What have you eaten today? (Low carb forum)

I could weep! I had 2 paragraphs keyed in on this post, and it just disappeared. Start again.

An odd day today. That seems to be a common theme on the thread right now. Very tired after yesterday's exertions. BG was lowish last night and this morning but when I got up (5.30) I had to take pain killers and fell asleep again in the chair (not uncommon for me). Finally forced myself to wake up about 9.30 and got washed and dressed (didn't bother with a shower even, tut, tut By then my BG was soaring. About 12.30 I decided to eat and took insulin before breakfast of:

2 RyVitas and Dairylea cheese (don't nofrmally eat that, but just fancied it).

Whereupon my BG started to drop and I'm finding it difficult to bring it back up to a safe level. Even had one of Em's crumpets with butter - that would, normally, send it shooting up. It's a puzzlement!

2nd meal will be home made fish fingers with some peas and broccoli.
 
My mum used to make a fabulous sweet soufflé omelette back in the 70s. It was filled with banana and rum sauce. Not very low carb so I won’t mention it.
Delia did a lemon curd one. I have low-carb lemon curd on my CMT, so that would be doable. The other one that springs to mind with me is one with mixed berries that have been soaked in gin?

Correct, don't mention banana & rum! I've been having banana thoughts recently.
 
I'll definitely give making an omelette this way a try!

And yes, I'm fine, just puzzled by the reduced amount of insulin I seem to need, this has been going on for two weeks or so. Usually I'm completely fine with eating whenever I fancy, my basal keeps me steady.
Today I've been wondering if the reduced need for insulin may have something to do with my starting to (erratically) taking ibuprofen for my back. It helps a lot with my back, which suggests it is indeed some form of inflammation, and if it is, the ibuprofen reducing inflammation could be reducing my insulin needs (I've been reducing my basal as well). I'll do some note taking to see if I can find a pattern between ibuprofen and insulin use.

By now I've eaten pistachios (a lot, yum!), and the other planned OMAD type midnight snacks will follow shortly, but I've also dropped to 4.2 again so I won't inject for the hummus or cashews, and I'll keep a pot of honey (courtesy of my cousin's bees) next to my bed and all will be well! :joyful:
Hope this cheers you @Antje77 , although I wouldn't try this on your kittens! It does, though, show the fluffy, deliciousness of a souffle omelette.


If you make it savoury, you can add a mix of finely grated cheese to it. 2 or 3. Sweet? Many permutations.
 
@RosemaryJackson goodness that month has shot by, your evening reading was pretty good I reckon.

Todays food:
B- cheesy scrambled eggs with spinach.
L-Tuna salad, mixed leaves, h/b egg, avocado, sunflower seeds and oo/ACV dressing. Followed by DGF cake.
D- local hake, landed this morning. It was superb. I thought I’d cracked the crispy skin but it was only crispy round the edges. @maglil55 please remind me again how you do it. Served with lemon butter and parsley sauce on purple sprouting broccoli. Couple of glasses dry white wine, feeling very holidayish. Which reminds me- happy hols @PenguinMum - looking forward to hearing about the lovely Spanish food. View attachment 60505
As my mother in law used to say, "Patience is a virgin!"

I have a very heavy bottomed frying pan. I melt a mix of butter and olive oil in it. The sea bass, I score it with diagonal lines on the skin (taking care not to cut all the way through), then I rub some oil and sea salt into the skin. Fish goes skin side down into the pan. Watch the heat. It needs to be hot, but not so hot that it cremates the fish! Now patience kicks in. Watch and wait. It's usually just about there when you see the flesh starting to colour. At that point, I usually flip the fish over, but only if it is crisp. Before doing so, I add a squeeze of lemon to the flesh. It really only needs about 30 seconds on the flesh side, then flip back and serve.

Oh wow, that's much fluffier than I imagined, never seen anything like it! Definitely need to try, very informative video.
I'll need to make a large one though, I could never tease my cats (and dogs) by waving food in front of them and then just eat it so it needs to be enough to share between myself, 3 cats and 2 dogs. :happy:
I won't try to dress them up though.

Diabetes is behaving much more predictable today. My usual first meal was a slice of low carb bread with butter, half with ham, half with cheese.
Evening meal will be quick and easy: 3/4 of a large onion, fried with shawarma meat and topped with lettuce, some tomato and cucumber, the rest of the onion but raw, and a mayo based garlic sauce.

I did have half a teaspoon of very good honey before bed yesterday to be safe, and stayed between 4.4 and 5.8 all night, so all was well. :)

I bought some sausages because I want to try this tomorrow, I think I'll fill them with mozzarella, onion and jalapeno, but suggestions are welcome.
I'll have them with runner beans on the side, they were on offer.

How long and at what temperature would they need, any ideas?

He topped those sausage boats with cream cheese, some seasonings, jalapeno and grated cheese but I'm sure you can use any filling you like, looks quick and easy.
He also threw some mixed veggies (guessing mainly onions and bell pepper) on the tray next to the sausage boats to bake together and make a full meal.

Been away couple of busy days, so here's what I remember food wise.
Thurs
No breakfast.
L: motor way services. Burger King double whopper, immediately removed the bun, scraping the mayo back on to 1 pattie. Quickly flip other pattie over to make a burger sandwich. Very messy to eat but very delicious and not.too carby.
D: visiting my sister who really disagrees with my woe, but she's t2 too! Last time she took us out for fish and chips, this time it was to local Harvester pub. I had half a rotisserie chicken and loads of salad. Had to be assertive with the waitress who kept insisting g I choose a "side" as it was free. All the sides were carbs. Eventually we compromised on letting her deliver my chips but "for the centre of the table" :banghead:
1 glass white wine with soda, followed much later with very decent Scotch back at the house.

Friday, off to a wedding. Tried to be prepared by having breakfast of 3 scrambled eggs and some fresh berries.
Took some almonds and a nut bar "in case"
1pm arrived to a free bar! Luckily it was so cold I was quite happy to start with a pot of mint tea.
2:30 ceremony followed by either bucks fizz or cranberry juice (:arghh:). Took the bucks fizz. All the guests were supposed to enjoy the outside of the venue and the freezer bar, but it was freezing, so I had tea, again!
We weren't welcomed back inside until about 3:30 with the meal due at 4. In fact starters weren't served until nearly 5. We had pre chosen so I was looking forward to smoked mackerel pate but they delivered pork pate instead. OK for me but not from several others! I had by now eaten the bread roll as I was hungry and my nuts hadn't fitted in my tiny little smart clutch bag.

The meal got slower and slower. I gave my unexpected lemon sorbet palate cleanser to my hubby. Everyone else got served their mains (the lamb looked good but came with huge mash so glad I hadn't chosen that) and I waited and waited and waited for my salmon which arrived a good 20 minutes after everyone else's.
I'd not chosen a dessert but did have a bit of the wedding cake, leaving all the buttercream and icing, of which there was a lot!

Some wine was drunk, and some more tea. The meal didnt finished until nearly 8.
About 9 they finally brought out the cheese! Yay! Lovely Exmoor blue and a nice strong cheddar but underripe brie. I did have 2 crackers.

Overall I navigated the day not too badly, carbwise. I really don't enjoy the sweet stuff any more but I could do with bigger portions to make up for the carbs I skip.

Best of all was the full breakfast this morning. I had 1 fried egg, lovely mushrooms and about 4 big rashers bacon, half a grilled tomato and still quite replete from it now.

Supper will be pate and nuts and NO alcohol, had my share for the week I think. Probably had about 5 or 6 glasses though the day yesterday.

Quite happy weddings don't come along too often food and drink wise
 
@RosemaryJackson sorry to hear life is a struggle just now. I think sleep is so important not only does lack of it put blood sugars up for many but it also makes us hungrier too for quick comfort food and snacks. Take it steady and try to prioritise sleep if possible...easier said than done I know.
@Antje77 not sure about how long for sausage boats but maybe look up a recipe for sausage rolls may be similar timings to cook sausage through? I'd probably do in fan oven at 180 and try 20 mins but check carefully. Good luck with them and let us know. Just a thought wonder if anyone on here make meatzas which use a meat base for a pizza with toppings?
Today's food
Breakfast fried one slice of bacon, egg and two cherry tomatoes on slice of low carb toast
Lunchtime not had bag of nuts in my kitchen for several months as I find it hard to moderate how many I eat. But listening to a zoe podcast on benefits of nuts I gave in and bought a 200g pack plan to portion out into 20g packs but you guessed it ate a good third of pack while preparing lunch! Also had rhubarb and yoghurt
Dinner my usual Saturday night curry with a low carb roti and raita with some mint from garden. Glass of red.

B- scrambled eggs on Schneiderbrot
L- BLT and avocado in toasted SRSLY roll. Then one of the precious DGF mini Notella eggs
This afternoon Nature Art class. The teacher used to bring cake in for our tea break. Didn’t bother me at all but she wanted to be inclusive so now she brings in nuts and dark chocolate and gives us all some in a little paper cake case. Such a lovely thought, and everyone loves it.

Thanks. I’ve saved this and will try again next week. I didn’t score the skin and probably didn’t leave it skin side down long enough.

Between @PenguinMum drinking Octopus Tea, I now reckon @Antje77 has a couple of wigwams for a hypo, and @mrs A2 has a sister who doesn't approve of her WOE but she's 12! I was about to suggest a bit more education may be needed.

B. TAG and Ayrshire Middle bacon, 1 fried egg, 4 santini tomatoes, 1 slice of SRSLY toast with butter. Benecol dairy free.

L. Nothing

D. A dinner of lots of bits - 1/2 avocado with prawns/Marie Rose, lettuce, tomatoes, almonds, buratta, anchovies in basil & parsley, cauliflower picked in chilli and tumeric and mayo. Very enjoyable.

@RosemaryJackson- it's tough when family returns home to another country. We've had many a tearful time at airport departure gates. I'm just happy that keeping in touch is just so much easier with Video calls, email, and the like. I hope you feel better soon. 20230421_190949.jpg

Your timing for the sausage boats make sense, I think I'll give that a try.
The meatzas are a bit ouch, Goonergal used to make them, here's her recipe:
@Antje77 my pizza is as follows:

Ground pork rinds (crackling) (about 40g), cream cheese (25g), mozzarella or mozzarella/cheddar mix. Melt the cheeses together and then add the blitzed pork rinds. Mix well and it forms a dough. Bake that until it’s golden brown - I use the air fryer but the oven works too.

Then add toppings - I don’t use any tomato sauce, just add peperoni or salami, or both! Maybe some onions and more cheese and bake again.

I have seen one recipe online that involves a base made entirely of bacon woven together! Will try and find it.

D: my family’s fave lchf meal - meatza made with a rolled out M&S Aberdeen Angus burger as the base topped with sour cream instead of tom puree ( simply because I prefer it) mozzarella, chorizo, olives, chilli spinach and goat cheese
And I found some more by simply putting meatza in the search bar and ticking the box for searching this thread.
 
@Annb I've had that before, being suddenly put out mid post, and it is infuriating. I found it was commonplace after 11pm. I got into the habit of continuous saving for a while.

Today, 22 April, bed 7.4 FBG 7.2. I had a planning day. Did my shopping yesterday, but I still had to nip out a couple of times as my "taxi" was required. I still managed to rearrange the freezer (found another BOX of DGF Christmas pies) and had a rake through Diet Doctor recipes for next week based on what's in the freezer.

B. TAG with 2 rashers of back bacon, 1 fried egg, and 2 slices of SRSLY toast with butter. Benecol Dairy Free.

L. 2 M&S Wheaten crackers with smoked mackerel pate. Decided to give it a try. I like the taste, but I still found a small bone.

D. A repeat of yesterday's dinner, but I did swipe a mini rib and a duck wonton from Hubby's Chinese. Otherwise, it was the other halves of the avocado, buratta, and prawns again.

CC little chocolate pot with 6 raspberries. Peroni 00.
 
Been to London for the day, helping my daughter move house. She treated me to dinner as a thank you, even better she’d found a low carb pasta takeaway called Nudi, strange name but my choice was lovely. For 3.7g carbs I had low carb pasta with chicken in a cream and spring onion sauce.

Could you post the recipe for the cauliflower please? I’m thinking it might be similar flavours to the jarred piccalilli.
 
B: omelette (eggs, spinach, bacon, onion, garlic)
L: low-carb wrap (these are rubbish I'm not going to buy them anymore, I think the only reason they're low carb is that they're so thin), beef, lettuce, mustard
D: baked fish (fish, leek, garlic, ginger, spinach, lemon myrtle leaves)

Snacks the usual except I had an orange juice and chips/crisps after dinner because I must have injected too much insulin and was heading hypo (edit: alarm went off at 4.7 with the arrow heading straight down and I only got as low as 4.3 so that was averted ok). Chips, protein bar, pistachio nuts, 95% choccie. Protein shake (almond milk, protein powder, psyllium husk, sugar free drinking choc) before bed

Average BSL for the day 6.1. I'll take that

Could you post the recipe for the cauliflower please? I’m thinking it might be similar flavours to the jarred piccalilli.
That cauliflower looks a lot like a kind of piccalilli, except the florets are larger and the "sauce" a lot less. I assumed it was just spiced and not pickled, and decided to have a go at that myself. Not today though - not a day for standing, I think. That's why:

Breakfast: 3 strawberries, 5 raspberries with double cream poured over them.
2nd meal: the minced beef and pea mixture from a couple of days ago. Enough for a meal today and another later - maybe tomorrow.

Taking me all my time to clear the backlog of washing up, drying and putting away from my guests' visit on Friday. I didn't make things any better by deciding to clear out a wardrobe of all my size 18 dresses to pass on to DIL. She has just started her new job and has found that none of her old dresses or skirts fit her. She needs something a bit subdued from her normal brightly coloured and decidedly unusual taste. My too small dresses fit the bill and will tide her over for now. I thought I might find 2 or 3 size 18, but in fact found about 10. I was aching badly by the time I finished.
