What have you eaten today? (Low carb forum)

Some grilled bacon wrapped in a Staffordshire oatcake (the carb I won't/can't give up) a cup of green tea, a cup of unsweetened fresh ground coffee but with a dash of cream (and another, similar one, later this morning). My waking BG was annoyingly high (as it always is) despite the intake of all the meds I'm sure you're all familiar with. Later I'll have a salad (green, cheese, egg and something else if I can think of anything to go with it). This evening I'll be in the hands of my wife, who will, no doubt, provide me with something as low carb as possible. During the day I'll drink more tea and coffee and try and avoid the piece of dark chocolate that's looking at me right now, whispering 'eat me, EAT ME!' and I may sink a large whisky in this early evening. What a joyous diet I follow these days!.....and I still feel like Harpo Marx looks!

Breakfast: Streaky bacon, h/m beef sausage and 2 fried eggs. Oddly, still not feeling particularly full so am hoping a cup of tea will solve that. BG before eating was 10.6. Fairly substantial dose of insulin to cover breakfast and bring it down a bit. Only half an hour later but just checked and BG is now 10.9. Hoping it will go down soon.

2nd meal: Neil bought a pack of short dated steak so will need to have that before it's too late (how awful to have to have steak 3 days in a row!) More Brussels sprouts to use up as well and another courgette that needs to be used. Maybe find something else aroud to go with it and make a kind of veg stew as a side dish.

Just made some 90 second bread. First time I've tried it. Not impressed. Just a kind of rubbery omelette really. Bread of any description, it is not.

Yesterday (Monday) usual brekkie of slice LC toast, copious tea.
Then made a big pot of organic broccoli & leek soup for lunch and other meals and inadvertently gave myself salt poisoning which was quite scary. About 20 mins after large bowl of said soup which did taste very salty I was horribly sick, then my abdomen swelled up so badly I had to get into loose clothes, pain everywhere except limbs, nausea, didnt know what to do with myself so took two codeine and got into bed for comfort while all the time trying to keep some water down. Thinking about soup I used a dessp. of Knorr stock powder bought from Amazon a while ago (since no longer available in the supermarket) but suspect counterfeit with large quantity of salt. Had non European writing on pack. Needless to say both soup and stock are now disposed of. Took a few hours but started to feel better and no more food!
Today usual brekkie of slice LC toast and copious tea.
Lunch was Dairylea spread on two slices Dr Almond bread and tea.
Supper will be scrambled eggs and maybe a ramekin of berries.

Coffee and cream
Tea
Coffee with unsweetened almond milk
Cottage cheese, too much herring and tomatoes. Sent my B/S UP!
Pork Chop.
Fresh herring is only available here in London between July and September.
Was it a rollmop? I used to adore pickled herrings, but only have to look at one now and my blood glucose soars!

Again didn't have my glasses. My usual one wasn't there and just chose a different one. Obviously not the best idea. Trouble is when the writing is so small you can barely see it. I keep looking for pickled herring which is ok.

That’s a scary reaction, I’m so glad you’re ok now. I’ll definitely look at the origins of commonly used food stuff bought on line in future.

Glad your hubby is home now and safe&sound @JenniferM55 ,well done on the fast.
@Antje77 your shepherds/cottage pie looks pretty perfect to me. I always find it’s even better the day after too.
Good to see you back @shelley262 your holiday food looks amazing.
My food today:
Out for breakfast, a bacon and cheese omelette again with a lot of coffee.
Day of activities, kayaking and swimming.
Dinner- starter of chicken wings obligingly cooked with just S&P rather than the menu choice of bbq or sweet chilli marinade. Then bunless cheeseburger with salad and coleslaw. 2small glasses red wine and a square of Lindt 90% later. IMG_3558.jpg

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: salmon fillet with peppercorn sauce, broccoli and carrots.
I saw the surgeon who operated on my foot in May. Some metal work has snapped, (goodness knows how?) so the bone hasn’t healed properly. He is going to have to operate again in the next three weeks or so. I’m already worrying about the hospital food :wideyed:

After yesterday's 28 hour fast, I was down 0.3kg this morning, I could very well be up again in the morning, such is the rocky road to weight loss, so long as the projection is down I'm happy.

11ish had coffee and cream

First bite to eat was at about 1.30pm, we had an early dinner today. Roast chicken breast, roast swede, tenderstem broccoli, gravy and TWO Yorkshire puds.

Tea was a small piece of Castillo blue cream cheese with a handful of almonds.

2 squares of 90% Lindt chocolate.

Been doing some research after recently hearing about lupin flour on this forum. I came across a recipe for Yorkshire puddings, I just had to have a go. Can't remember whether I stuck rigidly to the recipe, but my version was 20g lupin flour, 30g plain flour, 2 eggs, abt 100g milk, and salt. The ingredients made 8 Yorkshires. The mixture was poured into very hot bun tins with really hot coconut oil in the cups. My husband couldn't tell the difference. I think they were quite close and will defo make them again. I put the recipe through an app (Cronometer) which allows me to add a custom recipe. Each Yorkshire has 49 Calories, 3.4g carbs, 1.9g fat plus the coconut oil. The carbs fitted in with my carb quota and didn't cause any BG issues. Traditional Yorkshires have been off my menu for such a long time.

I'm also experimenting with making a lupin flour sourdough starter. Quite pleased today to find it's started to ferment after just 3 days. Will let you know how the low carb lupin sourdough bread turns out.

I'm so sorry to hear you'll need another operation.

What about starting a thread for inspiration on foods you can bring with you to hospital so they can keep their food?
Do you know how long they think you'll have to stay?

Your holiday food and the holiday itself absolutely looks and sounds amazing!

I had my last day of cottage pie (until I get the other two portions from the freezer) shared with dogs and cats. I'm really bad at guessing how much is a portion, sometimes leaving me hungry and sometimes leaving me very much loved by my pets!

I'll have to get groceries tomorrow, I know what I want to get (stamppot andijvie), but I expect tomorrows main meal will be a sandwich or such and the cooking will be left for the day after.
Hitting the gym at 4pm, followed by a short and very cold swim at 5pm, and I really don't think it's realistic to think I'm going to spend a serious amount of time in the kitchen after that so a quick lc sandwich is fine. :)

Yes please lets have this thread. I'm going in for three or four days on Noveber 14th for my new knees and I;m struggling to think of easy things my family can bring in cool bags

Oh no! What awful luck. Will your family be able to bring food in for you? ( maybe not your breakfast coconut porridge!). There are a few lc granolas available now you could have instead with a splash of lactofree milk. Obviously you’ll take a supply of your carb Killa/PHD bars but I guess generally it’ll make a difference if the ward has a fridge you can pop a couple of items in. Good luck, I hope your foot isn’t too painful at the moment.

Those Yorkies look great!

Really impressed you are not only keeping up with the gym, but the swimming too. Will we see you next Olympics?
There's a reason I'm telling everyone I'll brave the cold water again tomorrow...
No way back now! It's only the second time and the water temperature dropped quite a bit since last week.

But yes, I'm also impressed I'm keeping up with the gym! Not interested in anything competitive though so no Olympics for me.

Sounds like this could be a very useful thread. :)
If you or @Rachox (or someone else) starts it, be sure to give it a descriptive title for easy finding, something like 'Foods to bring to hospital' or such.

There are lots of foods usually kept in the fridge which will keep well unrefrigerated for 4 days. Yoghurt; cheese; hard boiled eggs; salami or other dried sausages; my favourite midnight snack of chicory leaves and hummus or pork scratchings dipped in aioli; avocado; tomatoes; celery stalks and peanut butter (yuck!); cucumber (just throw away the dried out end slice before use), and then there are all those foods that don't need refrigerating anyway: nuts; high % cocoa chocolate; cheese crisps; low carb bread, you can even take the toppings from the hospital bread to put on your own, just bring some butter and marmite.

I have no experience with hospitals thankfully, but lots of experience packing for a week of sailing without a fridge!
