What have you eaten today? (Low carb forum)

L- tried @Antje77 ‘s sausage boats and declare them delicious. One with mozzarella and jalapeños , the other with cream cheese and jalapeños ( meant to save this to see if it was nice cold, but it was too nice hot to think about saving)
I'll let you know about cold sausage boats tomorrow. :)
Yup, it works, can recommend cold sausage boats!

I had forgotten I planned this for lunch, so I already injected for a slice of low carb bread before going to the kitchen.
Found the sausage boat in the fridge so I took a test bite standing in the kitchen before making my sandwich. :)

I think I'll have a no cooking day and have the rest of the sausage boat and another sandwich for my evening meal. :joyful:

B- DD version of huevos rancheros
L- Toasted SRSLY roll topped with cheese and a scrambled egg. DGF cake, then a square of Lindt 90% choc because I felt like I was living in a mad house: Engineers arrived to install new boiler. Roofer arrived to sort chimney cowl. It was all very noisy and Dennis thought it was all too exciting and barked non stop for an hour. Quite pleased with myself for not cracking open the gin.
D- Slow cooked boef bourguignon with steamed broccoli and a healthy dollop of sour cream. 2 glasses red wine.
@Antje77 good to know the cold sausage boats work. I’ll put one in for my packed lunch tomorrow IMG_2357.jpg
 
Wednesday 26 April - bed 7.9 FBG 7.8. I get my specs tomorrow! Yay!! No more cheap spec selection hanging around my neck. Usual school runs, then I took DIL & her parents to Rosslyn Chapel before heading back to collect eldest for lunch.

B. TAG and 2 slices of SRSLY toast with ox tongue and coleslaw. A bit rushed, though.

L. Monkey nuts

D.DD buffalo chicken with paprika mayo and butter fried cabbage. Peroni 00, and later a CC little chocolate pot.

I changed the paprika mayo slightly. I did it half & half with sour cream. I'd forgotten how spicy and tasty this recipe is. Even Hubby was saying his mouth was still tingling.

We've been watching programmes about hand-made Japanese goods on BBC Four (straight after Michael P). It was kimonos yesterday. Incredible work. Today, we're on pottery. 20230426_184851.jpg
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: tuna melts with roasted Mediterranean veggies.

Breakfast: Almond milk smoothie with strawberries and raspberries, vanilla whey protein, bit of flaxseed and psyllium powder.

Lunch: Salad from a local deli/cafe. Lettuce, tomatoes, cucumber, red onion, chicken breast, coleslaw, cheddar.

Tea: Too knackered from work to cook, so ordered a chicken kebab with salad (and threw away the bread!).

Dessert: A jelly pudding I make, creamy blackcurrant and rose.

It's one sachet of Hartley's sugar-free blackcurrant jelly, made with the right amount of hot water but instead of adding the quantity of cold water called for, add two tablespoons of rosewater and mix in Greek yogurt or double cream until you've got the pint.

I love it, I've been making it for years even before I went low-carb.

It's a good few years since I was at Rosslyn Chapel (2004). We rented Rosslyn Castle for 4 days to celebrate our 40th wedding anniversary. The scaffolding and extra roof were in place on the chapel then and it was illuminating to go up into the scaffolding and see the roof and stonework close up.

Made corned beef with the remainder of the brisket chopped up and pressed a bit. Seeing what it is like tomorrow.
 
Hi all. Forgot to post yesterday and have forgotten what I ate but I know I was good! Today I haven't been quite so good, had a tin of Heinz Big Soup found at the back of the shelf (30g carbs) and 3 crackers at 3.8 each. Otherwise was good. My levels have started to come down, 6.6 this morning. I have a small blackboard that I put my levels on and once a week I send it to my son to prove they are coming down. Helps keep me on the straight and narrow!

Think I forgot lunch
Mid afternoon, Hm lc hot chocolate drink, a nut bar
A nap (I've been waking at 4 or 5 am, not good)
D: leftover/bottom of the fridge hash with a fried egg on top. Very tasty.
Out at a meeting, 2 chocolate biscuits
Just gone midnight now and I'm hungry but trying to resist
 
B: skipped
L: Mixed salad leaves, ham, blue cheese, pickled onions, tomato, beetroot, 3 x rye cruskits
D: Mustard soup
Snacks after dinner: kiwi fruit, 95% chocolate, protein bar, milkshake (hazelnut "milk", sugar free drinking choc, unflavoured faba protein powder, psyllium husk)
 
Morning all. Beautiful day here, hope it is where you are. Going for the omad with a snack at teatime today. My omad will be sausages and fried eggs plus a large mushroom. While my son was here, that went out of the window and I'm still being punished! Have realised I cannot have as many carbs as I've been having. My level was up again today after about 50g of carbs yesterday. @shelley262, the grains didn't work for me so I now have powder which I cope with better. Have also made organic yogurt. Have a nice day everyone :)

Dinner: LC pizza with a leafy salad.
