What have you eaten today? (Low carb forum)

Breakfast: smoked haddock in a cream sauce. Meant to add spring onions and chopped parsley but forgot. Still hungry, so added a couple of small slices of cheddar.

2nd meal: something else out of the freezer. Last evening had a mixture of some beef ragout and some braised, mixed vegetables. It worked well as a mixture. There are all sorts of things sitting in the freezer, waiting to be used.
 
Sunday had usual brekkie slice of LC toast and lots of tea.
Then late lunch/early roast dinner with son & partner. Didnt have roastie or Yorkie but did have gravy.
Yesterday same brekkie.
Lunch at a cafe was wedge of bacon & spinach quiche with side salad.
Supper was a chorizo & tomato omelette.
today same brekkie.
Lunch cheese & ham salad.
Supper will be spicy baked chicken breast and green veg.
@Antje77 I found your tribute to Goonergal very moving and would like to send my condolences to all of you who were personal friends. It was such shocking news to the forum because she was such a champion to us all.

@DJC3 yup remember Gonnergals love of nut butter and she would definitely have understood and supported you.
Yesterday had
Kefir and spoon of rhubarb
Two boiled eggs and one slice of LC toast then LC cake
Home cooked ham and salads followed by another small square of LC cake
Today
Kefir and spoon of rhubarb
Fried a couple of mushrooms and eggs and served on LC toast and LC cake
Two lamb chops with salads and generous glass of red wine followed by one half of DGF s new small keto eggs filled with praline -lovely and did enjoy but think for chocolate once these are eaten I'll stick to the 100% stuff. I wasn't tempted to eat more and somehow think prefer rich dark chocolate it's just that 90% is my preference and need to stick to the more nutritious and lower carb 100% Still I'm sure they will all be eaten by end of Easter!
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: coffee shop coconut cappuccino and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: ribs with roasted Mediterranean veggies followed by SF blackcurrant jelly and cream.

@shelley262 I’ve missed those DGF Easter eggs each time they’ve been posted. You must have been very quick off the mark to bag some. I agree completely with the 100% chocolate decision. It’s far easier to keep portion control. I like Montezuma’s Absolute black best. I buy the mini bars, they seem like an indulgent treat as they are a whole bar ( 25g) portion controlled ( essential for me)
Today I had the DD Recipe for Huevas Rancheros again for breakfast.
Lunch was a tin of mackerel with a salad of spinach, cherry toms, walnuts and feta. Oo and ACV dressing
Dinner- airfried chicken thighs and airfried Halloumi chips with chilli mayo ( trying to recreate Nando’s) also 2 stuffed mushrooms ( also airfried) 1 stuffed with blue cheese, other with nduja paste we bought at Carluccios at the weekend. Boy it’s hot IMG_2193.jpg
 
No breakfast
Dance class 1, but sat out the last 10 minutes as breathing not quite up to it after cold/flu
L: some cooked mince reheated with some leftover tomato sauce then all wrapped up in a 1 egg omelette wrap. The only edible 50% of an avocado. 2 sqs 75% chocolate
Quick bit of gardening
Dance class 2, but again had to sit out att he end due to exhaustion.
D: 2 sausages, cabbage and leeks with a spoon of cream cheese stirred through, swede chips. Small ice-cream
 
Yesterday but posting late because of insomnia the day before I see the dietician, with an early ish appointment.

Been mad hungry recently

Started off meats and veg, hummous and cheese.

Ate a little left over pasta that I’d made for the girls, maybe 2 serving spoons worth

then… went totally off the rails and went to the shop and bought a cheese “sausage” roll thing with ready salted crisps and then a penguin bar that was in the house, followed by another.

Not feeling sorry for myself though, okay maybe a little for the relapse, guilt not shame though.

Blood sugars will suffer for it.

Another day tomorrow.

Was feeling a bit rubbish but coming on here and seeing the post about Goonergal has put it all into perspective.

Bless, she seemed so kind from her replies/messages.

Yesterday
Breakfast: bacon, 2 eggs, cup unsweetened almond milk
Lunch: tinned salmon, mixed salad greens, cheddar, beetroot, red onion, black beans
Snack: pistachios (handful)
Dinner: minced beef, broccolli, zucchini, brussel sprouts, chilli (i.e. hot pepper), onion
Dessert: 99% sugar free non-dairy “ice cream and square 95% cocoa dark choc

Ended up having about only 1/3 the rapid insulin I normally take (edit: last time I posted I was on fixed bolus insulin doses, I am now adjusting based on carb counts)

Losing a friend, even if it's a distant friend, and losing a valued former colleague moderator suddenly is shocking.
Hearing the news of Goonergal's passing hit me quite hard today, and for me, this means I feel the urge to DO something, even if there's nothing I can do apart from calling friends to share my hurt and shock.

So I thought the best way to do something to remember her was to have a Goonergal-worthy meal on the pretty fishes plate I so shamelessly begged for in 2019.
We reached an agreement for a plate swap to happen in the spring of 2020, but then covid happened, preventing me from visiting the UK.
We didn't forget, and although my plate in the bargain had broken at some point in 2021, she still gave me hers when I finally visited the UK last october, 3 years after making the deal!

Now this plate means even more to me, and today I filled it with one of her go-to recipes: egg fried 'rice', with the rice substituted with minced meat.
Had to borrow an onion from my neighbour and used cucumber instead of courgette because A: I didn't have any courgette and B: I don't like courgette. And besides, this is a typical meal to use up leftovers, her recipe varied depending on what was in the fridge as well.

Bacon, minced meat, onion, some cucumber, the last bit of hard goat's cheese and a beaten egg.
Can recommend, and I hope I didn't shock anyone with the picture, which looks all too familiar on that plate.

First thing before heading out for busy long morning a spoon of home cooked rhubarb with lemon and ginger and kefir with sprinkle of pomegranate peel powder
Late lunch fried a couple of mushrooms and eggs in olive oil and one slice of LC toast followed by LC cake
Dinner LC wrap with pulled pork salads and glass of red wine followed by another half of a DGF me to small Easter egg. Got 8 halves in a pack so will be a daily treat over Easter time.

Or maybe not. I'm so sore today and feeling quite ill. Can barely move. BG is in the 7's but I feel as though I am having a hypo. Keep trembling. And I'm cold. Shan't bother with any more food. Add to that my TV stopped working while I was watching "House of Games" which is rubbish, but that's what I felt like - letting drivel wash over me. Of course, I couldn't find the manual. But Neil turned it off at the wall switch (which I can't reach) and turned it on again and it's working.

While this egg fried 'rice' was a perfect meal to take some time to remember Goonergal, it's on the meat heavy side for my everyday preferences.

So I used the other half of her meal as a base for two days more worth of food. :)

I guess you could call this a ratatouille, it's like a bolognese with lots of veggies, including aubergine (because aubergines were on offer this week), very tasty! :hungry:
Had it yesterday and today, and there's a half portion left over still so I'll need to think of something to go with it tomorrow.

Mid morning: cheese off toast!!!
I'd put 2 slices of toasted hilo bread in the airfryer. Then added cheese on top. Set for 5 minutes. Has always worked perfectly before when I use thick slices of cheddar, but today I used a pile of thin slices of pecorino. Imagine my horror when I opened the airfryer to find all the cheese had blown off the toast. Some was baked onto the walls but most had melted through the holes in the bottom. Was a total mess and difficult to clean. Toast with a thin smear of retrieved melted cheese was not the breakfast I had been looking forward to :banghead:

At some point I had a nut bar, 2 sqs 75% chocolate and a few hm kc seedy crackers

D: haddock and salmon baked with cream cheese, cheddar and chard, served with carrots and broccoli. Small ice cream

Still coughing and streaming from the cold/flu thing. Felt cold all day. Hoping its not coming back as we are away tomorrow (hence the funny meals eating up bits and pieces)
 
@MrsA2 I didn’t know whether to laugh or cry for your cheese off toast disappointment. I’d never thought of doing it in the airfryer but I’ll heed your warning if I try.
@Annb no eggs in the Coop here again either. Luckily Paul passes a few farms on his rounds so picked me up some. Wish I could send some up for you.
Today I managed to fast until lunchtime. I find I can only do this if I’m out of the house and busy.
L- 2 slices HiLo toast topped with cream cheese, smoked salmon and sliced h/b egg. Then strawberries and cream.
D- Grandchildren staying over for a few days so they helped me make ‘melting middle’ burgers ( a Babybell shoved into the middle of the mince before grilling) with salad. Glass of red and 2 coconut bites afterwards. IMG_2207.jpg
 
Share my joy - for the first time ever I managed OMAD yesterday! Normally on 2MAD, as I don't do hungry, and usually manage 18-20 hours' fast. But yesterday I wasn't hungry until evening meal time.

What did I eat? Roast chicken thighs THREE OF THEM with broccoli, sprouts, cabbage and cauliflower. I will need to eat earlier today as am already peckish, but..............in a year and a half of 2MAD it finally happened.
