What have you eaten today? (Low carb forum)

Late breakfast was slices of cold meat and cheese, sauerkraut and fermented beetroot.
Thought that would see me through to dinner but a hectic morning left me hungry so 2 scrambled eggs on Schneiderbrot protein bread. 1 Sq Lindt 90%
D- 3 Naked sausages ( 0.2g carbs/100g) and 3 fried eggs. Daughter’s chickens still laying well happily.
No photo as it was a bit boring looking.
 
Evening all

Today

B: Two poached eggs with a knob of butter, slices of avocado, seasoned with black pepper and a wedge of Teifi.
Water to swallow tablet.
Espresso.

L: Salmon fillets baked en papillote with mushrooms, spinach, Kalamata olives, lemon zest, sprigs of thyme, sage leaves and butter,
Steamed asparagus and French beans smothered with butter.
Water to drink.
Low carb pud using milled flax seeds, home-made granola, unsweetened almond milk and double cream.

D Seafood salad using crab, brown shrimps, lettuce, baby plum tomatoes, chicory, Romano peppers, Halkidiki olives and salad onions, dressed with an olive oil, mint, balsamic and garlic vinaigrette, topped with toasted pumpkin seeds.
Water to swallow tablets.
 
Breakfast: (shortly) the 2nd half of the chicken in tomato sauce from yesterday - chicken stripped from the bone and an egg stirred into the sauce.

2nd meal: will be some of the lamb shank meat made into a tagine but instead of apricots, will try it with very sharp dried cherries. The rest, I will put away just as it is - it's quite delicious as it is (I tried a little strip off of it yesterday evening). It's all that garlic again - I had used a whole bulb, cut in half across it.

Lunch kimchi and sauerkraut with cheese and four olinas LC seeded crackers( still a few packs in my cupboard from last week's Waitrose shop but crossing fingers that the ones I've ordered this week turn up on Friday as they are on offer at the moment at £1.60 per pack so ordered several to stock up!) followed by Apple peel and three 90% chocolate squares.
Dinner sea bass with peas and glass of dry white wine followed by LC Bakewell and yoghurt.
Lots of walking again today and long walk hopefully in am before Cooper goes home at lunchtime - will depend on predicted storm not sure if forest will be ok if very windy.
 
This morning just black coffee. Aquafit class and then I was really hungry. BG has been creeping up again so trying for a zero carb day.
Bavette steak topped with a knob of butter for lunch really hit the spot.
Dinner was slow cooked hogget shanks ( Paul’s was large and mine was very small, it must have been a pretty lopsided sheep). I put lots of veg in to cook with it but just had the broth myself. Small portion of blue cheese to follow. IMG_3612.jpg
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: Spanish chicken with roasted Mediterranean veggies.

Evening all

An old friend is celebrating her birthday this coming Sunday; mine was last Friday. In the past, we've taken it in turns to cook a celebration dinner somewhere between the two birthdays, but this year we decided on a slap-up lunch at a favourite eatery.

B: Two poached eggs with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: gin on the rocks with a slice of lemon.
Scallops sautéed in butter with garlic and parsley, served wih lamb's lettuce, rocket, cucumber and tomato dressed with vinaigrette.
Water to drink.
Roast pheasant served with steamed carrots, broccoli and French beans.
Spinach with garlic and butter plus deep fried zucchini matchsticks.
Affogato con espresso.
Espresso

Brandy on the house.

D: Seafood salad made with brown shrimps, mussels and kalamari, lettuce, baby plum tomatoes, celery, Romano peppers, mint and salad onions dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted almonds.
Water to swallow tablets.
 
I'm a bit behind with logging what I've eaten.

Yesterday made a batch of 4 chaffles, ate 2 for brunch, and 2 at a late lunch with butter and keto maple syrup on the top.

Dinner was the last of the brisket stew, more stew than brisket though

2 squares of 90% dark Lindt chocolate

Today had a trip of 1.5 hours each way to take hubby for a Pet Scan, even though he'd fasted from Tuesday evening, when the nurse was checking his vitals, including a BS finger test, it seems the result of the test was 9! Looks like we've another problem to deal with, good job I'm becoming a sort of expert at this T2 lark. Strangely we were already in the process of asking for a HbA1c test.

On retuning home around 3pm I had 3 rashers of back bacon, 2 fried eggs, and 3 sauteed mushrooms.

Gin and Tonic.

Dinner was a sort of Rogan Josh. Yesterday I marinated a cubed steak in Greek Yoghurt, lemon, olive oil, and a tablespoon of Pataks Rogan Josh paste. Ingredients were added to a softened onion, at final stage of cooking a small cubed green pepper was added, and cream to thicken. Served with sauteed cauli rice.

2x 90% dark Lindt chocolate squares.

Plus had an apple which didn't appear to effect my BS levels. BG one hour after dinner BG was 6.6, then two hours after eating the apple BG was 5.9 - I hope I'm safe eating apples? Am I pushing my luck?

Re Apple just like any other foods you try you need to count the carbs and test several times to make sure. I've found by regular testing that I can include Apple but only the skin cut so that has some bits of fruit on it - which I eat in season for flavour and my gut bacteria. I've also found sticking to local sharper greener Apples is safer for me. It's relative and finding out what works and is sustainable for you is way forward.
Good luck 're your hubby hope his hba1c is ok but ,as you say, at least you know what to suggest.

Morning all. Have been very lazy this week and not posted meals. Have been spending time with my son who flies back to USA on Monday. Memory does not serve me well these days but today I am having 2 pork sausages with green veg. And tonight I have a tin of pink salmon mixed with mayo. Saturday night we are hoping to see the Boston Philharmonic Orchestra at the Boston 'Stump'. I'm going to stay with my son and granddaughter for the weekend so might not post till Monday. Have a good day and keep safe. :)
 
Just back from getting my legs rebandaged and seeing a GP - not much help there - he reckons my lungs are just worn out so I'll just have to put up with being out of breath. He did order a blood test though - that's for next Thursday.

Having said I've had all the carbs I can allow myself today, I have come home hungry so may have to have a lunch. That'll have to be eggy - maybe a cheese omelette. I think I could easily manage that and still need the lamb later on. Or maybe I'll have the lamb now and hope it will keep me going for the rest of the day. Could always have eggs later, if it doesn't work out. No carbs though. I really mustn't.
