and it worked out very well. I sautéed part of a leftover half onion first and added the lettuce, plus cream cheese when it was almost done.
Mixed some of the arugola for the guinea pigs with the rest of the onion and olive oil, balsamic vinegar, salt and pepper, and had it with a large fried duck egg.
Plus two of the thick bacon rashers I still had in the fridge, a very nice meal altogether. :)

Glad to know you are feeling a bit better now.

I know why I am being referred to the eye specialist but not what the examination is likely to be. The problem is that I can't see very well to my sides because I can't move my eyes far to left or right (I have to turn my head - it's not a problem with peripheral vision as such, just I can't swivel my eyes much to left or right). The optomotrist thinks it is due to arthritis, but wants to make sure, and wants to find a solution. It might become more of a problem as my neck stiffens and turning my head becomes more difficult. Diabetic eye test went well a few months back and found no problems.

There is a puzzle at the moment, going on in my head. To eat, or not to eat - that is the question, when it comes to vegetables and when it comes to whole grain starchy products. I need fibre in my diet - we all do, unless, like Neil it causes more trouble than enough due to Crohn's disease. Vegetables provide fibre but there also seems to be something in them that is upsetting my insides more and more these days. Wholemeal bread and/or RyVita type of product can provide fibre, without unpleasant side effects, but also contain carbs which put my BG up, normally. That's my dilemma.

Yesterday I made a loaf of wholemeal bread - not sure of the fibre content or of the residual carbs after fibre is discounted. I had 2 slices of it and, although it did put BG up after a couple of hours, it wasn't desperately high. I had another slice about 6.45 am today (insulin first) and now, at 7.50 BG has dropped by 2 whole points. But that's only an hour and the carb is slow release so will see what happens.

I always seem to be experimenting with myself to see what works. Some things work for a while, but after a week or so, things go back to where they were, as my body gets used to the change. I do have an odd internal system. For example, about 4 months ago a consultant at the hospital said I needed to "speed up internal transit" and prescribed Sennokot tablets. I thought he was wrong, but did as he asked and took them. My system ground to a halt! It caused all sorts of pain/discomfort and is still only now getting back to some kind of normality after finally deciding for myself to use Andrews powder. It was very painful for several days, but finally sorted itself, to a degree. Still a bit dodgy though. Now I am told to take Lactulose plus Bisacodyl. Not sure if I will take the advice this time. I am hoping that by increasing fibre, I may not need to. Going to try that first. So:

Breakfast was that slice of wholemeal bread. 3 cups of tea.

2nd meal will be more chicken curry - it has onion, dried fruits, peanuts and some aduki beans in it and fibre's not very high, maybe I should add a salad to go with it. Plenty of fluids during the day.
 
Morning all. Cwc so far. Im going to roast some veg today and be careful what I eat. Went to a Daffodil Tea at the church yesterday. There was a great quiz and a beautiful buffet. The vicar's wife and I lit a candle for my daughter and said a little prayer and I felt better. BUT..... I ate 3 pieces of cake and a piece of pork pie and a sausage roll. I can hear you all saying tut, tut, tut!!! She should know better and I agree. So today just roasted veg and for tea a piece of cheese. Have a nice day everyone.

Yesterday was a hugely emotional day for you and your emotions required not only spiritual support but physical support as well - part of that was food. No tut tutting here. Your body was dictating its needs - that's all. Today is another day so don't punish yourself for accepting your emotional needs. Just let yourself get back to a, now, normal for you way of eating.

D: half a can of canned soup

I have to stop this for a couple of reasons. a) it's not good for me I don't think; b) the soup tasted like rubbish; c) who eats just half a can of yucky soup a day?

I'm going to speak to my doctor about this because it doesn't make sense. I love food. I love good food even better and yet this is the third time this week (I think) I've skipped breakfast and lunch and had basically nothing for dinner. I might need to speak to a psychologist as well because if I saw this I'd be starting to think the person has an eating problem. I think it's because my libre is not working and I don't know what my blood sugars are, but it's not healthy... I can finger prick and be ok

Edit: seeing Dr tomorrow. This *will* be discussed
