What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a Aldi protein bar.
Dinner: chicken and mushroom satay stir fry (beansprouts in the stir fry veg to kid the eye about the absence of noodles!)

I've waited for a phonecall from the rheumatologist all day, she was to call between 10 and 12 am, but called at 5:30 pm.
I had been nervous about it because I wanted an MRI (which my GP had already ordered but it turned out not to be funded unless ordered by a specialist), and I wasn't at all sure she would agree.
She wasn't all that keen, and it took a convincing speech, walking a very thin line between conveying why I wanted one and making sure I didn't indirectly criticise her decisions. Threw in a bit of mental health arguments as well, and got my referral! :joyful:

And then I was very relieved, and utterly tired, like a balloon emptying, I must have been even more nervous about this than I thought.

So not my planned runner beans and sausage, but a quick cheesy fried egg on a slice of lc bread, and a lc cracker with pork.
Food is food, and I'll have some chicory with hummus later on by way of veggies, :)

Evening everyone!

For late breakfast had 4 rashers of streaky bacon, 2 fried eggs, and a slice of the sourdough bread I prepared yesterday with added linseed, sunflower and pumpkin seeds to lighten the carbs. It seems to have worked making a moist loaf. There's still much work to be done on tweaking the recipe. BG didn't go over the 2mmol allowed which is a big plus, I've also changed the time to walk our dog, it's now straight after breakfast. All done with the aim of making this way of eating sustainable. Carb maths for a 35g slice came to 11g of carbs, so I'll need to do better.

Had a couple of G&Ts through the day. No coffee or cocoa today for some reason.

Dinner was chicken wings, a new recipe for me, wings were prepared, tossed in seasoned olive oil with garlic salt then air-fried. When cooked nice and crispy the wings were then tossed in a dressing of melted butter and hot pepper sauce. The wings didn't .lose their crispiness, the butter was just a vehicle to carry the hot sauce . Will be doing this recipe again. The wings were accompanied with swede chips.

Total carbs for the day 41g

@DJC3, we used to have a pub in the Quantocks & local farmers & shoots regularly bought us in pheasants & other game. Their strict instructions were to hang them until maggots were dropping out. :***: My dad was one to try anything, the afternoon he cooked one, mum & I went out! :woot:

@Antje77, pleased that you managed to coaxed an MRI from your rheumo, hope that it comes up quickly there. Also, cheers m'dear...

...as, dinner was an hm lc cheeseburger with the Branmayo & it was really rather nice, added a bit of sharpness, kinda taking the place of a gherkin. I will be having that again.

And cheers to you too, I definitely drank on my win with the rheumo, made my cold beer taste so much better!
I love that my Dutch take on Branston pickles has a name now too. :joyful:

You have the name, now you can go into production. ;)
This will have to wait until I visit the UK again so I can stuff the boot of my car full of pots of Branston to smuggle.
Of course some room needs to be left for smuggling cheese as well. (I recently found out I'm a smuggler already, and I'm fully prepared to do it again: https://www.diabetes.co.uk/forum/th...es-and-where-to-find-them.200812/post-2661045 :jimlad:)

I can order Branston in the Netherlands, but I highly doubt I'll make any profit with my Branmayo if I buy my ingredients at this price. :(

Yesterday was another mercy dash down west
Quick breakfast of 3 scrambled eggs. I now know this can sustain me all day if necessary. Its so reassuring to know I don't get carb cravings any more and can still think clearly all day.
No lunch
Evening while away : boys had box curry for 2, my starter 1 cold cooked chicken thigh, main had 2 cooked chicken thighs that reheated in same time as their curry. Pud was small chunk Wensleydale cheese. Red wine

Today breakfast
1 cold chicken thigh, small chunk Wensleydale
Later a coffee shop coffee, the cream on the side was not sure of, so gave half to hubby

Mid afternoon, best I could do from a small service station
A pigs in blankets sandwich but I only ate the sausages and the bits of sauce stuck to them. A fair portion of almonds.

Late evening, back home, after 1 glass white wine and soda, a small portion coffee ice cream.

For those thinking about ice cream I get at least 8 portions out of a 400ml pot

Yes, live on the wild side! I once smuggled lots of goodies, including Branston & a Chinese takeaway to France, so you'll be fine with your goodies...she says!! Mind you, at that price for Branston  I can totally understand why you would get a stock here, crikey!

Hi All
I am stepping away for a little while as my eye injection on Tuesday caused significant injury and all I’ve eaten since has been cups of tea and LC toast.
So sorry to hear this especially during such a special time as a new grandma and a baby's first Christmas coming soon. Do take great care of yourself penguin grandma and hope it heals soon. Sending hugs and wishes for a full recovery asap.

Currently I have a cold and LC has never offered anything comforting in these circs since July 2015. Pearl clutchers grab the brown paper bag for the image.
Tea and 2 x babybel. Lots of tea all day
MS KC roll with 2 x Old Winchester GF sausage - (I know, I know but times is ‘ard, guv and #2 son bought them specially)
3 squares Nero 99% melted in water as hot chocolate
Salmon and chips - frozen ones air fried (chips with malt vinegar :angelic: ), with Stokes tartare sauce, KC Kristmas pudding. Cronomater reckons sub 40 gms carb - higher than normal but lab tested fbg on Wednesday 9.00 am was 3.1 (I think that was wrong) - I’m good at that level thanks

Don’t blame you! Did your dad like it I wonder?
It’s funny, I like a stinky cheese but this was beyond the pale!

@PenguinMum Hugs and best wishes after such a traumatic incident. I do hope you’ll feel better soon.
@Antje77 well done on getting the MRI sorted.
Black coffee this morning, popped into M&S on way home from school run and got a yellow sticker whole roast chicken. Had some with avocado and h/m chilli mayo in SRSLY roll for lunch.
The rest I made into a chicken pie for dinner - mine had fat head dough pie crust. Fried mushrooms and fresh chard sauteed in garlic butter with it. 2 glasses red. IMG_1702667656.441316.jpg
