What have you eaten today? (Low carb forum)

Autumn has definitely arrived here in the Fens! Got the slow cooker out to make some hearty soup. The recent chatter on the forum about soup has got me going! Made some stock from a chicken carcass this morning, but ran out of time this afternoon to do the soup justice. Not to worry, the soup's all prepared ready for tomorrows dinner.

Breakfast; back bacon with butter sauteed mushrooms.

G&T with Openshaws Pork Crunch - they're really pork scratchings though cooked in a way that they are a bit like Quavers.

Smoked salmon with cream cheese.

2 squares of Lindt 90% chocolate

Handful of almonds.
 
I used to make it in a loaf tin but on one occasion I had a request for a lemon drizzle birthday cake so now I make 2 round lemon drizzle sandwiched together with filling of cream cheese marbled with lemon curd. It has proved to be very popular so that's the way I usually make it these days.

My BiL is a complete sucker for lemon drizzle 9and cheese scones, but not together), he likes the loaf time presentation because he feels he can "dose"it better.

He actually likes the muffin tin portions, but they're a bit of a pain to make.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: cheese and mushroom omelette.

Monday 18 September - bed 6.4 FBG 7.2. Last day of the September weekend. Hubby once again forgot I didn't have to go on the school runs. No matter, I was going to Aqua and for a swim anyway. On return, eldest grandson appeared as his Mum & Dad were taking the still unhappy brother into Edinburgh to try to cheer him up. He is at least starting to understand that improving times is all important. Hubby had started packing too (but I expected that).

B. TAG and a cheese triangle.

L. Early, as grandson was looking for food too. LC granola with sugar-free coconut milk and raspberries. Benecol dairy free.

D. My favoured crispy skin sea bass with wilted spinach and tomatoes. CC little chocolate pot with raspberries.

@Annb - you're quite correct. It is difficult lessons for youngsters to learn, but important lessons too. I finally got him to look at the times above him (and their ages) and asked him if he shaved the same amount again next meet off his times, where would that put him? The cogs are finally turning.

Food the last couple of days has been a bit all over the place.

Yesterday I had my usual yoghurt based brekkers and salad based lunch, but dinner transpired to be very late and just the spicy sausage and bacon lardons which had been keeping warm, waiting for me to get home from having my little hand op done.

I didn't go to theatre until just before 7pm, so home about 9 - local.

The staff at the Nuffield were near beside themselves because I declined a sarnie, and a biscuit. I thought the nurse was going to pass out when I confirmed my preference for biscuits was none, meaning no bieecies. There was no way I was getting out without a cup of tea, but that was acceptable as I dressed.

MrB is away until the end of the week - a funeral, then a golf competition, so I'm fending for myself. Dinner tonight was some lively slow cooked belly pork slices.

Two weeks of not getting my hand wet is all fun, fun, fun.
One of my Aqua buddies had a bit of an accident with a knife, which resulted in an injury in an awkward place between two fingers. She, too, has to keep it totally dry, but they have managed to cover it in such a way that she can still come to class (no Aqua weights, though). She was getting a bit puzzled though about being asked, "Did you do it on purpose?"
 
Tuesday 19 September - bed 7.3 FBG 6.4. Back on the school runs for a couple of days. We're pretty much packed and ready to go. I'm regretting saying it's much too warm for my coat and thank goodness for my journey to get that new raincoat.

B. Just TAG, going straight to chiropodist after school drop-offs.

D. M&S posh puppies (small sausages, GF) done in the IP with a mix of broccoli, green beans, carrot, mini corns and onion gravy. CC Little chocolate pot with raspberries.

Mine is the end joint of my little finger, so very unimpressive in terms of the dressing - just the little finger.

it’s currently very swollen and a bit of a mess when I changed the dressing, but he’s been right inside the joint, so all to be expected. It’ll be much easier when the swelling subsides a bit.

I’m really only 24 hours out from it, so I’ll just get my big girl pants for a few days.

I was tempted to put this onto a t-shirt, but the surgeon is pretty dry. Hey ho.

 
Also made a cake for weekend visitors with chunks of banana, date and fudge to make a kind of banoffee flavour. Looks to have worked.
It didn't work. I kept it in the oven longer than it should have needed, the skewer came out clean, but it sank and was very wet still inside. I ended up cutting it into slices and rebaking the slices - a bit like biscotti. Alistair says they're fine that way, so it wasn't a disaster.
 
Salmon, spinach and cream for breakfast.

Had a lot of fish these last couple of days so I'll have to think of something else for the 2nd meal today. There's chicken thighs with a date before the steak that Neil bought on Monday so it will be spicy chicken, probably in a spicy tomato sauce. That'll be onion based but probably no other vegetables - watching how many vegetables I am eating at the moment and I've already had spinach today.

If I have time or energy to spare I will try to make some 90 second bread this afternoon. I don't usually miss the carbs but DIL is struggling so I'll see if I can find something that Alistair can make for her fairly easily - he is the main cook in the house, and luckily he is an experimental cook like his mum.

Had a really busy but fun weekend with old friends staying for three nights. First night I did cottage pie with a mashed swede corner for me followed by traditional top apple & blackberry crumble, I avoided the topping, served with Greek yogurt.
On Saturday I had my usual brekkie of slice LC toast, copious tea.
Lunch was out and on the hoof, an egg sandwich which was all I could choose in the place we decided on. I peeled the bread off one side and hoped for the best.
Supper was out at a pub and was steak (tough as old boots so didn’t finish it but it was rump which was the only steak on offer) and salad.
Sunday same brekkie.
Lunch I did a big cheeseboard of English farmhouse cheese and a plate of Serrano ham. Accompaniments were bread, crackers, grapes and chutneys all of which I dodged other than two water biscuits and a taste of guests’ h/m chutney.
Supper out at mutual friends was a Korean BBQ, wafer thin marinated beef and pork cooked at the table accompanied by rice, kimchi, soya based dipping sauce and lettuce leaves which I used to roll my meat in. Delicious and very civilised.
Monday usual brekkie.
Lunch leftover cheese scraps.
Supper three meaty sausages, broccoli and dessert spoon of Mr P’s baked beans.
Yesterday same brekkie as usual.
Lunch was two soft boiled eggs, strawberries, cup of tea.
Supper was a lightly battered cod fillet and more broccoli.
Today usual brekkie slice LC toast, copious tea.
Lunch will be two boiled eggs and strawberries. Tea.
Supper will be Bolognese with tenderstem broccoli and a spoon of spaghetti if I’m feeling brave, lots of grated Parmesan.
@AndBreathe sorry about the hand discomfort and inconvenience and hope it heals really well and faster than hoped.

I didn't see it but DIL tells me that Alistair made a bllackberry crumble from a load of foraged brambles which was "absolutely the best crumble ever". It was ground up pistachios and pecans mixed with some butter and scattered over the top of the unsweetened fruit, then baked. Expensive but worth it for the occasional treat.
 
I made a boiled, home cured ham yesterday and left it to cool overnight so today was the day to check it. Turned out fine, quite tender and just about the right amount of salt (which is a surprise because I didn't measure it - just chucked it in - a pile of Himalyan pink salt plus some herbs and some allspice). Only problem was, I had asked Neil to get me a leg cut and he came home with a shoulder cut, which, of course, fell apart into its individual muscles when I started to cut it. But that's fine. I can cut the bits that fell off into chunks for putting into other dishes and slice the main, remaining piece. I don't use a traditional process because I freeze it for future use, so don't need to worry about botulism and such.

I've got my appointment for the follow up and hopefully, stitches out, so I have time to ponder it. :)

Tonight will be a brocolli and stilton soup, to use up some of the biggest head of brocolli. In typical me style, I've lobbed in the last of Sunday's roast pork.

Cooking for one, with a manky finger isn't much fun. I'm so, so spoilt usually, and poor old MrB is going to be totally drowned by the time he finishes his competition.
 
At 12 noon I tucked into the homemade soup I started yesterday. I really enjoyed it seeing that grey rain made the day so miserable. The serving was rather carb heavy from what I'm used to. I mopped up quite a few of the veg that was languishing at the bottom of the fridge. Half a tin or sweetcorn, a carrot and a leek was on the carb heavy side, but celery, green beans, bok choy, chicory and shredded cabbage topped up my veg intake for the past few days. It was a bit decadent of me to pour some double cream over my 13g carb serving, luckily my GS meter hardly registered a rise.

At 4 0/c I was hungry so I had another serving, it was half of the noon serving. BG stayed stable.

5 o/c had a rib eye steak with mushrooms sauteed in butter. Accompanied with a nice glass of Californian merlot.

No doubt I'll indulge in 2 squares of 90% Lindt chocolate later.

Carbs resulted in just under 30g, quite a lot for what I've been eating over the past few months.

@AndBreathe hope your hand recovers quickly.
@DJC3 pleased you're getting results from your changes and hope that your daughter is seeing improvements despite her struggle with eating carnivore?

@JenniferM55 interesting isn't it how sometimes slightly higher carb ingredients can work for you. I personally rarely find veggies up my bgs. Probably adding cream to the soup helped too. We are also all different so important thing is testing, as you are, to see what works for you.

Lunch a few garden berries (picked during a downpour not helped by strong wind which was blowing the tree above me and ditching even more water on me! Had to change when back indoors as wet through!) With yoghurt and four squares of 90% chocolate
Dinner hm Bolognese done in slow cooker - kept half back for chilli on Friday - with glass of merlot. Ic brownie and decaffeinated coffee.

Water to swallow tablets
Espresso.

L: Courgetti con sugo di melanzana made with aubergines, celery, carrot and onion, oregano, passata, garlic, butter and spiralised courgettes, finished with grated Parmesan cheese.
Salad using lettuce, Romano peppers, celery, salad onions and Kalamata olives, dressed with an olive oil, oregano, garlic and balsamic vinaigrette, topped with toasted almonds and pecan halves.
Water to drink.
Raspberries and Greek full-fat yoghurt.

D: Seafood salad made with brown shrimps, mussels, lettuce, celery, baby plum tomatoes and mustard cress with a dollop of home-made aioli for dipping, topped with flat-leaf parsley and toasted pistachios.
Water to swallow tablets.
