What have you eaten today? (Low carb forum)

Also high in carbs, as are dates and bananas. Sorry.:rolleyes:
Agree . It's interesting,but not surprising, my favourite fruits when I was an undiagnosed overweight diabetic were figs - especially dried I could eat 5\6 , dates and bananas as well as orange juice! Wonder why I became diabetic! Worse thing is that I thought I was eating healthily and low fat !
 
Took Cooper back home - quite a stressful journey, traffic and weather wise. Tried to take him out for a hike this morning before travelling but he determinedly kept turning back he didn't think much of the weather.
Breakfast small kefir then two boiled eggs and buttered keto roll.
Mid afternoon after back a few bits of cheese and lc seeded biscuits followed by four squares of 90% chocolate
Dinner hm Bolognese I'd put in slow cooker this morning and glass of red wine followed by LC Blondie.

I Had very little sleep last night with the noise of the storm raging and hoping our roof didn’t blow away ( it didn’t) Luckily I didn’t have plans today so lit a fire and played with Dennis indoors ( at least you got Cooper out @shelley262 - I have to carry Dennis out in the bad weather, he’s such a wuss!) I also caught up on the latest PHC conference videos on YouTube. Is anyone here going to the 2024 conference? It’s in London which makes travelling easier for me so I think I’ll go.
Ate too much of course as I was tired.
B- Cheese omelette
L- tuna mayo mixed with celery& courgette. H/b egg and slice of schneiderbrot.
D- Chicken with mushrooms in a creamy sauce, topped with cheese and baked until crispy. Served with broccoli.

@JenniferM55 sorry about your hubby. If he is diagnosed with diabetes it might make things easier with meals at home in future though.

Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: cheese and mushroom omelette.
Not sure what/if I’ll be eating this time next week, just heard my foot op will be next Thursday :wideyed:

Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: cheese and mushroom omelette.

Evening all

Today:

B: two poached eggs topped with a knob of butter, slices of avocado and crevettes seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Walnut and mushroom nut roast made with onions, eggs and flax 'egg', garlic, vegetable stock and rosemary.
Vegetable tray bake using broccoli, cauliflower, red and yellow sweet peppers, leeks.
Steamed French beans smothered with butter.
Water to drink.
Skipped pud.

D: Seafood salad made with king prawns and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, parsley and salad onions, with a dollop of home-made aioli for dipping, topped with toasted pistachios.
Water to swallow tablets.
 
Re Apple just like any other foods you try you need to count the carbs and test several times to make sure. I've found by regular testing that I can include Apple but only the skin cut so that has some bits of fruit on it - which I eat in season for flavour and my gut bacteria. I've also found sticking to local sharper greener Apples is safer for me. It's relative and finding out what works and is sustainable for you is way forward.
Good luck 're your hubby hope his hba1c is ok but ,as you say, at least you know what to suggest.

Thank you for the tips. Think I got a bit excited there; my BG this morning was 6.5, that was the highest it's been over 5 months. I know the BG meters have an error percentage, but I don't think the high reading is a coincidence, think rather it's a reaction to eating the apple. Like you, think I can eat the skin without an obvious issue, but maybe not the whole apple. This WOE is certainly a voyage of discovery!

Managed to ride a 22hour fast today. Restricting eating hours I think suits me fine. Though I should change the hours every now and again to keep my metabolism on its toes.

Morning, coffee with MCT oil (can't say I'm a fan, maybe I'll get used to it).

Dinner, 2 chicken thighs wrapped in bacon and air-fried. Cauli rice sauteed with butter and olive oil, broccoli, and creamed mushrooms.

4 squares of 90% dark chocolate.
 
Skipped breakfast, as like posters above, had to encourage dogs out before the weather got too bad. They weren't impressed.

12 noon, 2 scrambled eggs, half an avocado, bit of ham. 4 sqs salted caramel 70% chocolate.

Strangely for me, not very hungry still for 2nd day running

8pm 1 protein cracker with brie and coleslaw. Little greek yoghurt with chia seeds. 1 sq caramel chocolate
 
Only because I think Ciarán gave me a bit of an energy boost & I decided to faff & mess around in the kitchen. I made a cheeseburger fatty. A bit of a meat feast & good cold, so no need to spend time in the kitchen for the next couple or so days.

Love the name! Is it bacon wrapped round cheesy mince wrapped round sausage?
 
First meal today around 11:30 was h/m mackerel pate and a slice of Schneiderbrot protein bread.
Dinner- sausages ( Black Farmer gluten free 1.0g carb/100g) with swede chips, roast broccoli and a spoonful of dill pickle kraut (which went brilliantly with the sausages). 1 glass of red- so far!IMG_3619.jpg
 
Discovered 'Dierdre's Low Carb Bread' on YouTube, after reading the comments, just had to have a go. Sadly 'Dierdre' only made two youtubes, both for her bread recipe with one being for a breadmaker and one for a stand mixer. I mustn't have listened properly as I popped the dough into a hot oven like you'd do for normal bread, think next time I'll treat it more like cooking a sponge, as the top was rather burnt.

For breakfast had 2 rashers of bacon, one fried egg, 3 sliced sauteed mushrooms.

Lunch was a packet of pork scratchings.

Dinner was a prawn cocktail salad with a couple of small slices of 'Dierdre's' bread

Breakfast small portion of kefir then fried one slice of bacon and egg
Lunch small portion of kimchi and sauerkraut with some cheese and five lc seeded crackers ( the olinas crackers ordered from Waitrose on special offer arrived in my delivery today so am now well stocked up) followed by peel of one local Apple and four squares of 90% chocolate
Dinner hm chilli and slice of LC garlic bread with glass of red wine followed by LC Blondie with yoghurt.I
Off out tomorrow it's a treat from youngest son who is taking us for brunch and a film which should be fun. Name of bakery\cafe for Brunch is Medicine - which is ironic I feel! I won't need the medicine if I swerve on the bakery products! Checked menu online and everything is served with a bakery product so my brunch will be several sides such as smoked salmon and eggs will report back.....

Hi All been. Missing in action again…
Yesterday I expected to lose power due to Storm Ciaran so planned sausages and baked beans which could be cooked easily on picnic stove. In fact the storm though not the rain bypassed us so I went ahead with the same supper but I gave in to about two tablsp of beans (delicious) with my three meaty sausages which sent my FBG high this morning.
Today my usual brekkie of slice LC toast, copious tea.
Lunch supplied by me and shared at son and DIL was various Italian meats, anti pasti and a couple of safe farmhouse cheeses for DIL who is pregnant. Added just baked sourdough bread for those who could.
Supper tonight is delayed chunky cod fingers with cauli cheese for me.
 
B: ff greek with chia seeds and half a small pear
