What have you eaten today? (Low carb forum)

Yesterday
B: Hotel buffet so had 1fried egg, 2 rashers thick bacon and fried mushrooms. Then went back for more bacon and some scrambled egg.. latter was awfully thin and watery
3 hours dancing followed by a walk along the beach.
Skipped proper lunch but did have an ice cream
D: ceasar salad, roast beef and green beans, large Yorkshire pud and gravy. Small potion melon and 1 cube fresh pineapple. 2 glasses white wine.
3 hours dancing
Couple of spikes, quickly brought down. To bed at 5.0

Today
B: 2 fried eggs, 3 rashers bacon, fried mushrooms
3 hours more dancing
2 hours travelling in car - at last a good rest yay!
L: blacksticks blue, olives and 4 sqs 85% choc.

Later will be roast chicken and lc veg.
I'm kind of visualising you in Strictly with all this dancing !

Another glorious, sunny day here in the south of England.

B: Two poached eggs topped with a knob of butter, slices of avocado and crevettes, all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Cheese-crusted omelette stuffed with mushrooms, baby plum tomatoes, spinach, last of the oregano and cream cheese plus Cheddar for the crust.
Salad using lettuce, celery, Romano peppers, salad onions, Kalamata olives and mint, dressed with an olive oil, garlic and balsamic vinaigrette, topped with walnut halves.
Water to drink.
Strawberries and Greek full-fat yoghurt.

D: Seafood salad made with tiger prawns, brown shrimps, lettuce, vine tomatoes, celery, sweet yellow peppers and salad onions dressed with olive oil and a squeeze of lemon juice, parsley and garlic, topped with toasted almonds.
Water to swallow tablets.
 
Sunday 8 October - bed 8.1 FBG 7.5. We got another heavy downpour this morning, but, thankfully, it was lighter the rest of the day. The Esk was close to breaking its banks, but it didn't. Grandson still has a bug, so I don't need to try to work out a flood free route to swimming. Flooded areas are the usual places. If they would clear the drains and dredge the Esk, we'd all be a lot better off. Some parts of Edinburgh are grim.

B. TAG and 2 slices of SRSLY toast. One with coronation chicken, the other with cream cheese and salami. Benecol dairy free.

L. Nothing

D. Usual campari and soda. I went back to a Diet Doctor recipe.


Keto chicken and mushrooms with tomatoes. I pretty much followed the recipe for the chicken breast. The side was stir-fried shredded cabbage, parma ham, mushrooms, and peas with a little parmesan. It was all very tasty. CC little chocolate pot with raspberries.

Thank you for the good wishes for son. His promotion is being announced on Wednesday. It was very unexpected this early, but it certainly leaves them secure, which is great in this climate.

@DJC3- I suspect the way you are feeling is down to the booster. Like @shelley262 , I prefer to have my jabs at least 2 weeks apart. I really need to get online to book appointments, but I'm not 100% at the moment (hence the higher BG). I'm hoping it's Moderna for the Covid booster as I have less of a reaction to that. It isn't a glorious, sunny day on the east coast of Scotland. At least the rain has eased.
 
Did more energetic exercise this afternoon than planned as our walk included a field which looked fine until two very frisky bullocks appeared and chased us to the gate
This sounds like a very effective motivation for some rigourous excercise!
Mixed cauliflower and green beans with the leftover cheese fondue with a little extra cheese and cream, very good idea! And enough left for tomorrow too. :joyful:
I feel like a wet dishcloth, came on quite suddenly this afternoon. I had a tentative taste of my cheesy veggies from the fridge to see if I could tempt myself to prepare a meal but it was a very clear yuck, no!
Feeling more like myself today so whether it was the covid jab or not it was short lasting. I’ll be interested to hear others experiences.
And it looks like you found the cause. I'd already forgotten I had a Pfizer jab at around noon, duh!

I'll just forget about real food for today and count on wanting some midnight snacks like chocolate and pork scratchings with aioli (not together :hungover:), maybe some chicory with hummus as well later on.

Aquajogging tomorrow morning, let's hope I'll feel better by then, it will be hard enough with only the stiff left arm.
 
It's lovely reading everyone's updates. You make me feel my 'problem' is shared, thank you to my friends in 'What have your eaten today' thread! :)

Wanted another good crack at the garden, I just want the planned chores ended. So seeing it was a glorious day weatherwise, I thought I'd see if I could stretch my fast as I would be busily occupied. Trouble was at about 10 am, I felt a bit dizzy again, and it doesn't do to be dizzy while balancing between plants and other obstacles with pointed objects in hands. I remembered what I was advised last week on the forum, so I had a handful of almonds.

11.30am coffee with cream

2pm was G&T time with a chicken leg and a thigh from last night's roast

5.30pm mixed the remaining meat off the chicken's carcass with mayo, Sriracha sauce, cucumber, and half apple from our tree, which was served on top of shredded lettuce and baby spinach leaves.

2 squares of 90% chocolate

Today's carb content 18g.

I hadn't heard of Sriracha sauce (Dr Will's 50% less sugar) before, think it's quite a find as a little goes a long way, I like hot spicy food, but not overly hot, think I can make use of it by brushing it onto chops, etc.

Breakfast: Eggs mixed with cream and scrambled in butter with crispy bacon bits mixed through. Enjoyed that.

2nd meal: 2 lamb chops with braised leeks and possibly bashed neeps (that's what my MIL always called mashed swede) but I shall put the swede in the microwave and then take the skin off and mash it rather than boil it as I used to do.

I was right about putting on weight. I am back to what I was 6 weeks ago so now have to make an extra effort to get it all off again.

Pot luck brunch coming up on Sunday in a hall in Stornoway. I'm planning to make a low carb "breakfast casserole" and some not-low-carb blueberry muffins. That should be enough for my contribution.
 
Monday 9 October - bed 7.4 FBG 7.1. I still have a niggling sore throat, otherwise OK. It's more cloudy than anything else now. Early Aqua class today, and I ended up taking both boys to school since I was up and about anyway.

B. Just TAG. Between running the boys to school and heading straight to Aqua, there was no time for anything else.

L. Quick trip to M&S after Aqua. Scan & Shop was very annoying today just when I was in a rush. I just had time to grab 2 slices of SRSLY toast -one with coronation chicken, one with cream cheese and salami. Then, back to collect the eldest grandson for lunch.

D. Leftover cold cuts. Ham, rare brisket, ox tongue, corned beef, chicken bits, 1 san marzano tomato, coleslaw, and a quarter avocado that I had left.
CC little chocolate pot with a raspberry.

A relaxed evening watching the start of the downfall of Stephen on Corrie (at least it had better be).
 
Brunch - piece of British cheese I've never had before - Blacksticks Blue. Semi hard, bright orange like Double Gloucester, blue veined. Oh it was good! Followed by small plain Greek yoghurt and TWO raspberries from the garden.

Dinner will be a vaguely Mediterranean concoction of: aubergine, 2 small green tomatoes, courgette, half a red pepper and all of a yellow one, a few lardons, chicken bone stock, chicken meat left over from roast, mushrooms, olive oil, turmeric, splash of Tabasco, 2 lemon slices, ginger, sumac, vegetable stock cube, spring onions, garlic, sage, oregano and basil. I think that's all. Pre-dinner will be a few walnuts and unripe hazelnuts. No wine until the end of the week.
 
@JenniferM55 re your dizziness I experienced this when went keto 6 years ago - I started out with a month of 23 hour fasts just one meal a day and had very bad dizzy spells. Main reason for me was that I was still on blood pressure meds and someone here kindly suggested I check my blood pressure. I was shocked to see really low readings about 90/60 and had to come off my bp meds and never needed to go back to them as usually now 108/70. Worth checking if on meds and speaking to Drs. I also was experiencing bad leg cramps and found upping my electrolytes especially more salt and magnesium solved this and helped with the dizziness. Trouble is that real low carb food often means you don't retain salt so you may need a bit more. Not sure if these tips will help you but it's the way I managed my dizziness and cramps. I still supplement with magnesium and use salt on my food.
@DJC3 think when I was diagnosed and about five stone heavier yes I may not have made it to safety when the bullocks chased us! Being lighter and fitter has definitely increased my speed! Btw I've started the ferments Zoe study but think may be impossible to up my ferments next week as I'm on holiday in hotel. Will see what's on offer
Busy few days ahead building up to my holiday at weekend - as a carer there's a lot to sort but well worth it to get a break.
10ish one slice of bacon fried with one egg and a few green tomatoes
2ish some sauerkraut and cheese then rhubarb with yoghurt and four squares of 90% chocolate
5ish hm chilli with glass of red wine followed by LC chocolate brownie.

Steamed runner beans smothered with butter.
Salad made with chicory, celery, green peppers, salad onions and mint, dressed with olive oil, garlic and a touch of lemon juice, topped with roasted macadamia nuts.
Water to drink.
Skipped pud.

D Seafood salad using crab, mussels, lettuce, baby plum tomatoes, sweet cicely, Romano peppers, Kalamata olives and Welsh onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted pistachios.
Water to swallow tablets.
 
Tuesday 10 October - bed 7.9 FBG 7.4. I think I'm getting a bit demob happy with the October week approaching. I still have the boys staying on Saturday and one more swimming lesson on Sunday, though. I still have a ticklish cough and a niggling sore throat.

B. TAG. Both Hubby & I were heading to the doctors for the blood draw. Mine for uric acid; Hubby for cholesterol. He was miffed that I was taken first! I was seeing a different nurse, though. Patience is definitely not a virtue for him.

L. 2 bits each of salami and chorizo. 2 cheese triangles and 2 slices of SRSLY toast. Benecol dairy free.

D. GF sausage casserole with onion and mushroom gravy. A side of stir-fried shredded cabbage. I will, of course, have a CC little chocolate pot with raspberries (but I'm saving that for bake off). I'm quite impressed with the bake off contestants this year.

Thank you @shelley262 for your information. Think you are correct! I take 5mg Bisoprolol tablet every morning. Luckily, my cardiologist doesn't have any concerns regarding any disease with my 70 year old heart. I have been taking the Bisoprolol (and Apixaban blood thinner) because of high blood pressure which was seemingly attributed, or partly attributed, to a leaky arterial valve. Almost a year ago to this day I had a replacement arterial valve inserted at Papworth, the cause of the leaky valve was probably genetic. Six weeks ago I had a check up with the cardiologist who after a couple of tests (one was 24 hour BP monitoring), his conclusion was that I was okay, and to "Come back next year!".

As for electrolytes, I have to admit I'm a little scared of them. I've had 3 episodes of arterial fibrillation over the past 5 years where I've been hospitalised, so I'm a bit hesitant of taking magnesium and potassium supplements as I believe they can upset the heart's rhythm. But I have been 'testing the water' with them. For the past month I've been taking 500.0mg of Magnesium (Oxide). I think I might increase this to having another 500mg tablet at bedtime - but I want to make sure I'm home when I test this out (for obvious reasons :oops: ).

I try to put as much Pink Himalayan salt on my foods as I can stand. As for potassium, I'm still working up to that. I do have awful leg cramps at night, normally when I stick my legs out from under the duvet and they get cold.

You could be absolutely right about low blood pressure, all my life my blood pressure was seemingly associated with my weight (since 1st June I've lost over 2 stone, and hoping to lose another 2 stone). I don't check my BP, though I know I should, but I do check my heart rate with an oximeter every morning which is around 55 to 65 for AF reasons. Thank you @shelley262 again for your concern, you've given me something to think about. It's always good when another voices those concerns that rattle round in head.

Took my husband to have bloods taken this morning, so it was easy to delay eating.

At 2pm on our return I had a G&T with a packet of pork scratchings.

At 3.30pm had a large dish of hm chicken and veg soup with double cream.

5pm had 2 squares of 90% chocolate.

Haven't been really hungry after the soup, so it's been a very low carb day today which I make to be 12g of carbs.
